Categories     appetizer

Time 35m

Yield 8 servings

Number Of Ingredients 9

1 tablespoon whole-grain mustard
4 ounces fresh goat cheese, room temperature
4 mini bagels, split
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
8 quail eggs, room temperature
Kosher salt and freshly ground black pepper
2 Roma tomatoes, cut into 1/2-inch slices
1 cup baby arugula

Steps:

  • In a small saucepan over medium heat, bring the mustard and 1/4 cup water to a simmer. Whisk in the goat cheese until combined. Set aside; the mixture will thicken as it cools.
  • Toast the mini bagels until golden brown and crispy. Set aside.
  • In a medium nonstick skillet, heat 1 teaspoon of the olive oil over medium heat. Add 4 slices of the pancetta and cook until golden brown and crispy on both sides, 2 to 3 minutes per side. Drain the pancetta on paper towels. Repeat with the remaining pancetta.
  • Heat the remaining 1 teaspoon olive oil in a small frying pan over medium-low heat. Crack 4 quail eggs into the pan, sprinkle with salt and pepper, and cook until the whites are set but the yolks are still runny, 2 to 3 minutes. Remove to a plate and repeat with the remaining eggs.
  • To build the PLT: Spread each bagel half with 1 tablespoon of the goat cheese sauce. Layer with a slice of pancetta, a slice of tomato, and some arugula. Top the whole thing with a fried quail egg and a grind of freshly ground black pepper. Serve.

FUSILLI WITH GRAPE TOMATOES AND BURRATA

Fusilli with Grape Tomatoes and Burrata image

It only takes a few minutes to put together this quick fresh tomato sauce with a kick. We've included a small amount of burrata for a fresh creamy finish in this low calorie weeknight pasta dinner.

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 9

Kosher salt
10 ounces fusilli
1/4 cup extra-virgin olive oil
4 cloves garlic, sliced
1 pint grape or cherry tomatoes
1/4 teaspoon red pepper flakes
1 4-ounce ball burrata cheese
Freshly ground pepper
4 teaspoons fresh oregano

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 3/4 cup cooking water and then drain.
  • Meanwhile, heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the garlic and cook until just starting to brown, about 1 minute. Add the tomatoes and a big pinch of salt and cook, without stirring, until the tomatoes start to blister and split, 1 to 2 minutes. Continue cooking, stirring and gently smashing the tomatoes, until they break down, 2 to 4 minutes. Stir in the red pepper flakes.
  • Add the pasta and 1/2 cup of the cooking water to the tomatoes. Cook over medium-high heat, gently stirring, until the pasta is well coated, 1 to 2 minutes. Add more cooking water if the pasta is dry; season with salt.
  • Divide the pasta among shallow bowls. Carefully cut the burrata into quarters and place on top of the pasta. Lightly season the burrata with salt and pepper and drizzle with the remaining 1 tablespoon olive oil. Sprinkle with the oregano.

CRISPY PANCETTA, BURRATA, AND TOMATO SANDWICHES

Crispy Pancetta, Burrata, and Tomato Sandwiches image

The cover recipe on Bon Appetit Aug. 2007-It looks so amazing. It comes from Sal Marino of Il Grano in Los Angeles, CA. The Burrata cheese can be found in cheese shops or specialty food shops in the cheese department. It is described as "soft, fresh mozzerella with a delectable creamy center." The tomatoes recommended are Costoluto Genovese or other ripe red heirloom tomaotoes. I can't wait to make this!

  • Set out the burrata so that it comes up to room temperature while you prepare the rest of the dish.
  • In a medium skillet, cook the pancetta over medium heat until crisp and golden brown. Remove the pancetta to a paper towel lined plate, add in 1 tablespoon of the olive oil along with the halved cherry tomatoes and garlic, and season with salt and pepper. Turn the heat up to medium-high and cook the tomatoes until they begin to release some of their juices and break down just a bit, about 4 to 5 minutes.
  • Add in the balsamic vinegar and cook for an additional minute just to bring everything together. Remove the tomatoes from the heat and set aside to cool slightly.
  • Meanwhile, heat enough canola or vegetable oil over medium-high heat in a small skillet so that it covers the bottom of the pan. When hot, quickly fry a few basil leaves at a time just until they are crisp, dark green, a little translucent, but not browned. This should only take a few seconds. Remove the herbs from the oil, season with a pinch of salt, and continue to fry until all of the leaves are crisp.
