4 slices bacon
1 pound fresh green beans, trimmed and or two 9-ounce packages frozen cut or French-cut green beans
¼ cup chopped onion
1 tablespoon butter
⅛ teaspoon ground black pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, turning occasionally. Transfer bacon to paper towels to drain, reserving 1 tablespoon drippings in skillet. Crumble bacon; set aside.
  • Meanwhile, cook green beans, covered, in lightly salted boiling water for 5 minutes; drain. Place beans in a large bowl of ice water for 5 minutes. Drain well.
  • Add the partially cooked green beans, onion and butter to the reserved drippings in skillet. Cook and stir over medium-high heat about 5 minutes or until crisp-tender. Stir in reserved bacon and pepper before serving.

1 tablespoon extra-virgin olive oil, eyeball it
1 tablespoon butter
1 small onion, chopped
1 cup chicken broth
1 to 1 1/4 pounds trimmed green beans (see Cook's Note)

Steps:

  • To a medium pan over medium heat add extra-virgin olive oil and butter and onion. Saute onion 3 minutes, add broth and bring to a boil. Add beans, season with salt and cover pan and simmer 8 minutes, until tender.

3 teaspoons olive oil
1 teaspoon minced garlic
2 ½ cups fresh green beans, trimmed
1 tablespoon brown sugar
sea salt to taste
3 slices smoked bacon, cut into small strips, or to taste
4 tablespoons chicken broth, or more as needed

Steps:

  • Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
  • Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

1 pound fresh green beans, trimmed
1 pinch salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely diced
1 shallot, chopped
½ teaspoon garlic salt
½ teaspoon soy sauce
salt and ground black pepper to taste

Steps:

  • Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
  • Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

6 bacon strips, chopped
1 medium onion, chopped
2 tablespoons cider vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/2 pounds fresh green beans, trimmed
1 tablespoon sesame seeds, toasted

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Pour off all but 1 tablespoon drippings. Saute onion in drippings until tender. Stir in vinegar, salt and pepper., Meanwhile, place beans in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until crisp-tender, 4-7 minutes; drain., Place beans in a large bowl; toss with bacon and onion mixture. Sprinkle with sesame seeds.

This is my version but my ex-mother-in-law used to make Green Beans and Eggs. I thought it looked awful and was afraid to taste it...finally did and was surprised. My hubby (High School Sweetheart, current hubby, 2nd and last hubby! lol!) is very, very, very fussy and HE actually likes this for a veggie. He gave it 4 stars! (Surprise! He doesn't like veggies!) I like onions, hubby doesn't so I only use this small amount. If you like onion, maybe use more and bigger. It's nice for something different. I am only cooking for 2 now...thus the small amount.

1/2 slice thick bacon

2 tablespoons extra-virgin olive oil
4 to 6 slices bacon, chopped
1 large onion, chopped
3 pounds fresh green beans
2 quarts chicken stock or water
Kosher salt and freshly ground black pepper

Steps:

  • Heat a heavy bottomed pot over medium high heat. Add the olive oil, bacon, and onions and cook until the onion is soft, about 5 to 10 minutes. Stir in the green beans and chicken stock; season with salt and pepper. Reduce the heat to low, and cook the green beans until they are soft but not mushy, about 30 to 45 minutes. Taste and adjust seasoning.

1 pound fresh green beans, trimmed
1 cup water
⅛ teaspoon salt
1 pinch ground black pepper

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until the fat begins to render. Stir in onions and garlic; let cook for 1 minute. Stir in beans and water. Let the beans cook until the water has evaporated and the beans are tender. If the beans are not tender once the water has evaporated, add a small amount more water and let them cook until tender. Season with salt and pepper (to taste) and serve.

The only thing is, all ingredients are "to taste" I guess I have to give some kind of measurement as guidelines though, so I'll give it my best shot! ;-)

3 cups frozen green beans
3 slices bacon, fried and crumbled
1 small onion, diced

Steps:

  • Take scissors (I have a pair I use for food only) and cut up your bacon into a skillet.
  • Start frying over medium heat until you get some of the bacon grease"oozing" out.
  • Add diced onion.
  • Continue to cook until bacon is done.
  • Cook your green beans according to package directions.
  • When done, drain them and pour into a bowl.
  • Dump the fried bacon and onion (and grease) over the green beans.
  • Toss to coat.
  • Serve!
  • *I know, this sounds greasy, but when spread out over a good sized serving of green beans, it's really not that bad.
  • Also, I have used turkey bacon before and it works ok-- then you don't have the grease though, to fry up the onions--.
