Pan-Seared Steak image

With the right steak, a good cast-iron or other ovenproof skillet, your kitchen can be the best steakhouse in town.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 30m

Number Of Ingredients 4

1 tablespoon vegetable oil
1 boneless rib-eye or New York strip (shell) steak, 1 1/2 to 2 pounds and 2 1/2 inches thick, room temperature
Coarse salt and cracked (butcher-grind) pepper
Steak Butter

Steps:

  • Preheat oven to 400. Heat oil in a large cast-iron or other ovenproof skillet (not a nonstick) over medium-high until it begins to smoke. Pat steak dry with paper towels. Season each side with 1 teaspoon coarse salt and 1 teaspoon cracked pepper.
  • Cook steak in skillet over medium-high heat until a dark crust has formed, 5 to 7 minutes per side (reduce heat if meat is browning too quickly). Holding steak with tongs, quickly brown all edges, turning as necessary; lay steak flat in skillet.
  • Transfer skillet to oven. Roast until an instant-read thermometer inserted in the thickest part of steak registers desired doneness, 5 to 15 minutes. Transfer to a plate; spread with 1 tablespoon Steak Butter. Cover loosely with aluminum foil, and let rest 5 to 10 minutes (temperature will then rise another 5 to 10 degrees). Slice across the grain; serve with remaining Steak Butter. Cover and refrigerate any leftovers, up to 2 days.

PAN-SEARED STEAK AND ONIONS

Pan-Seared Steak and Onions image

Usually cooked over an open fire in an iron skillet; this stove-top seared steak with bourbon-flavored onions is excellent eaten with sourdough bread. Sourdough, developed during the gold rush years, was made with a yeast started of flour mixed with water until it fermented and soured.

Provided by Food Network

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 6

4 tablespoons (1/2 stick) butter
2 tablespoons olive oil
2 large onions, sliced
1 boneless sirloin steak (about 2 pounds)
Salt and pepper
1/2 cup bourbon

Steps:

  • In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.
  • Generously season both sides of the steak with salt and pepper. Add the remaining 1 tablespoon of the oil to the skillet and fry the steak over medium heat, turning once, until browned, about 6 minutes per side for medium. Transfer the steak to a serving platter and cover to keep warm.
  • Add the bourbon to the skillet and, over medium heat, scrape up any bits that cling to the pan. Allow the liquor to simmer until reduced by half, about 1 minute. Add the onions and the remaining 2 tablespoons of butter and stir until the butter is melted. Reduce the heat and gently simmer until the onions are heated through, about 2 minutes. Season, to taste, with salt and pepper and stir in any juices that have run off from the steak.
  • To serve, cut the steak into 1/4-inch-thick slices and top with the onions.

PAN-SEARED SPANISH STEAKS

Pan-Seared Spanish Steaks image

Provided by Kelsey Nixon

Categories     main-dish

Time 25m

Yield 2 to 4 servings

Number Of Ingredients 11

2 bone-in rib-eye steaks (about 1 inch thick, 1 pound each), at room temperature
Canola oil
Kosher salt and cracked black pepper
2 shallots, thinly sliced
1 clove garlic, minced
1/2 cup low-sodium beef broth
2 tablespoons Worcestershire sauce
2 tablespoons sherry vinegar
2 tablespoons unsalted butter
1/4 cup sliced Spanish olives (optional)
1 tablespoon chopped fresh chives

Steps:

  • Heat a 12-inch cast-iron skillet over high heat until very hot, about 3 minutes. Meanwhile, thoroughly pat the steaks dry with paper towels. Lightly coat each side of the steaks with canola oil and sprinkle generously with salt and pepper.
  • Add 1 to 2 tablespoons canola oil to the skillet (this will help create a great crust on the steaks) and add the steaks. Do not crowd them; if you cannot leave room between the steaks, use 2 skillets. Without moving them, cook the steaks 3 minutes. Using tongs, flip them and cook 1 more minute for rare, 2 more minutes for medium rare or 4 more minutes for medium. Transfer the steaks to a plate and cover loosely with foil. Let rest at least 5 minutes before cutting into them.
  • Pour out the used oil from the skillet and add a glug of new oil. Reduce the heat to medium. Add the shallots and garlic to the skillet and cook until they just begin to brown, 3 to 5 minutes. Add the beef broth, Worcestershire sauce and sherry vinegar and bring the sauce to a boil. Cook until reduced by half, 3 to 5 minutes. Turn off the heat and whisk in the butter until it has melted and the sauce has thickened. Stir in the olives, if using.
  • Put each steak on a plate; spoon the sauce over the top and sprinkle with chives.

EASY PAN STEAKS

Easy Pan Steaks image

Provided by Ayesha Curry

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 5

3 tablespoons unsalted butter
1 tablespoon olive oil
2 sprigs fresh rosemary
Coarse sea salt and freshly ground black pepper
Two 8-ounce filet mignon steaks

Steps:

  • Preheat your oven to 450 F. Heat the butter and olive oil in an oven-safe skillet over medium-high heat. Add in the sprigs of rosemary as your pan is heating. Salt and pepper the meat to your liking (I recommend a generous pinch of each, which is a THREE-finger pinch.)
  • When the butter has melted and the oil is heated, add your steaks to the pan to get a nice golden-brown sear on them. This should take about 2 minutes on each side. Then place your pan in the oven until the steaks are cooked to your preference, 7 to 9 minutes. (Eight minutes makes a perfect medium, my favorite!)
  • Allow the meat to rest 5 minutes before slicing and serving. These rosemary-infused steaks are nothing short of delicious.

PAN-SEARED STEAKS WITH HONEY-MUSTARD PAN JUICE

Pan-Seared Steaks With Honey-Mustard Pan Juice image

Bobby Flay is the king of grilling, but here he utilizes the pan-searing method with delicious results. His recipe calls for Porterhouse steaks but you could probably use any good quality, thick steak. The pan juice is flavorful and a nice complement to steak. Be sure to use a nonreactive pan, such as stainless steel or enamel-coated cast iron. Uncoated cast iron or aluminum pans could react to the acids and cause changes in flavor. I hope you enjoy this easy and tasty steak recipe.

Provided by LifeIsGood

Categories     < 30 Mins

Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

2 shallots, finely chopped
1 1/2 cups chicken stock (homemade or low-sodium canned)
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoon honey
1/4 cup parsley, coarsely chopped
kosher salt & freshly ground black pepper, to taste
4 tablespoons extra virgin olive oil (you may use more or less, this is a guideline)
4 porterhouse steaks, about 22 ounces each (or T-Bone. Any good quality, thick, tender steak)
kosher salt & freshly ground black pepper, to taste

Steps:

  • First, make sure you have all the ingredients for the honey-mustard pan juice measured out and ready to go, since you will need to make that quickly after taking your steaks out of the pan.
  • Season the steaks with salt and pepper.
  • Heat the oil in a large nonreative skillet, until almost smoking.
  • Cook the seasoned steaks until golden brown on one side, 3-4 minutes.
  • Turn over and continue cooking 4-5 minutes for medium rare. Your choice as to how you like your steaks done - adjust timing accordingly. *If your pan isn't big enough, you may need to cook your steak in batches. Don't overcrowd your pan.*.
  • Pour all but 1 tablespoon of oil from the pan, add the shallots and cook until soft, 2-3 minutes.
  • Add the stock and lemon juice and cook, stirring and scraping up the bits of meat stuck to the bottom of the pan, until reduced to about 1 cup.
  • Whisk in the mustard and honey and cook for another 2 minutes.
  • Add the parsley and season with salt and pepper.
  • Place steaks on a platter and drizzle with the sauce!

EASY PAN-SEARED STEAK

Easy Pan-Seared Steak image

The cast-iron skillet is essential for this recipe. Iron is heavy, and that means an iron pan holds the heat and distributes it evenly, so it browns well rather than scorching the food in some spots and leaving it pale in others. It's also nonstick.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes

Time 15m

Number Of Ingredients 4

2 one-inch-thick boneless sirloin steaks (or 4 one-inch-thick strip steaks)
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • With paper towels, dry steaks. Rub meat all over with oil, salt, and pepper.
  • Heat a cast-iron skillet on medium-high until a drop of water sizzles when it hits the pan.
  • Cook steaks in hot skillet 5 minutes. Flip; cook until medium rare, 5 minutes more. Cook strip steaks in two batches.

KITTENCAL'S PAN-SEARED STEAK, STOVE TOP-TO-OVEN METHOD

Kittencal's Pan-Seared Steak, Stove Top-To-Oven Method image

There has been many requests for pan seared steak that is started in a skillet then finished cooking in the oven this is the recipe/method for the perfect seared steak---to insure perfect doneness you will need an instant-read thermometer for this, and you will need a cast-iron or a heavy oven-proof skillet --- the times listed are for 2-1/2-inch thick steaks preferably New York or rib-eye. --- IMPORTANT do not add on any salt until the steak is finished cooking, salt will draw out the juices, and make certain to leave the steak/s out at room temperature for 1-1/2 hours this will relax the meat fibers and make for a tender juicy steak

Provided by Kittencalrecipezazz

Categories     Steak

Time 1h40m

Yield 1 serving(s)

Number Of Ingredients 6

1 -1 1/2 tablespoon vegetable oil
1 boneless beef steak (1-1/2 pounds and cut 2-1/2 inches thick, New York or rib-eye cut)
garlic powder (optional)
freshly ground cracked black pepper (use as much as desired)
1 -1 1/2 tablespoon butter
salt (used only after cooking)

Steps:

  • Pat the meat dry using paper towels.
  • Season the steak/s with black pepper, then allow the meat to sit at room temperature for 1 to 1-1/2 hours.
  • Preheat oven to 400 degrees F.
  • Heat the oil in a cast-iron skillet over medium-high heat or just until the oil begins to lightly smoke.
  • Cook/sear the steak in the heated skillet over medium-high heat until a dark crust has formed (about 5-6 minutes per side, reduce the heat if the meat is browning too quickly, if you prefer a lighter outside crust then reduce the time slightly).
  • After the 5-6 minutes cooking on each side you may lift the steak with tongs and brown the edges also.
  • Return the steak flat in the pan.
  • Transfer the skillet to the oven and cook until an instant-read thermometer reads to desired doneness (oven cooking time will be anywhere from 5-15 minutes depending on the desired doneness of your steak --- for medium-rare 140-145 degrees and for medium 155-160 degrees. please be aware that the temperature will continue to cook after removing the steak so it is advised to pull the pan out slightly before the desired doneness).
  • Transfer the steak to a plate using tongs (do not use a fork or the juices will run out).
  • Spread the top with butter then season lightly with salt.
  • Cover loosely with foil and allow to rest about 5-6 minutes.
  • Slice across the grain.

THE FOOD LAB’S COMPLETE GUIDE TO PAN-SEARED STEAKS
With pan-seared steaks, bones pose another problem. As the meat heats, it contracts a bit, so while the meat of a raw, cut steak may be flush with the bone, as soon as you start cooking it, it shrinks away, causing the bone to protrude. This, in turn, elevates the meat from the pan, making it difficult to brown the areas of meat directly around the bone.
