4 cups mixed greens
1 to mato (sliced)
1 fuji apple (diced)
1/2 red onion (sliced)
1/4 cup sunflower seeds (shelled)
1/3 cup crumbled goat or feta cheese
1-2 cooked (sliced chicken breasts)
2 ounces white balsamic vinegar
2 ounces olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon honey
1/2 teaspoon garlic powder

Steps:

Toss all ingredients in a large salad bowl.
The amount of chicken you use depends on how many you're feeding. As a main dish, this salad feeds 2 and 8 ounces of chicken breast is plenty.

2 cups baby arugula or power greens
2-3 cups dried apple chips
4 vine ripe tomatoes (wedged)
½ red onion (sliced thin)
⅓ cup gorgonzola or blue cheese (crumbled)
⅓ cup pecans (halved or chopped)
¼ cup olive oil
¼ cup white balsamic vinegar
2 tablespoons honey
2 tablespoons apple juice
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon ground ginger

Steps:

Combine all ingredients in a large bowl and toss with dressing
Whisk all ingredients together until well combined and drizzle over salad mix
