FRIED PLANTAINS
Learn how to make simply fried plantains recipe with ripe plantains that become caramelized and almost candied like.

Steps:
- Cut ends off of plantains and run a knife along the sides, peeling the skin off.
- Slice on a diagonal about 1/2 in thick.
- Heat a large skillet with oil so it completely covers the bottom of the pan. When oil is hot enough (you want to hear a sizzle when plantain goes in), place plantains a few at a time in the hot oil.
- Fry on 1st side until it is golden brown and caramelized, about 4-5 minutes. Fry the other side until golden brown.
- Optional: sprinkle with brown sugar or sea salt (But I find them sweet enough).

FRIED PLANTAINS

- Combine water, garlic and salt in medium size glass bowl and set aside.
- In a large (12-inch) saute pan, heat oil to 325 degrees F. Peel plantains and slice crosswise into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side. (The oil should come halfway up the side of the plantain). With a spider or slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper, standing them on their ends. With the back of a wide, wooden spatula, press each piece of plantain down to half its original size. Then place the plantains in the water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.
- Bring oil back up to 325 degrees F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side. Remove to a dish lined with paper towels, and sprinkle with salt, if desired. Serve immediately.
PUERTO RICAN MADUROS (SWEET PLANTAINS)
These Maduros (Sweet Plantains) are a staple Puerto Rican side dish recipe. They're perfectly sweet, caramelized along the outside and deliciously warm on the inside!

- In a non-stick skillet over medium heat, melt butter.
- Add plantains in a single layer (you will have to do multiple batches). Cook plantains on each side, for about 2-3 minutes, or until they reach a caramelized brown color.
- Transfer to a plate covered with newspaper (or paper towels) and allow to drain for a minute or two. Then serve!

MY FAVORITE FRIED PLANTAINS
This is a simple yet delicious way I like to make plantains. The taste is wonderful, and it makes either a great appetizer or dessert. It is an excellent accompaniment to many Central and South American bean and meat dishes.

Steps:
- Peel plantains and cut in half. Then, slice the halves lengthwise into 1/4 inch strips so that you have about eight slices per plantain each about four inches long.
- Heat half the Grape Seed Oil in a large cast iron or non-stick frying pan on medium high heat, and add half of your plantain slices.
- Fry the plantain slices till they turn slightly golden yellow and get crispy. Don't overcook and turn them brown. Remove the plantains from the frying pan and put on a serving plate.
- Repeat with the 2nd half of the oil and plantains. When these are cooked, add to your serving plate.
- Using a butter knife, spread your raw honey lightly on the fried plantain slices and sprinkle with the coconut flakes.
- Serve warm. Squeeze the limes over the fried plantains, and serve with yogurt for dipping.
