- For the gremolata, heat a large skillet over medium heat. Add the olive oil and breadcrumbs and toast, stirring often with a wooden spoon until golden brown. Place in a small bowl and while still hot, add the lemon zest, chili flakes and salt. Mix together and allow the mixture to cool to room temperature. Stir in the parsley and cheese.
- Wipe out the pan with a dish towel. To that pan, add 2 tablespoons olive oil and heat over medium high heat. Add the asparagus and 1/4 teaspoon salt. Cook for about 4 to 5 minutes, stirring and flipping often with tongs until they are bright green, cooked through and slightly browned. Divide among your serving plates.
- Crack 2 eggs into the pan, being careful as it may splatter, season it with salt and reduce the heat slightly and cook for about 2 to 3 minutes or until the edges are light brown and crispy and the whites are just set. The yolk should still be runny. Using a slotted spatula slide the 1 egg on top of 2 of the plates. Repeat with the remaining eggs. Sprinkle each dish with the breadcrumb gremolata and a drizzle of olive oil if desired.

PAN-COOKED ASPARAGUS AND MIXED FISH
No matter what your budget, you can make this dish with all different types of fish. It's nice to try to get a mixture of oily and white fish fillets, alongside things like shellfish, shrimp and squid. You want everything to cook at the same time, so just make sure that whatever you use is all sliced up into pieces roughly the same size. You can cook it all together in a pan like I'm doing here or on the barbecue or, for a healthier way, you can steam it all - whichever, finish the dish off with extra-virgin olive oil, lemon juice and chile as these flavors all work so well with asparagus and fish.

- Get a really large frying pan, or 2 smaller ones, on the heat and add a glug of olive oil. Score the skin of your fish fillets all over, about 1/2-inch deep, and season. Put the fish fillets into the pan, skin side down, with the squid tentacles. Add the scallops. Run your knife down 1 side of each squid to open them out, then quickly and lightly score the inside in a crisscross fashion. Lay them in the pan, scored side down. Add the asparagus and gently shake the pan. Cook for a few minutes, then turn everything over and cook on the other side. Sprinkle over the thyme tips.
- You're the one in control of the pan, so if something looks cooked, take it out and keep it warm. Don't watch things burn! When the fish has crispy skin, the scallops are golden brown with caramelized edges and the squid has curled up and is nicely charred, remove the pan from the heat. Put the squid on a chopping board and roughly slice it into pieces at an angle, then return to the pan. Lay the fish fillets on each plate. Toss the asparagus, scallops and squid with half the chile, a good drizzle of good quality extra-virgin olive oil and the lemon juice. Lightly season and mix together. Divide on top of the plated fish. Sprinkle with the rest of the chopped chile and the fennel tops, and drizzle with extra-virgin olive oil.

- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup. Snap off the woody ends of the asparagus (if you sharply bend the asparagus near the base, it will snap in the right place). Discard the ends.
- Place the asparagus on the sheet and drizzle with 1 to 2 teaspoons olive oil, just enough to lightly coat the asparagus. Sprinkle salt and pepper over the asparagus, and toss until the spears are lightly coated in oil. Arrange the spears in a single layer on the pan.
- Bake just until the base of the asparagus is easily pierced through by a fork. Very thin asparagus, like the kind shown here, will take as little as 9 to 12 minutes, whereas thicker asparagus will need 15 to 20 minutes.

Stir together panko, paprika, garlic powder, salt, cayenne, and black pepper in a fourth shallow dish. Working in batches of 10 to 12 spears, dip asparagus in water, and then immediately dredge in flour; dip in egg wash, and dredge in panko mixture, pressing to adhere. Place prepared asparagus spears in a single layer on a baking sheet; chill at least 30 minutes, to ensure panko adheres to asparagus.
- Heat oil in a large skillet over medium to 300°F. Fry asparagus, in batches of 10 to 12, in hot oil until golden brown, 2 to 3 minutes. Drain on paper towels, and sprinkle each batch with salt. Serve immediately with mayo dip.
