1 can pineapple slices (drained)
1 large salmon fillet (3 lb)
3 TB butter (melted)
2 TB sweet chili sauce
2 TB cilantro (freshly chopped)
3 garlic cloves (minced)
1 tsp ginger (freshly grated)
2 tsp toasted sesame oil
½ tsp crushed red pepper flakes
Salt and pepper
Cooking spray for pan
Optional: sliced green onions and lime wedges (for serving)

Steps:

  • Preheat oven to 350F. Line a large rimmed baking pan with foil and grease with cooking spray. Lay pineapple slices in an even layer in the center of the pan.
  • Season the salmon on both sides with salt and pepper.
  • Place on top of pineapple slices.
  • In a small bowl or cup, whisk together butter, chili sauce, cilantro, garlic, ginger, toasted sesame oil, and red pepper flakes. Brush over salmon thoroughly, using all of the sauce.
  • Bake until salmon is cooked through, about 25 minutes or 145F on a meat thermometer.
  • Switch oven to broil.
  • Broil salmon for about 2 minutes until it is slightly golden.
  • Garnish with green onion slices and serve with lime wedges, as desired.

Pineapple glazed pan-seared and oven-roasted salmon, garnished with tarragon and lemon zest is a healthy, delicious and family friendly dinner.

300 grams Salmon filet, skinless
300 grams Pineapple, sliced into 3 rings
1 tbsp Lemon zest
15 grams Fresh tarragon
Coarse salt and black pepper to taste
4 tsp Extra virgin olive oil (1 tsp for rubbing + 1 tbsp for cooking)
100 grams Pineapple, pureed
2 tsp Red hot chili jelly or 1 fresh chili

Steps:

  • Prepare the ingredients. You will need a tablespoon of lemon zest and 4 fresh pineapple rings. Puree 1 of the rings using a food processor; it will be used for glazing.
  • For both sides of the salmon filet, pat dry with paper towel, rub a light coat of extra virgin olive oil with your fingers and season with coarse salt, freshly ground black pepper and half of the lemon zest.
  • Make glaze by combining pineapple puree with 2 teaspoons of hot red chili jelly or mini-diced fresh chili pepper.
  • Heat a splash (1 tbsp) of olive oil in a large cast iron skillet and sear salmon for 1-2 minutes each side over medium-high heat until slightly crispy and golden. The searing time depends on the thickest thickness of the filet (you must sear the filet long enough before flipping, else it will stick to the pan and crumble). At this point, you can also start preheating the oven to 425 F (or 220 C) - use a 'roast' setting, if your oven has one.
  • Line a medium-size rimmed baking sheet with parchment paper. No oil or cooking spray is needed. Place pineapple rings on the baking sheet; sprinkle them with freshly ground black pepper and tarragon leaves.
  • Place both the cast iron pan with salmon (before glazing) and the baking sheet with pineapple slices into the preheated oven. Roast / bake for 7-8 minutes (again, depending on filet thickness).
  • When roasting is complete, remove only the pan with salmon and brush with chili glaze all over salmon fillet. Switch the oven to broil, and broil both pan contents for 2 minutes.
  • Transfer pineapple rings on the serving plates and salmon filet on top of them. Garnish with fresh tarragon and remaining lemon zest.
  • This recipe assumes 2 servings - for him and for her :). These photos present the dish prior to portioning. A bigger portion can include 2 pineapple rings and 2/3 salmon filet and the smaller portion will be one pineapple ring and 1/3 salmon filet.

4 tablespoons maple syrup, divided
1 tablespoon low-sodium soy sauce (such as Bragg®)
1 tablespoon fresh lemon juice
1 teaspoon freshly grated ginger
2 (6 ounce) skin-on center-cut salmon fillets
¼ teaspoon Cajun seasoning
1 serving cooking spray
2 slices fresh pineapple, halved
2 wedges lemon

Steps:

  • Combine 2 tablespoons maple syrup, soy sauce, lemon juice, and ginger in a bowl. Place salmon into the marinade and turn to coat. Marinate for at least 15 minutes, but no longer than 30.
  • For the glaze, mix remaining 2 tablespoons maple syrup and Cajun seasoning together in a bowl. Set aside until ready to use.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler to low.
  • Line a rimmed baking sheet with foil and lightly spray with cooking spray. Remove the salmon from the marinade and pat dry with paper towels. Place salmon, skin side-down, and pineapple, onto the sheet and brush with the glaze.
  • Broil in the preheated oven until salmon easily flakes with a fork and reaches an internal temperature of 145 degrees F (62 degrees C), 13 to 15 minutes.

1 lb. skinless salmon fillets, 1 inch thick, lightly sprayed with non stick cooking spray
3 Tbsp. Mrs. Dash? Original Blend
1/2 cup diced green peppers
1/2 cup diced red peppers
1 cup canned crushed pineapple in juice, drained with juice reserved
1 tsp. finely grated fresh ginger

Steps:

  • 1. Line a small sheet pan with non stick aluminum foil. Arrange salmon on baking sheet. Sprinkle fillets evenly with 2 Tbsp. of Mrs. Dash® Original Blend. Place in preheated 450 degree oven for about 10 minutes or until fish flakes easily.
  • 2. Meanwhile, saute peppers in 1/4 cup reserved pineapple juice until crisp-tender. Add remaining Mrs. Dash® Original Blend, pineapple and ginger. Remove from heat.
  • 3. Arrange salmon on serving plates topped with pineapple salsa.
