HOMEMADE PANCAKE SYRUP

Steps:
- In a small pyrex measuring pitcher combine all ingredients.
- Mix until well combined.
- Microwave for 50 seconds. Stir.
- Microwave for 50 seconds more or until mixture boils.
- Stir.
- Serve hot or let cool.

My husband has fond memories of this pancake syrup recipe. Every Sunday morning, his dad would get up early to make the family pancakes and homemade syrup. GERMAN PANCAKE SOUP
This is my MIL's recipe that she has made for years. My whole family loves it. DH even loves putting jam and a sprinkle of sugar on the pancakes. He rolls them up and will eat them for breakfast. They are like a crepe. Some people like to just put the broth over the cut pancakes others like it with the veggies.

Steps:
- Prepare pancakes while soup is simmering.
- To prepare soup put all ingredients except beef bouillon cubes into a 3 quart pot.
- Pour enough water to cover about 1 inch from top.
- Bring to a boil.
- Lower heat to a simmer and simmer for 45 minutes.
- Put in the beef bouillon cubes and salt and pepper to taste.
- Cook 5 minutes longer.
- Remove bay leaf and soup bone.
- To prepare pancakes put all ingredients into a medium bowl and stir well.
- Let stand for 15 minutes.
- Heat a small amount of oil in a large skillet.
- Cook pancakes flipping when top dries out.
- Remove from skillet onto paper towels.
- Roll up pancakes and let cool.
- Cut pancakes into thin slices.
- Put pancakes in bottom of soup bowl and top with soup.

PANCAKE SOUP
I think this is unique! It uses leftover pancakes from "recipe #189930" to make a delicious soup. Grandma used to make this for the grandkids (including me!) all the time. One grandchild nicknamed her "Soup Grandma". :) The ingredients for the Bavarian Pancakes below are for a half batch, which makes about 4 pancakes. Use 3-4 pancakes in the recipe.

- For Pancakes:.
- Mix all ingredients; don't over beat. Mix may have some lumps.
- Heat skillet and melt butter. Pour about 1/2 cup mix in circle into skillet and fry until bubbly. Turn over and fry until light brown.
- For Soup:.
- Place chicken broth and onion powder in a saucepan and bring to a boil.
- Take individual pancakes and roll them up into a fairly tight roll; cut off thin slices to form a shape that resembles linguine.
- Add "noodles" and salt, to taste, to soup and simmer for 3 minutes or to desired temperature.
LOADED POTATO PANCAKES
While clearing out her fridge Ree found a bag of shredded hash browns and used them to make these potato pancakes. Either the frozen or refrigerated products will work in this recipe although Ree prefers the refrigerated kind.

- Cook the bacon, stirring, in a large nonstick skillet over medium heat until crisp, about 8 to 0 minutes. Remove with a slotted spoon to a paper towel lined plate to drain. Reserve the pan; don't clean it out.
- In a large bowl, mix the hash browns, seasoning salt and black pepper. Return the skillet to medium heat. Carefully add four 1/2 cup scoops to the skillet. Press the potato mounds down with a spatula and let cook until golden and crisp, 4 to 5 minutes per side. Remove to a paper towel lined plate to drain. Sprinkle with sea salt and the shredded Cheddar.
- Transfer the potato pancakes to a platter or small cutting board. Add a dollop of the sour cream to the center of each. Top with the green onions and reserved bacon.

- Preheat the oven to 425˚ F.
- In a blender, combine the milk, eggs and vanilla and pulse to mix it well. Add the flour, baking powder, sugar and salt and blend until smooth, 25 to 30 seconds. Pour in half of the melted butter and pulse a few times to combine.
- Spread 2 tablespoons of the melted butter on a sheet pan, then pour in the pancake batter. Sprinkle the strawberries, chocolate chips and blueberries over the batter in three sections. Bake until golden on top, about 20 minutes.
- Brush the remaining 2 tablespoons melted butter over the surface of the pancake.
- Cut into squares and serve with butter and warm syrup!

- Put the flour in a bowl or measuring jug, add the milk and egg and whisk until they are well combined and there are no lumps.
- Brush a small-medium skillet/frying pan with a little vegetable oil and warm it over a medium heat.
- Pour about 1/5 - 1/4 of the mixture into the pan (a couple spoonfuls) and immediately lift the pan from the heat so you can swirl the mixture round - tilt the pan to one side then turn it so that you form a thin layer over the bottom of the pan. Cook for a couple minutes until the edges start to curl up. Loosen the pancake from the bottom of the pan, flip it over carefully then cook another 30 seconds or so until it browns slightly on the other side.
- Remove the pancake from the pan, let it sit until it is OK to handle then roll it up and set aside. Then repeat with the rest of the mixture.
