FRYING-PAN SAUSAGE HOTPOT

Use up any leftover sausages in this hearty hotpot recipe, quick yet comforting and perfect for midweek meals

1 tbsp vegetable oil
6 plump good-quality sausages with herbs
splash of red wine (if you have some)
175ml vegetable stock
3 tbsp caramelised red onions
400g pack ready-cooked and sliced potatoes

Steps:

  • Heat the oil in a medium frying pan (one the sausages will fit in fairly snugly). Add the sausages and fry for 8-10 mins, turning them often. Turn the grill to high. Splash a couple of tablespoons of red wine into the pan if you are using it, then pour in the stock and stir in the caramelised red onions. Allow the mixture to bubble for 3-4 mins, so it thickens a little and turns into a rich gravy. Remove from the heat.
  • Spread the potatoes so they roughly cover the sausages and gravy. Put the frying pan under the grill for about 8 mins until the potatoes turn crisp and golden. Serve while bubbling and hot - there is no need to add seasoning.

Serve sausages and cheeses with crackers, grainy mustard, cornichons, apricot jam, and olives.

Assorted sausages, such as chorizo, Lebanese-style, and Moroccan-style
Assorted cheeses, such as farmhouse cheddar and aged Gouda

Steps:

  • Prick sausages all over with a fork, and transfer to a skillet (preferably cast iron) over medium heat. Fill skillet with enough water to reach a quarter of the way up sides of sausages. Simmer, covered, until sausages are cooked through and water evaporates, 10 to 15 minutes. (If sausages have cooked through but water has not evaporated, uncover, and continue to cook until water evaporates.)
  • Continue to cook sausages, turning, until crisp and golden brown all around, about 3 minutes. Serve with cheeses.

I don't think the generic pork sausages found in most North American supermarkets would be suitable for this recipe. Rather, go for European-style or artisanal (Bruce Aidell?) sausage. It'll make the dish.

1/4 cup olive oil
6 large green bell peppers or 6 large red bell peppers, cut into thin strips
2 medium onions, sliced
3 cloves garlic, minced
2 tablespoons red wine vinegar
2 lbs hot sausage
cooked polenta

Steps:

  • Heat oil in large skillet over medium heat.
  • Add peppers, onion, garlic and vinegar and saute 10 minutes.
  • Cover and cook until tender, about 5 minutes longer.
  • Season to taste.
  • Meanwhile, cook sausage in another large skillet over medium-high heat until brown and cooked through, turning occasionally, until skin is browned and lightly blistered, about 15 minutes.
  • Transfer to platter; surround with pepper mixture.
  • Serve with polenta.

  • In a large skillet heat the pan over medium-high heat until it's hot. Add a drizzle of olive oil, which is about 1 Tbsp.
  • Place the Italian sausages in the pan and brown them on both sides for about 3 minutes on each side. The sausages will not be cooked through yet on the inside.
  • Turn the heat down to medium-low. Add a 1/2 cup of water to the skillet and cover the pan. Simmer the Italian sausage until it's cooked through and reaches an internal temperature of at least 160F, which will take about 10-12 minutes. Discard any remaining water in the pan.
  • Enjoy! Serve with sauteed peppers and onions, roasted vegetables, salad, pasta, polenta, or rice.
