THE BEST GARLIC BREAD
We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

- Arrange a rack in the center of oven and preheat to 450 degrees F.
- Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
- Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
- Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

- 1. Slice the bread into 1/2 inch to 1 inch thick slices (I cut the slices on a slight angle).
- 2. Melt the butter in a small sauce pan with olive oil.
- 3. Either dip both sides of bread quickly in the butter mixture, or brush the mixture on both sides of the bread.
- 4. Place the buttered bread into a medium - hot skillet. Sprinkle lightly with garlic powder (Never use garlic salt) (if you want a little salt, sprinkle a little on... but not needed). When the bread is browned a bit, flip it over and sprinkle the browned side with garlic powder. Flip over again for a few seconds and remove from heat.
- 5. *** When making this for the oven, only butter one side of the bread and only sprinkle one side. *** You can add shredded parmesan and mozzarella cheeses to any version of this... but oven version is best for cheese.

GRILLED BREAD (PANE ALLA GRILLIA)

- Preheat a grill pan over medium-high heat. Slice ciabatta in half lengthwise. Then cut each half into 1-inch slices. In batches as needed, grill the ciabatta slices, cut side down until they are golden and crisp, about 2 minutes. Working quickly, drizzle the toasted sides with extra-virgin olive oil. Rub the garlic cloves over the grilled bread, then rub the cut side of the tomatoes over the grilled bread. It's important to do this while the bread is still hot or warm, otherwise the garlic won't melt into the bread. Sprinkle with salt and pepper, and serve warm.
FRIED BREAD
My mom used this on the mornings when we had run out of bread. She also used it to make sandwiches if needed. It came from my Granny who used it to round out meals during the Depression.

Steps:
- Mix flour and baking powder. Add water to make a soft dough. Pat dough out on a sheet of plastic wrap to about 1/2" thick.
- Heat up about 1/4" of oil or lard to medium heat in a cast iron or non stick pan.
- Cut dough into about 9 biscuits.
- Fry on one side until brown. Flip and cook about 2-3 minutes more. Test for doneness by flaking the side of a biscuit with a fork. If it seems dry inside it is done.
- Serve with butter and jam. Can also be napped with gravy and served with stewed hamburger and onions.
