PENNE WITH VODKA SAUCE AND MINI MEATBALLS

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Meanwhile, mix the beef, 1/4 cup parmesan, the breadcrumbs, egg, 1/2 cup basil, the minced garlic and 1/2 teaspoon salt in a large bowl with your hands until just combined. Form into 3/4-inch meatballs (about 20). Grate the tomatoes into a medium bowl; discard the skins.
- Heat a large nonstick skillet over medium heat. Add the olive oil, then the meatballs. Cook, turning, until browned on all sides, 2 to 3 minutes. Add the sliced garlic and cook until just golden, about 1 minute. Gradually add the vodka, then the grated tomatoes and cream. Bring to a simmer and cook until the sauce thickens and the meatballs are cooked through, 8 to 10 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper.
- Add the pasta and the remaining 1/4 cup basil to the skillet; toss, adding the reserved cooking water as needed to loosen. Remove from the heat and add the remaining 1/2 cup parmesan; toss.

- Preheat oven to 375°F Cook pasta according to package directions. Drain well.
- Meanwhile, in a food processor or blender, combine undrained tomatoes, tomato paste, wine or tomato juice, dried oregano, pepper and crushed red pepper. Cover and blend or process until smooth. Set aside.
- In a large skillet, cook ground beef and onion until meat is brown. Drain off fat. Stir tomato mixture into meat mixture in skillet. Bring to boiling; reduce heat. Cover and simmer for 10 minutes. Stir in cooked pasta, and olives.
- Divide the pasta mixture among six 10 to 12 ounce individual casseroles. Bake, covered, for 15 minutes. (Or spoon all of the pasta mixture into a 2-quart casserole. Bake, covered to 30 minutes). Sprinkle with mozzarella cheese. Bake, uncovered, about 5 minutes more or until cheese is melted.
PENNE WITH SAUSAGE AND TOMATO SAUCE

- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then add sausage meat and cook, stirring to break up large chunks, until meat is browned and just cooked through, 5 to 7 minutes. Transfer meat to a bowl using a slotted spoon and add bell pepper and garlic to fat in skillet. Reduce heat to moderate and cook, stirring occasionally, until pepper is just tender and garlic is golden, 5 to 6 minutes.
- Add wine and sausage and simmer, scraping up brown bits on bottom of skillet with a wooden spoon, until liquid is reduced by half, about 2 minutes.
- Add tomatoes with their juice and black pepper and simmer, breaking up tomatoes with spoon, until sauce is slightly thickened, 6 to 8 minutes.
- While sauce is cooking, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1/2 cup pasta-cooking water, then drain pasta in a colander and return to pot. Add sauce and cheese to pasta and toss to coat. Add cooking water if necessary to moisten. Season pasta with salt and pepper and serve with additional cheese.
PENNE WITH CHEESY MEAT SAUCE
Very easy, yummy, and cheesy! Ready in 30 minutes. Note: Add 1/2 cup chopped mush rooms when sautéing garlic.

- Cook penne until done; rinse and drain.
- Meanwhile, brown ground beef in large skillet; remove from pan and drain. In same skillet, sauté garlic (and mush rooms) in olive oil. Return meat to skillet with mush rooms over low heat; add tomato sauce, pepper, and basil.
- Dissolve cornstarch in 3 tablespoons milk; mix in remaining milk. Add to meat and stir over low heat until slightly thickened. Add processed cheese slices and stir until melted. Toss with hot pasta. Sprinkle generously with parmesan.
- You can replace the penne with fusilli or elbow macaroni. Use just about any kind of cheese you want. Tex mex worked very well.

- Cook pasta as directed on package; reserve 1/4 cup cooking water. Heat cooking spray in a large skillet over medium-low heat. Sauté onion and pepper until tender, about 7 minutes. Raise heat to medium and add turkey; cook until browned, about 8 minutes. Stir in marinara, reduce heat and stir occasionally, until sauce comes to a low simmer, about 6 minutes. Mix 1/2 cup sauce with reserved water in a bowl; toss pasta and sauce; divide among 4 bowls. Top each with equal amounts of remaining sauce and sprinkle with Parmesan.

- Cook pasta as it says on your package.
- Using a little vegetable oil or olive oil, pour a little in a large separate skillet and use medium-low heat. Cook the onion and pepper until tender not too crunchy, about 7 minutes.
- Turn up the heat to medium and add turkey. Cook for 8 minutes or until it is browned all the way through.
- Add marinara sauce and reduce heat to simmer. Do this for about 6 minutes for all the flavors to blend together.
- Put pasta in bowls and top with meat sauce and sprinkle Parmesan on top. Enjoy!

- Preheat the oven to 190C/170C Fan/Gas 5. Grease an ovenproof dish and a sheet of foil large enough to cover it. Cook the pasta for 2 minutes less than instructed. Drain.
- Cook the onion in the oil until soft. Add the garlic and mushrooms. Cook until the juice runs out of the mushrooms. Increase the heat and continue to cook until most of the juices have evaporated. Add the passata and 1 1/2tsp of the oregano. Simmer, covered for 5 minutes. Set aside.
- Mix the mince with a third of the breadcrumbs, the tomato ketchup, and the rest of the oregano. Shape into 12 mini meatballs. Heat the oil in a frying pan and cook until brown on all sides.
- Add the meatballs to the sauce and simmer for 5 minutes. Stir in the pasta.
- Turn into the ovenproof dish. Cover with the foil and bake for 10 minutes. Remove the foil and sprinkle on the rest of the breadcrumbs and the mozzarella and Parmesan. Bake for another 10 minutes.
