Number Of Ingredients 15

1 3/4 cups (245g) all-purpose flour
1/4 cup (35g) cornstarch
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup (170g) unsalted butter, at room temperature
1 1/3 cups (260g) granulated sugar (or 1/3 cup brown sugar plus 1 cup granulated sugar)
1/4 cup (60 ml) canola or vegetable oil
3 large eggs
1/2 cup (120 ml) heavy cream (or milk)
1/2 cup (120 ml) dark rum
2 teaspoon vanilla extract
1 stick (115g) unsalted butter
1/4 cup (60 ml) water
3/4 cup (150g) granulated sugar
1/4 cup (60 ml) dark rum

Steps:

  • Adjust oven rack to middle position and heat oven to 350°F/180°C. Grease well a 12-cup (10-inch) bundt pan and set aside.
  • To make the cake: In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
  • In a standing mixer fitted with the paddle attachment, beat together butter, oil, and sugar for 5 minutes until light and fluffy. Occasionally scrape down the sides and bottom of the bowl. Add eggs, one at a time, beating well after each addition. Add heavy cream (or milk), rum, and vanilla, and beat until combined. On low speed, beat in the flour mixture and mix just until combined.
  • Scrape batter into prepared pan and smooth the top. Bake for 40-50 minutes or until a skewer inserted into the center of the cake comes out clean. If the top is browning too fast while baking, cover pan loosely with aluminum foil.
  • While the cake is in the oven, make the syrup: In a small saucepan, combine butter, water, and sugar. Cook on medium-low heat until sugar dissolves and syrup forms. Turn off heat and mix in rum. Set aside until the cake is ready.
  • When the cake is out of the oven pour about half of the syrup gently and slowly over the cake. Allow cake to cool for 10-15 minutes, then, run a knife gently around the edges of the cake, and remove cake from pan, carefully inverting it onto a plate. After inverting the cake, brush top and sides of the cake evenly with the rest of the syrup. Allow cake to cool to room temperature.
  • The cake is best served at room temperature. Store cake in an airtight container in the fridge for up to 5 days. Leftovers can be frozen for up to 2 months.

This little cake is packed full of a lot of Island taste, coconut, rum, pineapple and macadamia nuts, how can that combination be anything but good? All we need are the Island music and cool winds! Didn't allow for cooling or chilling time.

1 (18 1/2 ounce) package yellow cake mix
1 (3 3/4 ounce) package vanilla instant pudding mix
1 (15 ounce) Coco Lopez
1/2 cup bacardi white plus rum
2 tablespoons bacardi white plus rum
1/3 cup vegetable oil
4 eggs
1 (8 ounce) can crushed pineapple, well drained
2 -3 tablespoons crushed toasted macadamia nuts, to taste (optional)

Steps:

  • Preheat oven to 350ºF.
  • In large mixer bowl, combine cake mix, pudding mix, 1/2 cup of rum, oil, eggs, and 1/2 cup cream of coconut. Beat on medium speed 2 minutes.
  • Stir in pineapple and crushed nuts(to taste).
  • Bake in a 10" tube pan for 50-55 minutes. Cool slightly.
  • Remove from pan. With a table knife or skewer, poke holes about 1" apart in cake from top to almost the bottom. Combine the remaining cream of coconut and rum. Pour over cake.
  • Chill thoroughly.
  • Garnish with whipped cream, pineapple chunks, cherries and/or toasted coconut if desired.
  • Enjoy!

This cake is just what the title says it is---so good. You use a cake mix so it is fairly easy to make and most of the things you might have on hand. I use whatever cake mix I have.

1 1/4-1 1/3 cups water (see back of box for water amount)
1/3 cup vegetable oil
3 eggs
1 (20 ounce) can crushed pineapple
3 cups milk
1 (6 ounce) package instant vanilla pudding
1 teaspoon vanilla
1 (8 ounce) package cream cheese (softened)
12 ounces frozen whipped topping (thawed)
1 cup shredded coconut
1 cup chopped pecans or 1 cup walnuts

Steps:

  • CAKE:.
  • Prepare and bake cake according to directions on box for a 9x13 pan using the water, oil, and eggs in the boxed mix.
  • Let sit for about 5-10 minutes and then pierce the top of the cake with a fork.
  • TOPPING:.
  • Pour the undrained pineapple over the baked layer.
  • Mix the milk, pudding mix, and vanilla in a medium mixing bowl.
  • In another medium mixing bowl beat the cream cheese at high speed till light and fluffy.
  • Add the pudding mixture to this beating till smooth.
  • Spread over the prepared layers.
  • Top with whipped topping.
  • Sprinkle with the coconut and pecans.
  • Chill covered for several hours.

1 (13 ounce) package graham cracker crumbs
2 cups sugar
1 cup margarine, melted
4 eggs
1 cup milk
2 teaspoons baking powder
1 cup pecans, chopped
8 ounces coconut
1 (20 ounce) can crushed pineapple
8 ounces cream cheese, softened
1/2 cup margarine, softened
1 lb powdered sugar
1 teaspoon vanilla

Steps:

  • Combine all the cake ingredients except the pineapple (the first 8 ingredients).
  • Beat with mixer until well blended.
  • Pour into a 9 x 13 pan.
  • Bake for 45 minutes in a 350 degree fahrenheit oven.
  • Remove from oven. While cake is still hot pour pineapple over it and allow it to soak in throughly.
  • Let cake cool completely before frosting.
  • FOR FROSTING:.
  • Mix all ingredients together and beat until of spreading consistency.
  • Spread on cake.
  • Sprinkle with pecans.

This classic rum cake recipe, built around a yellow cake mix, is a favorite of mushers and snowmobilers passing through the village of Tanana, Alaska, in the wintertime. It's hard to mess up, comes together quickly, fills out a (prepared) Bundt pan reliably and can be made on a whim with ingredients from the pantry. It travels well; keeps, covered, for several days; and pairs nicely with coffee and cold weather.

Butter or vegetable oil, for greasing the pan
1 cup/120 grams chopped walnuts or pecans
1 (roughly 16-ounce/450-gram) package yellow cake mix
1 (3.4-ounce/100-gram) package vanilla instant pudding mix
4 large eggs
1/2 cup/120 milliliters cold water
1/2 cup/120 milliliters vegetable oil
1/2 cup/120 milliliters rum (dark or light), preferably Bacardi
1/2 cup (1 stick/115 grams) unsalted butter
1 cup/200 grams sugar
1/2 cup/120 milliliters rum (dark or light)
1/4 cup/60 milliliters water

Steps:

  • Heat oven to 350 degrees. Grease a 9-inch Bundt cake pan, scatter the nuts evenly into the bottom of the pan, and set aside.
  • In a large bowl, whisk together the cake mix, pudding mix, eggs, water, oil and rum. Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until a skewer inserted into the thickest part of the cake comes out with just a few crumbs attached.
  • While the cake bakes, make the glaze: In a small saucepan, combine the butter, sugar, rum and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat to a simmer and cook for 5 minutes, then remove from heat.
  • When the cake is done, remove from the oven and let cool 5 minutes, then invert onto a serving plate. Using a skewer or a fork, poke holes all over the top and sides of the cake, then brush the entire cake with the glaze, repeating until all the glaze is gone. Serve warm or at room temperature. Cake keeps (and improves, some say), wrapped and refrigerated, up to 3 days.

1 cup broken pecans pieces (may chop the pecans if you prefer)
1 box classic yellow cake mix with 'pudding in the mix' (reduced sugar)
1 box (standard size) Jell-O Vanilla Sugar Free Instant Pudding
3 large eggs
3/4 cup water
1/4 cup rum
1/3 cup canola oil
Icing:
1 stick butter
3/4 cup powdered artificial sweetener (Splenda recommended - artificial sweeteners with saccharin not recommended)
1/4 cup rum

Steps:

  • Preheat oven to 350 degrees F. Spray bundt cake pan or tube cake pan with non-stick cooking spray. Place pecan pieces in small baking pan & place in oven for five minutes (watch carefully).
  • While pecans are toasting, start mixing cake batter: Put cake mix, pudding mix, eggs, water, rum and oil into medium mixing bowl. Slowly stir together until all is well blended. Beat at medium speed with mixer for no more than two minutes (longer will result in a tough cake). Batter will be rather thick.
  • Place toasted pecans evenly around bottom of sprayed cake pan. Pour cake mix into cake pan (over the pecans). Using a cooking spoon or spatula, gently run over top of cake mix to make it an even thickness.
  • Place in preheated oven; middle of center rack. Bake for 40 minutes. During the last 15-20 minutes of baking, make the icing.
  • Icing: Place the butter in a small sauce pan; melt it slowly (low heat). When butter is melted, add the artificial sweetener, and stir well. When icing begins to bubble, slowly pour in the rum. Let all simmer together, stirring frequently, until the icing looks like it is starting to thicken. When it has reached the slightly thickened stage, turn heat off, but continue to stir frequently to keep blended.
  • Remove cake from oven and let sit on a cooling rack for about ten minutes. With cake still in the pan, use a toothpick to poke holes all over the cake. NOTE: At this point, strain the icing into a cup or bowl to remove any flakes or residue. Stir strained icing again, and immediately (using a basting tube) gently squeeze 1/2 of the icing over the bottom of cake, especially over the areas where you poked the holes. Turn the cake out onto a cake platter (or whatever the cake will sit on until it's all gone). Again, using a toothpick, poke holes over top of cake (as done on bottom). Stir remainder of icing and squeeze over top of cake with basting tube. Slice and serve.
