I found this recipe at a Pampered Chef "Power Cooking" show. It was served there and was so good. I came home and made it as part of my OAMC. It was great, even after being frozen. For my family, I make the whole recipe and then halve it when I put it into my freezer. Each bag makes about 6-8 servings, so this recipe will feed my family multiple times. Cook time doesn't include the cooling time before freezing.

2 lbs fresh lean ground beef
1 onion, coarsely chopped
1 (4 ounce) can diced green chilies
1 (1 1/4 ounce) taco seasoning, packet
1 (1 ounce) Hidden Valley Ranch dip, packet
2 (11 ounce) cans corn, undrained
4 (14 ounce) cans stewed tomatoes, undrained
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can kidney beans, undrained
1/2 cup fresh cilantro, chopped (optional)
grated monterey jack cheese, and or cheddar cheese

Steps:

  • Brown the meat with the onions in an 8-qrt stockpot.
  • When cooked all the way through, add remaining ingredients and cook over medium heat for 30 minutes.
  • Eat now if you are not freezing it. Top with grated cheese, sour cream, tortilla chips, etc.
  • If freezing, let cool completely and pour into freezer bags. First mark the bags with "Taco Soup, Reheat to Serve" and the date.
  • I usually let the bag partially thaw, enough to get it out of the bag and then heat over low until warmed through.

Make it light - make it Mexican! This soup proves low-cal, low-fat foods can still have loads of flavor.

Yield 4 servings of 1 1/2 cups

Number Of Ingredients 12

4 (6-inch) corn tortillas
1/2 cup onion, chopped
3 boneless, skinless chicken breast halves (about 12 ounces)
1 garlic clove, pressed
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
2 cans (14 1/2 ounces each) chicken broth
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies, undrained
4 teaspoons fresh cilantro, snipped
2 ounces reduced-fat cheddar cheese, shredded (1/2 cup)
4 thick slices fresh lime (optional)

Steps:

  • Preheat oven to 400°F. Cut tortillas into 1/2-inch strips using Professional Shears. Place on Rectangle Stone. Bake 7-8 minutes or until crisp.Meanwhile, chop onion using Food Chopper. Cut chicken into 1/2-inch pieces using Chef's Knife. Spray (4-qt.) Casserole with canola oil using Kitchen Spritzer. Heat 1-3 minutes over medium heat or until shimmering. Add chicken; cook and stir 3 minutes. Add onion, garlic pressed with Garlic Press, chili powder and cumin. Cook and stir 2 minutes. Stir in broth, tomatoes and chilies. Bring to a boil. Reduce heat and simmer 10 minutes.Snip cilantro using Professional Shears. Divide tortilla strips among 4 bowls. Ladle soup over tortillas using Ladle. Shred cheese over top with Rotary Grater. Sprinkle soup with cilantro. Garnish each bowl with lime slice to squeeze juice into soup, if desired.

Number Of Ingredients 9

1 pound lean ground beef
1 small yellow onion
1 package taco seasoning mix
1 can (15 ounces) whole kernel corn, undrained
1 can (15 ounces) beans in chili sauce, undrained
1 can Rotel chilis and diced tomatoes, undrained
1 can tomato soup
1 soup can of water
(I also added 1 package of Dry Ranch dressing mix, although it was not called for in the original recipe. Adds more flavor!)

Steps:

  • Place burger and chopped onion to Deep Covered Baker. Cover and microwave on high for 4 minutes. Remove and crumble. Cover and return to microwave for 2 minutes. Remove and use Mix n Chop till desired consistency is obtained. Drain. Add remaining ingredients, stir thoroughly and heat 10 minutes until hot. Serve with tortilla chips, salsa, sour cream, and grated cheddar cheese.
