CHIPOTLE BRUSCHETTA
A friend recently made a batchof Mague's Chipotle Chutney and I thought how wonderful it would be on a bruschetta with tomato & Monteray Jack cheese. This is the result. The recipe for Mague's Chutney is recipe #117377 but you may substitute Chipoltle in Adobo sauce. Watch how much chipotle you use it can be very hot. I sometimes cut the cheese in little stick instead of grating it Serve as an appetizer.

Steps:
- Paint one side of the baguette slices with olive oil , place oil side up on a cookie sheet and toast in a 300F oven until lightly browned, flip & just dry the bottom side.
- A head of time chop your tomatoes, finely chop the chipotle peppers and grate your cheese.
- Preheat oven to 350f.
- 20 minutes before serving assemble the Bruschettas.
- Evenly distribute the tomatoes on the 12 slices, top with apprx 1 tsp chpotlr and cheese.
- Place in 350f oven for apprx 15 minutes or until the cheese has melted. I like to turn on the broiler for the last minute or two.

CHIPOTLE CHICKEN BURRITOS

- Heat the oil in a medium pot over medium-high heat. Add 1/2 cup pico de gallo, the chopped chipotle and adobo sauce to taste; cook until the mixture starts to sizzle, about 2 minutes. Add the beans and 3/4 cup water; bring to a low boil, then stir in the chicken and cook until the mixture is slightly thickened, about 2 minutes. Stir in the cilantro and season with salt.
- Heat the tortillas as the label directs. Arrange the rice horizontally in the lower half of each tortilla, leaving a 1 1/2-inch border on all sides. Top evenly with the cheese, chicken mixture, lettuce and the remaining pico de gallo.
- Fold the bottom edge of each tortilla snugly over the filling, tuck in the sides and roll up tightly. Cut the burritos in half and serve with guacamole if using.
TROUT BRUSCHETTA WITH CHILI VINAIGRETTE

- Make the bruschetta: Preheat the oven to 375 degrees F. Lay the bread slices on baking sheets, brush with olive oil and season with salt and pepper. Bake until crisp, 5 to 6 minutes.
- Line a rimmed baking sheet with foil, then sprinkle 2 tablespoons salt over the foil. Lay the trout fillets skin-side down on the salt and sprinkle liberally with more salt. Set aside in the refrigerator for 10 minutes.
- Meanwhile, make the chili vinaigrette: Toast the chili powder in a small skillet over low heat, 1 minute. Let cool. In a small bowl, whisk the chili powder, garlic and vinegar. Whisk in the chili oil, olive oil, 1/2 teaspoon salt, pepper to taste and the parsley.
- Rinse the trout fillets and pat dry. Season the trout with pepper. Fill a shallow dish with the instant flour. Dredge the fillets in the flour, shaking off the excess.
- Heat 2 tablespoons olive oil in a large skillet over moderately high heat. When hot, add the fish, skin-side down, and cook until crisp, about 1 minute. Turn with an offset spatula and cook on the other side until done, about 1 minute. Drain on paper towels.
- To serve, cut the trout into bite-size pieces. Top each toast with a piece of roasted red pepper and a piece of trout. Spoon some of the vinaigrette over the trout. Sprinkle with the olives and parsley.
CRAB, CHIPOTLE & TOMATO BRUSCHETTA
Ths is a recipe I threw together from thingsI had leftover on hand. I couldn't find a duplicate recipe on Zaar so I am posting this one. It is spicy but you may make it hotter or decrease the heat with the amount of Chipotle in Adobo sauce you use. Quick and easy

- Mix together the crab, chipotle & tomato.
- Put a heaping tsp on each toasted baguette slice, toasted side down.
- Shake 1/2 tsp of parmesan on top of each.
- Bake in 375F oven for 10 minutes.
- Brown under broiler for 2 minutes if necessary.
