OVEN FRIED ONION RINGS
Why would you want to eat the unhealthy deep fried version when these are just as good? (WeightWatchers and vegan friendly)

Steps:
- Preheat the oven to 400°F; adjust the oven racks so they are spaced evenly.
- Spray 2 nonstick baking sheets with nonstick spray.
- In a food processor, mince the pieces of toast, and then in a blender, blend them until the crumbs are really fine like the ones you find in the store.
- Dump them into a big bowl with the flour.
- In the blender, blend tofu, soy milk, lemon juice, and seasonings.
- Coat each onion ring on both sides with the tofu mixture, shaking off the excess; then coat lightly with the bread crumb mixture. Use batches of the bread crumbs in a small Tupperware so they don't get all gooey.
- Arrange the rings on the baking sheet, and spray the tops with nonstick cooking spray.
- Bake until lightly browned, about 20 minutes, turning rings once in the middle and swapping rack positions if you're using two cookies sheets.

ROJO ONION RINGS
There's a recipe posted here with the same name but the ingredients vary slightly. This is from Guy Fieri's cookbook, Food, Cookin' It, Livin' It, Lovin' It. I've rearranged his ingredient list and prep work in a way that makes more sense to me and a way I would prepare this dish in my own kitchen. Prep and Cooking times are estimated and *include* soaking and refrigeration time.

Steps:
- Cut onions in to 3/8" thick rings and discard the inner most rings.
- Have a baking sheet handy.
- Pour buttermilk in a large bowl and toss in onion rings. Soak onion rings for at least 30 minutes.
- Line up three more bowls and add ingredients in this order. Flour to first bowl. In second bowl, combine hot sauce, garlic, ketchup and water until blended. In third bowl add panko.
- When onion rings are finished soaking in buttermilk, dip them into flour, then hot sauce mixture, then panko. Place rings on baking sheet and put in refrigerator for 10-20 minutes for batter to firm up.
- Layer paper towels on a plate.
- In a heavy skillet or deep fryer, heat the oil to 360 degrees F.
- Working in batches, deep-fry onion rings for about 3 minutes or until starting to turn brown. Turn as needed. As they finish, place on paper towel lined plate and sprinkle with sea salt.
- Serve immediately.

AMAZING CRISPY FRIED ONION RINGS
These onion rings are perfectly coated by the batter; not overly thick batter that hides the taste of the onions. I prefer to slice regular onions thin so that the result is a fine, crisp onion ring. I challenge you to try this one out on friends using your favorite recipe. I think it is fantastic and hope you will, too.

Steps:
- In a 3 quart pot, heat about 3-4 inches of vegetable oil on medium to medium high heat.
- Combine all dry ingredients in a medium sized bowl and mix in milk with a whisk, adding more milk if needed until mixture is the consistency is like a thin-medium pancake batter.
- Cut onions into thin rings and toss in batter.
- Place a single ring into the oil to test for appropriate heat. Onion ring should sizzle and start to brown immediately.
- Place small batches of onion rings into the oil and when they turn dark golden brown on one side, flip them over to the othe side with a slotted spoon or carving fork.
- Drain on a paper towel-lined plate. Repeat until all onions are done. (Add a bit more milk to the batter if it appears that the last batch isn't getting coated enough.).
- I like to salt the cooked onion rings, but that is optional.

SUPER CRISPY ONION RINGS
This goes fast! A great late night snack, goes perfectly with burgers, soup, and sandwiches! Adapted from Food & Wine magazine. Onion rings are a type of fast food commonly found in the United States, Canada, United Kingdom, Australia and Spain.

Steps:
- In a very large pot (or deep fryer), heat the oil to 365°.
- In a bowl, whisk the flour with the cornstarch, baking soda and 2 teaspoons of salt.
- Add 2 1/2 cups of the club soda and whisk until smooth; the batter should be thick but pourable. If needed, add the remaining 1/2 cup of club soda, a few tablespoons at a time.
- Working with 6 or 7 onion rings at a time, dip them in the batter until completely coated; as you pull the rings from the batter, scrape some of the excess against the side of the bowl.
- Carefully add the onion rings to the hot oil and fry until golden and crisp, about 2 minutes.
- Drain the onion rings on paper towels.
- Sprinkle the onion rings with salt and serve immediately or keep warm in an oven on low heat while you coat and fry the rest. Enjoy!
