FRIED PHEASANT
When a co-worker plopped a cooler full of Pheasant & Quail in my lap I was at a loss as to how to prepare them. He said to just fry them up! I searched here for a fried pheasant recipe but came up empty handed. I can't wait to try some of the other recipes I saw here ( because my freezer is now not only full of pheasant and quail but goose too!) but for now I will just write this one up and it it to the rest! Prep Time includes Marinade!

Steps:
- Cut Pheasant Meat from Carcass (I just used the Breast and Thigh Meat Tossing all those little feet far away).
- Rinse Throughly and place in Bowl.
- Salt, Pepper and Season Pheasant turning the meat over to make sure all gets covered.
- Cover bowl and place in fridge for at least 4 hours.
- In Large Heavy Skillet (I used Grandma's Cast Iron) put oil and heat on high until ready to fry.
- Retrieve Pheasant from Fridge.
- In a shallow bowl scramble eggs.
- In another shallow bowl (or plate) put flour in an even layer.
- Dip Pheasant pieces in egg first then coat with flour.
- Place in hot oil and brown on either side (lower heat to medium here so as not to burn the oil).
- The pheasant cooks REALLY fast and is SO tender and moist.
- Carrots and a green salad was an excellent addition to this meal!
PAN ROASTED PHEASANT WITH SHIITAKE MUSHROOMS AND FIGS IN A CHAMBOURCIN GLACE
Steps:
- Preheat oven to 400 degrees. Heat canola oil in a saute pan over medium high heat. Season pheasant with salt and pepper. Brown legs and thighs evenly and place in oven for 20 minutes. Bring figs and wine to a low boil in a heavy saucepan. Reduce and simmer to 1/3 of original volume. Remove pan from oven, removing leg and thigh. Return to burner for 45 seconds. Sear skin side of pheasant breast for 1 minute. Flip and return thigh and leg. Finish in oven for 5 to 6 minutes. Remove pheasant from pan and plate. Add 1/2 of the butter to pan and saute shallots until light brown. Add Shiitakes and cook to tender, about 1 minute. Add figs and wine to pan with stock, rosemary, reduce to thicken. Season and whisk in remaining butter and serve.
CHICKEN FRIED PHEASANT
Family favorite around bird hunting season. Chicken fried pheasant is so simple and good, and unless you tell them, they don't have a clue it's wild game. Uses few ingredients, prep and cooking time are minimal. The first problem is getting the bird in the first place, if you're a hunter! The second problem is there are NEVER any leftovers, no matter how much you cook. Makes wonderful cold sandwiches IF there is anything leftover!

- In a shallow bowl, mix the milk and vinegar. Dip the pheasant slices in the milk and vinegar mixture, then press both side in the cracker crumbs to coat.
- Heat the oil in a skillet over medium-high heat. Cook the pheasant in the hot oil about 5 minutes on each side, or until golden brown. Drain on paper towels.

Steps:
- Cut breasts into bite-sized nuggets.
- Put flour on a paper plate.(makes for quick and easy cleanup).
- Put bread crumbs on a separate paper plate.
- mix eggs and milk in a shallow dish, such as a pie tin.
- Dip each nugget in flour, shake off excess.
- Dip in egg/milk mixture.
- Dip in bread crumb mixture.
- Set each breaded nugget aside, on a clean paper plate.
- Heat oil to 350°F in a heavy pot or cast iron skillet.
- Fry nuggets, a few at a time until golden.
- Remove to paper towel covered plate.
- Sprinkle with salt.
- Serve with cocktail sauce or honey mustard sauce.

- In a small bowl, combine the cornstarch, soy sauce, ginger and bouillon until blended. Add water; set aside. In a skillet or wok, stir-fry pheasant in 1 tablespoon oil for 3-4 minutes or until no longer pink. Remove and keep warm. , Add remaining oil to pan. Stir-fry broccoli and carrots for 2 minutes. Add the celery, onion and peas; stir-fry until the vegetables are crisp-tender, about 5 minutes. Stir soy sauce mixture and add to the skillet; bring to a boil. Cook and stir for 2 minutes. Return meat to pan and heat through. Serve with rice.

PAN-ROASTED PHEASANT | MEATEATER COOK

- Preheat the oven to 350 degrees. Season the pheasant breasts with a sprinkle of salt before cooking. If possible, do this step an hour to a day in advance.
- Drizzle a tablespoon of oil over the grapes and spread across a sheet pan. Season with salt, pepper and crushed rosemary. Roast for 15-20 minutes, or until they are just about to burst. Remove and set aside. Reduce the oven to 325 degrees.
- Pat the pheasant dry with paper towels and then season each side with cracked black pepper. Heat a large, oven-safe sauté pan over high heat. Add a drizzle of oil or tablespoon of clarified butter. When the pan is hot, use tongs to lay down each breast, leaving space in between. Sear the breast quickly until golden brown and flip once a crust has developed. This should take only a minute or two. Immediately transfer the pan to the oven to finish cooking for about 4 minutes.
- Remove the pan from the oven and return to the stovetop on medium heat. Set the pheasant breasts aside to rest. Add another small drizzle of oil or clarified butter to the pan along with the sliced shallots. The pan will be very hot, so keep the shallots moving to avoid burning. Reduce heat if necessary.
