Warm, spicy, and sweet, this wonderful Fall recipe is a guaranteed favorite for kids, and is great with smashed potatoes and buttered green beans.

4 (3/4 inch) thick pork chops
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
⅛ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 tablespoons unsalted butter
2 tart apples - peeled, cored and sliced
3 tablespoons pecans

Steps:

  • Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
  • Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
  • In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
  • Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

4 Moody's pork chops (1 inch thick, preferably bone-in (8 oz each))
2 T olive oil
Salt and freshly ground black pepper
½ C dry white wine
2 T chopped shallot or red onion
1 large onion (halved and sliced)
½ C chicken stock
1 T butter
2 T chopped fresh parsley for garnish

Steps:

  • Blot chops dry and allow to come to room temperature. Salt and pepper just before cooking.
  • Heat the olive oil in a large skillet over medium-high heat; when the oil is hot add the chops. Cook for about 2 minutes and then turn the chops, they should be nicely browned. Repeat for the second side.
  • Reduce heat to medium and add the wine and the shallot to cook, turning the chops once or twice until the wine has almost evaporated around 1 to 2 minutes. Transfer the chops to a platter and return the pan to the heat.
  • Add the apples and onion to the hot pan and stir until they just start to stick, 1 to 2 minutes. Add the stock, stirring and scraping the brown bits from the pan. Return the chops to the pan, along with any accumulated juices. Bring the mixture to a simmering boil, reduce heat and cover.
  • Cook, stirring occasionally and turning the chops once or twice until they are tender. If the apples start to stick to the pan, add a little water. The chops are done when their juices run slightly pink. The apples and onions should be soft.
  • Stir in the lemon juice and butter and adjust any seasoning.
  • Serve the chops with the apples, onions and any remaining juices on top, garnished with the parsley.

The caramelized coating on the pork is created by sprinkling it with sugar before pan-frying. The vinegar and ketchup give you a very quick sweet and sour finish. Add a splash of tabasco and worcestershire sauce to the pan with the ketchup if you wish to spice up the sauce. This dish also works well with chicken breasts or legs.

4 pork chops
2 teaspoons granulated sugar
1 tablespoon peanut oil
2 tablespoons malt vinegar
2 tablespoons tomato ketchup
4 tablespoons water
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 400°F Season the pork with salt and pepper then sprinkle on both sides with the sugar.
  • Place a small roasting tin or ovenproof frying pan over a high heat. Add the oil and the pork to the pan and cook for about 5 minues, turning now and then until dark golden all over.
  • Transfer the chops in the pan to the oven. Cook for 12-15 minutes.
  • Remove the pan from the oven and place over a high heat once more. Remove the meat and add keep warm. Add the vinegar to the pan - this will boil and reduce very quickly.
  • Add the tomato ketchup and water and stir.
  • Pour the sauce over the chops and serve.

5 spicy-sweet crisp apples (Jonagold, Crispin, Honeycrisp)

1/2 teaspoon cornstarch, as needed

Steps:

  • Melt the butter in a large skillet over medium heat.

4 thick center cut boneless pork chops
4 tablespoons olive oil
3 tablespoons balsamic vinegar
salt and pepper
1 large onion (thinly sliced)
1 tablespoon butter

Steps:

  • Marinade chops in oil and vinegar (for at least 30 minutes or up to 3 hours).
  • Season chops and heat a black iron skillet or shallow fry pan.
  • (Medium/High heat) When pan is hot sear chops (do not turn for 3 minutes) then flip and sear other side.
  • (searing will seal in the juices so chops will not dry out).
  • As soon as chops are done remove them and put butter and onions into pan.
  • Cook till onions are done to desired consistency.
