This is a fast and easy delightful bread to make and has a lovely flavor. The colors from the ingredients stand out. It brings a little bit of old world flavor with it and to your home. Steps:
- Mix flour with water and add crushed tomatoes, onion, salt, and pepper. Combine the mixture well with a wooden spoon to form a smooth cream.
- Put oil into a frying pan and heat it well.
- Spoon a large tablespoon of mixture into oil, frying until 1 side is browned. Flip over to brown other side.

ONE PAN BANANA BREAD
A one pan recipe with minimal clean-up required. A little sister in my husband's fraternity was kind enough to share her recipe with me which I've since made dozens of times.

Steps:
- Preheat oven to 350 degrees.
- Generously grease the bottom only of a 9x5x3-inch loaf pan.
- Stir all ingredients in pan with a fork until moistened; beat vigorously 1 minute.
- Bake 55 to 60 minutes or until a toothpick comes out clean.
- Cool 5 minutes.
- Run knife around sides of loaf to loosen, remove from pan.
- Cool completely.
- (if loaf sticks to pan, press gently on side of loaf with a knife).

- To prepare this delicious fried bread with feta cheese (tiganopsomo), start by making the dough. Add the flour into a large bowl; using your hands make a dimple in the middle and add the salt, the sugar, the yeast and pour in the olive oil. Knead the dough with your hands adding slowly the lukewarm water, until the dough becomes smooth and elastic and doesn’t stick. Cover the dough for the fried bread with some plastic wrap and let it rest for 30 minutes.
- Divide the dough in 4 pieces. Roll the pieces of the dough into circles, approx. 0.5cm thick (that can fit your frying pan). Top two circles of dough with crumbled feta cheese and cover with the other circles. Join the edges well, using a fork.
- Heat a large frying pan to medium heat and add enough oil to cover the bottom of the pan. Fry the breads, until nicely coloured. When one side becomes golden, turn them on the other side. Remove the fried bread from the pan and place on some kitchen paper to absorb the extra oil. Enjoy while still warm!

- In the bowl of a stand mixer combine the flour, yeast, sugar, oregano, salt, pepper, olive oil and warm water. Using the dough hook attachment of your mixer, mix the ingredients and the dough for approximately 5 minutes.
- Lightly grease a medium sized bowl and transfer the dough to it. Cover loosely with a clean kitchen towel and let rise for at least one hour.
- Once the rising time has past, divide your dough into 10 equal pieces (this does not need to be exact.)
- Take one piece of dough and roll it into a circle until it is about 1/3 - 1/4 of a centimeter thick. Into the center of this circle place 1/10 of the crumbled feta (again, this does not need to be exact).
