4 lb / 2 kg chicken wings (, cut into wingettes and drumettes (Note 1))
5 teaspoons baking powder (NOT BAKING SODA / BI-CARB SODA!!)
3/4 teaspoon salt
Oil spray

Steps:

  • If you are organised enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out. Otherwise, use a paper towel to pat the wings dry.
  • Adjust oven racks to upper-middle and lower-middle positions.
  • Preheat oven to 250F/120C (all oven types - standard/convection/fan).
  • Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil spray.
  • Place wings in a large bowl or in a ziplock bag. Add the baking powder and salt, then toss to coat evenly.
  • Place the wings on the baking tray in a single layer with the skin side up. They should just fit snugly. They will shrink when they cook because the fat renders out so don't worry if they look too snug.
  • Place wings on the lower middle oven rack and bake for 30 minutes.
  • Move wings up to the upper middle rack and increase the oven temperature to 425F/220C. Bake for 40 - 50 minutes, rotating the tray halfway through.
  • Remove baking tray from the oven and let it stand for 5 minutes.
  • Toss wings in sauce of choice or serve it on the side to dip / drizzle on the wings, then serve.

This is an extremely simple oven baked chicken wing "recipe". It's roots came out of me being tired of paying premium prices for those frozen cooked Buffalo Wings in the grocery store! I hesitate to even call it a recipe, since it is so simple. Not fancy, but super simple on time and ingredients.. and still satisfying.

3 lbs chicken wings
2 tablespoons cooking oil
soul seasoning (I use "All Island Soul Seasoning") (optional)
2 teaspoons hot sauce (or more)
3 tablespoons butter

Steps:

  • Preheat oven to 400°F.
  • Prepare chicken wings by using poultry shears and sniping off the wing tips (discard, or freeze for other use, like stock), and snip at remaining wing joint. This gives you "2" wings per wing.
  • Spread oil on baking sheet.
  • Spread wings in single layer on baking sheet.
  • You may choose to slide wings around on the oiled sheet, to put a light coating of oil on the wings. Less oil on wings makes for slightly less crispness.a bit of oil helps seasoning stick. You could omit oil, and spray with a good quality non-stick olive oil product.
  • This step is optional. Sprinkle as liberally as you dare with your choice of seasoning. This is where experimentation comes in, be daring, try what's in your spice cabinet, however I've come to like a common "All Island Soul Seasoning", with a touch of cayanne or ground red or white pepper. If you're cutting back on salt, be cautious of prepared seasoning, as they have a lot of sodium.
  • Bake until browned, cooked through, and a bit crispy. About 40 minutes. Use your nose and eyes to check! I use my convection setting on my oven too, which cuts on the cooking time, but makes a nice crisp even coating.
  • Remove from oven, and cool for about 15 minutes.
  • Melt butter and mix with hot sauce. (again. amount of hot sauce to your taste).
  • Toss with the wings in a serving bowl with the butter/hot sauce mixture.
  • Serve with your favorite Blue Cheese Dressing and celery sticks.

½ teaspoon salt, or more to taste
⅓ cup all-purpose flour

½ cup hot sauce
½ tablespoon red wine vinegar

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
  • Pat chicken wings dry using paper towels. Season with salt. Place flour in a shallow dish and dredge chicken to lightly coat. Place wings on the prepared baking sheet.
  • Bake in the preheated oven until golden and no longer pink in the centers, 40 to 45 minutes.
  • While wings are baking, melt butter over medium heat in a medium saucepan. Add hot sauce, red wine vinegar, Worcestershire, honey, garlic powder, and cayenne. Let sauce simmer on low heat until wings are done baking, about 40 minutes.
  • Remove wings from the oven and place in a large mixing bowl. Pour sauce over wings; toss until evenly coated. Serve with celery and carrots.

1 cup All-Purpose Flour
1 heaping Tablespoon of Baking Powder
Lawrys Seasoning Salt to taste, optional

Steps:

  • Prepare the chicken wings and pat them dry with paper towels.
  • Line a baking sheet with aluminum foil.
  • Place a wire rack in the baking pan.
  • Spray racks with cooking spray to prevent sticking.
  • Place the flour in a large mixing bowl.
  • Add the baking powder. Stir well to combine.
  • Place the wing pieces in the flour mixture. Toss well to fully coat.
  • Place wing pieces on the wire racks, leaving space between each piece.
  • Let wings rest on wire rack for 20 minutes while the oven warms up.
  • Pre-heat the oven to 400F degrees.
  • Place pan of wings in oven. Bake 45-60 minutes, or until brown.
  • Remove from oven when done.
  • If desired, flip the wings and return to oven to brown the bottom sides.

1 1/2 cups (375 ml) chicken broth/stock (, hot (I microwave))

  • Preheat oven to 180°C/350°F.
  • Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).
  • Meanwhile, mix together Chicken Rub. Sprinkle on both sides of the chicken.
  • Remove baking dish from the oven. Add rice then mix.
  • Place chicken on rice. Then pour chicken broth and water around the chicken.
  • Cover with foil, then bake for 30 minutes. Remove foil, spray chicken with oil (optional, gives chicken nicer finish), then bake for a further 20 minutes until liquid is absorbed.
  • Stand for 5 minutes, then remove chicken and fluff up rice. Garnish with parsley or thyme if desired, serve and enjoy!

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

3 lb chicken wings (completely thawed if frozen)
2 tbsp olive oil
1 tbsp cayenne pepper
1 tbsp garlic powder
2 tsp salt
1 tsp black pepper
1/2 cup Frank's Red Hot Buffalo Wing Sauce

Steps:

  • Preheat Oven for 400F
  • Pat chicken wings down to dry. Place chicken wings in a large bowl
  • Add 2 tbsp olive oil, 1 tbsp cayenne pepper, 1 tbsp garlic powder, 2 tsp salt, 1 tsp black pepper and 1/2 cup Frank's Buffalo Wing Sauce. Mix well until all wings are evenly coated.
  • Spread the chicken wings out evenly on the baking sheet and bake for 30 minutes. Flip each chicken wing and then bake for another 15 - 30 minutes or until desired crispness is achieved.
  • Remove from oven and serve immediately.

The secret to crispy baked chicken wings without baking powder is using a wire rack on your baking or "cookie" sheet for 360-degree airflow in your oven! Even better if you can use a convection setting on your oven. Add your sauce after cooking and level up your serving game with a beautiful platter of crudités and dipping sauce! This is a major crowd-pleasing appetizer or meal.

1.5-2 lbs chicken wings
1 tsp sea salt
1 tsp extra virgin olive oil ((or olive oil spray))
1/2 Tbsp garlic powder
1/2 Tbsp garlic flakes ((can also just use all garlic powder, 1 Tbsp total))
1 bunch scallions (chopped and divided)
2 Tbsp raw honey
1/4 cup extra virgin olive oil
1/4 cup coconut yogurt (for dairy-free) (or Greek yogurt)
1 small lemon, juice and zest
1/2 tsp sea salt

Steps:

  • Preheat the oven to 425f degrees (use the convection setting if you have it for slightly speedier cooking), arrange a rack in the middle of the oven, and line a baking sheet with aluminum foil and a wire rack on top.
  • Rub the wire rack (or spray) with ½ the olive oil and add the chicken wings flat-side (or skin-side) down. Season with the rest of the olive oil and sea salt.
  • Bake in the oven for approx. 45-50 minutes, flipping the wings halfway through. As the skin cooks and crisps, it will release drippings which may cause some smoke in the house, so have your windows open and fan turned on (it's worth it, trust me). Trim off any burned wing ends if you have them.
  • Meanwhile, mix all ingredients including ½ of the chopped scallions for the honey-garlic sauce in a large mixing bowl and toss cooked chicken in the sauce until well coated right out of the oven and let sit.
  • Next, mix up the yogurt dip in a serving bowl.
  • Serve chicken wings with the yogurt dip, and garnish with more chopped scallions. Optionally serve on a crudités board with your favorite chopped raw vegetables.

1 2.5 pound bag frozen chicken wings (or drumettes)
1 1/2 tbsp baking powder
1/2 cup Frank's buffalo wing sauce
1 tbsp chili garlic sauce
1 tbsp pure maple syrup
1/2 tsp salt

Steps:

  • Preheat oven to 375 degrees F.
  • Add the frozen chicken wings (or drumettes if you prefer) to a large gallon-sized zippered bag with the baking powder. Shake the wings to coat.
  • Line a sheet pan with parchment paper (or foil). Place an oven-safe baking rack on top of the lined sheet pan. Lightly oil the rack.
  • Place the baking powder coated frozen wings on the baking rack and bake for 80 minutes, or until the internal temperature of the wings is 165 degrees. If desired you can broil the chicken wings for the last two minutes of cooking time to get them even more browned.
  • Whisk together the buffalo sauce, chili garlic sauce, maple syrup and salt. Add the baked chicken wings to a bowl and toss them with the sauce until they are evenly coated.
  • Serve the wings with fresh carrots and celery and blue cheese dressing.

4 pounds chicken wings (, halved at joints, wingtips discarded)
2 Tablespoons baking powder (*aluminum free)
3/4 teaspoon salt
1/2 teaspoon cracker black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/3 cup Frank's Wings Hot Sauce
1 1/2 cups light brown sugar
1 Tablespoon water

Steps:

  • Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
  • Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
  • Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
  • Arrange wings, skin side up, in single layer on prepared wire rack.
  • Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
  • Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

2 tbsp Baking Powder
2 tbsp Seasoning Salt
1 tbsp Black Pepper
1 tbsp Poultry Seasoning
1/2 tbsp Lemon Pepper Seasoning
1 tea Cayenne Powder (Optional)
1 tea Crushed Pepper Flakes (Optional)

Steps:

  • Combine spice Ingredients Into an extra-large two-gallon zip lock bag or large mixing bowl. Add separated chicken wings. Seal ziplock and toss the wings to combine the spice and wings-Marinate wings in the spice mixture for 30 minutes or so.
  • Preheat oven to 420. Line baking sheet (with sides) with foil for easy cleanup. Top foil with parchment paper.
  • Spread chicken wings on parchment paper. Try and make sure the wings do not touch each other.
  • Bake wings for 20-25 minutes.
  • Flip wings.
  • Bake another 20-25 minutes.
  • Remove wings from the oven.
  • Remove wings from pan. Place wings on a paper towel-lined bowl or platter.
