1/2 lb. sea scallops (about 6 large)
1/2 lb. fresh green beans, trimmed
1 Tbsp. lemon juice
1/4 tsp. dill weed
2 Tbsp. sliced almonds, toasted

Steps:

  • Pour 2 Tbsp. dressing over scallops in shallow dish; turn to evenly coat both sides of each scallop. Refrigerate 30 min. to marinate.
  • Cook beans in remaining dressing in large skillet on medium-high heat 5 min. or until crisp-tender, stirring occasionally. Add lemon juice and dill; toss to coat. Cook 1 min., stirring frequently. Top with nuts. Remove from heat; cover to keep warm.
  • Remove scallops from marinade; discard marinade. Heat large nonstick skillet on medium heat. Add scallops; cook 4 min. on each side or until opaque and lightly browned on both sides. Serve with the beans.

Steps:

  • Cook bacon in large nonstick skillet on medium heat 5 min. or until crisp. Remove to paper towels; drain.
  • Pat scallops dry with additional paper towel. Add to same skillet; cook 4 min. on each side or until centers are opaque and edges are lightly browned. Transfer to plate. Sprinkle with bacon.

2 teaspoons unsalted butter
2 teaspoons olive oil

Steps:

  • Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
  • Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. Steps:

  • In a small bowl, mash together the butter, lemon juice, garlic, thyme, and parsley. (The lemon juice may not fully incorporate, which is fine.) Set aside.
  • Pat the scallops dry with paper towels. Season both sides with salt and pepper.
  • Heat olive oil in a medium cast iron skillet over medium-high heat, until shimmering. Keep the garlic herb butter nearby.
  • Add the scallops in a single layer, without touching. Sear, without moving, for 2-3 minutes, until a crust forms on the bottom.

12 sea scallops
1 pinch salt and freshly ground black pepper
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add shallot; cook and stir until lightly browned, 1 to 2 minutes. Pour in lemon juice and cook until evaporated, scraping the bottom of the skillet with a wooden spoon to release any browned bits, about 3 minutes.
  • Place scallops 1/2 inch apart in the skillet. Cook until browned on the bottom, about 1 minute. Flip and continue cooking until the second side is deeply browned, about 1 minute more.

I made this last night for supper and both my husband and I thought it was delicious! I did substitute Montreal steak seasoning for the blackened steak seasoning because that is what I had on hand.

2 tablespoons all-purpose flour
2 teaspoons blackened steak seasoning
1 tablespoon vegetable oil
10 ounces spinach
1 tablespoon water

  • rinse scallops; pat dry.
  • in a plastic bag combine flour and seasoning; add scallops; toss to coat.
  • in a large skillet cook scallops in hot oil over medium heat and 6 minutes or until browned and opaque, turning once. remove scallops.

1 lb sea scallops, fresh or frozen
2 tablespoons flour
1 -2 teaspoon cajun seasoning
1 tablespoon oil
1 (10 ounce) package prewashed spinach
1 tablespoon water
2 tablespoons balsamic vinegar
1/4 cup cooked bacon, pieces

Steps:

  • Thaw scallops if they are frozen.
  • Rinse scallops and pat dry with paper towel.
  • In a large ziploc bag mix the flour and cajun seasoning.
  • Add scallops, toss, coating well.
  • In a large skillet over medium heat warm the oil.
  • Add the scallops and cook for approximately 6 minutes until browned and the scallops are opaque.
  • Remove scallops from skillet, keep warm.
  • Add spinach to skillet and sprinkle with water.
  • Cover and cook over medium high heat until spinach is wilted; about 2 minutes.
  • Drizzle spinach with vinegar and toss well to coat.
  • Add scallops and heat throughly.
  • Sprinkle with bacon pieces.
