A classic Italian combination of basil, tomato and fresh mozzarella, with the added bonus of caramelized onions. This fragrant pizza will leave your mouth watering, but it's easy on the fat and calories also.

1 (14 1/2 ounce) can diced tomatoes, well drained
1 1/2 teaspoons basil leaves
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 medium onion, thinly sliced
1 teaspoon sugar
1/2 cup mozzarella cheese (miniature mozzarella balls, cut in half)
1 (12 inch) pizza crusts
fresh basil (optional)

Steps:

  • Preheat oven to 450°F Mix tomatoes, basil, garlic and pepper; set aside.
  • Spray nonstick skillet with cooking spray. Heat skillet on medium-high heat. Add onions; reduce heat to medium. Cool and stir 5-7 minutes until tender, stirring occasionally. Use additional cooking spray if needed. Add sugar and salt; cook and stir 1 minute or until onions are caramelized.
  • Spread tomato mixture over pizza leaving a 1-inch border. Top with onions, and cheese.
  • Bake 8-10 minutes. Let stand 2 minutes. Top with fresh basil, if desired. Cut into 6 slices to serve.

3 medium vine-ripened tomatoes
1 tsp (5 mL) salt
2 tbsp (30 mL) chopped fresh basil
1 tbsp (15 mL) olive oil
8 oz (250 g) fresh mozzarella cheese
Coarsely ground black pepper
Crusts
1 tsp plus 1 tbsp (5 mL plus 15 mL) olive oil, divided
1 package (13.8 oz or 283 g) refrigerated pizza crust
1 garlic clove, pressed
1 oz (30 g) Parmesan cheese

Steps:

  • DIRECTIONS 1 Preheat oven to 425°F (220°C). For toppings, slice tomatoes into 1/4-in. (6-mm) slices. Place onto paper towel-lined cutting board. Sprinkle both sides evenly with salt; let stand 15 minutes. 2 Meanwhile, for crusts, lightly brush Rectangle Stone with 1 tsp (5 mL) of the oil. Unroll dough onto baking stone. Press garlic into (1-cup/250-mL) Prep Bowl and combine with remaining 1 tbsp (15 mL) oil; brush over dough. Grate Parmesan cheese using Rotary Grater; sprinkle evenly over dough. 3 Cut dough lengthwise into thirds with Pizza Cutter. Carefully move dough strips slightly apart on baking stone. Bake 11-12 minutes or until bottom of crusts are light golden brown. 4 While crusts bake, finish toppings. Chop basil using Santoku Knife (see Cook's Tip); combine with oil in another Prep Bowl and set aside for later use. 5 Blot tops of tomato slices with paper towels. Slice mozzarella cheese into 1/4-inch-thick (6-mm) slices. Arrange tomato and cheese slices in overlapping rows on baked crusts. Return to oven; bake an additional 4-5 minutes or just until cheese melts. 6 Remove baking stone from oven. To serve, brush basil mixture over pizzas using Chef's Silicone Basting Brush and sprinkle with black pepper.

1 cup all-purpose flour, plus more for dusting
1/4 teaspoon baking powder
Kosher salt
5 tablespoons extra-virgin olive oil, plus more for brushing
1 15-ounce can cannellini beans, drained and rinsed
2/3 cup drained giardiniera (Italian pickled vegetables), chopped, plus 2 tablespoons brine
1/2 cup fresh basil, torn, plus small leaves for topping
2 tablespoons chopped fresh parsley
Freshly ground pepper
3 medium heirloom tomatoes (about 1 1/4 pounds)
1 small clove garlic, grated
1/4 cup grated parmesan cheese
8 ounces fresh mozzarella cheese, thinly sliced

Steps:

  • Place a pizza stone or inverted baking sheet in the lower third of the oven and preheat to 450 degrees F. Mix the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Stir in 1/3 cup water and 2 tablespoons olive oil until a shaggy dough forms. Turn out onto a lightly floured surface and knead into a smooth ball, 1 to 2 minutes. Wrap in plastic wrap and set aside for 15 minutes at room temperature.
  • Meanwhile, toss the beans, giardiniera and brine, basil, parsley and 1 tablespoon olive oil in a large bowl. Season with salt and pepper; set aside. Slice the tomatoes, place on paper towels and sprinkle lightly with salt; set aside.
  • Roll out the dough into a 12-inch round on a lightly oiled piece of parchment paper. Slide the parchment with the dough onto an inverted baking sheet. Rub 1 tablespoon olive oil and the garlic all over the dough. Sprinkle the parmesan on top. Slide onto the hot stone and bake until browned and crisp, about 8 minutes.
  • Remove the crust from the oven and top with the mozzarella, tomatoes and basil leaves. Drizzle with the remaining 1 tablespoon olive oil and season with salt and pepper. Serve with the bean salad.

I was dying to make pizza with my new Pampered Chef "Large" Bar pan! So we tweaked the recipe they use for the demonstration and what we came up with... well, WOW! Soo cool! I didn't know if I wanted to just eat it or butter it up first! My husband is super picky about his pizza - he hates that the frozen ones never cook evenly enough. No more! He insists on making this at least once a week for dinner now!!!!

2 (235 g) packages pillsbury multi-grain crescent rolls
6 ounces spaghetti sauce (Ragu = 2 servings of veggies!)
1 cup light mozzarella cheese, shredded and divided
1 cup light cheddar cheese, shredded and divided
1 tomatoes, thinly sliced
1/2 bell pepper, chopped
1 cup raw mushrooms
10 ounces chicken, baked in lemon juice, diced
3 cups spinach, fried in a drop of extra virgin olive oil
1 teaspoon oregano
1 teaspoon basil
1 teaspoon parsley
1 garlic clove, minced

Steps:

  • Preheat oven to 375°F.
  • Break open and unroll the two crescent roll packages onto the 15 1/2" x 10 "bar pan so it is evenly covered. Try to avoid following the triangle shapes and perforations.
  • In a small bowl, combine the tomato sauce, garlic and spices. Spread evenly over the dough.
  • The rest is all about how you like your pizza! I love all the toppings to be between the cheese, so:.
  • Sprinkle half of the two cheeses evenly along the dough.
  • Spread the rest of the toppings out evenly along the dough as well.
  • Top with the remaining cheese.
  • My side of the pizza usually has black olives and a bit of feta on it; my husband usually has bacon on his side.
  • Bake for approximately 15 minutes, or until desired doneness.

4 pita bread rounds (without pockets)
1 tablespoon olive oil
1/4 teaspoon italian seasoning
1/4 cup grated parmesan cheese
8 ounces mozzarella cheese
2 large plum tomatoes
1/2 cup fresh basil, fresh, lightly packed
1/4 cup toasted walnuts
1 garlic clove, pressed
1/4 teaspoon salt
2 tablespoons light balsamic vinaigrette salad dressing
4 cups baby greens or 4 cups spinach leaves

Steps:

  • Preheat oven to 425°F.
  • Drizzle olive oil over pita rounds, and spread evenly.
  • Sprinkle with Italian seasoning.
  • Cover with Parmesan cheese.
  • Bake for 8-10 minutes, until edges are lightly browned and cheese is melted.
  • Prepare pesto sauce VERY finely chop the basil leaves and the walnuts.
  • Combine with garlic and salt.
  • When rounds are ready, turn them over, so that the cheese side is down, drizzle the back with dressing, spread evenly.
  • Cut the rounds into six wedges, total 24 wedges.
  • On 12 of the wedges, place some greens, 1 slice of Mozzarella cheese, pesto, and one slice of tomato. Top with undressed wedges, cheese side up.
  • Secure with sandwich picks if necessary, which it probably will be!
