HONEY SYRUP

Honey Syrup image

This is a great syrup for pouring over gingerbread, but it is wonderful on almost anything. For best flavor, poke holes in the cake with a fork before pouring syrup.

PAM'S HONEY BUTTER GLAZER SAUCE

Pam's Honey Butter Glazer Sauce image

I made up this recipe for one of our members who was looking to reproduce a dessert her son got at a restaurant. See this link for original post) http://s2.justapinchassets.com/images/title/1/GroupTopics.20120518111647.png They have trademarked the name "Glacier Sauce", and I do not know if this is anything like theirs, but...

Provided by Pam Ellingson

Categories     Other Sauces

Time 15m

Number Of Ingredients 8

1/3 c water, cold
1/3 c honey
1 1/2 Tbsp cornstarch, dissolved in another 3 tbsp cold water
2 tsp orange juice, fresh
2 tsp lemon juice, fresh
1 pinch salt
1/8 tsp vanilla extract
1/2 c cold butter, cut into small cubes

Steps:

  • 1. Mix cold water and honey in a 3 to 4c microwaveable bowl. Microwave for two minutes, stirring after the first minute and again every 15 to 20 seconds until liquid is bubbling at the edges. (When you stir, it may foam up a bit, but it will return to liquid quickly with stirring.) Be careful that you do not let it go too long between stirring or it may bubble over when stirred.
  • 2. Mix the cornstarch with the extra water in a small cup. Remove the bowl from the microwave and whisk in the cornstarch mixture. This will look slightly cloudy. Replace the mixture in the microwave and cook again on high for two or three - 15 second intervals, stirring again between each. The mixture should be clear and translucent at this point. It should be thickened but not "stiff". More like a glaze.
  • 3. Remove the bowl from the microwave and whisk in orange juice, lemon juice, salt and vanilla. If these liquids thin it down too much, replace the mixture in the microwave and cook again on high for two or three - 15 second intervals, stirring again between each. (I did not have to do this, but if you want a thicker glaze, you might need to do it)
  • 4. Whisk in cubed cold butter about a tablespoon at a time, whisking until butter has melted before adding more. Continue to whisk in butter cubes until all are used and sauce is somewhat cool. Store in fridge in a clean bottle or jar, or use immediately.
  • 5. I have not tried this glaze on anything but some fresh fruit, but I think it would make an excellent pancake syrup, or plating sauce for a dessert or glaze for cakes. I would be tempted to add some more lemon and some zest and use it for glazing BBQ chicken. (I asked my husband to try a spoonful and as he tasted it, I said "How does this taste?" and before I finished the sentence, he answered "Good!")
  • 6. I forgot to add: All microwaves are not created equal, so you may need to cook more or less depending on the wattage of your microwave. Just do it in small increments to get it to the right consistency. I think you can tell about how thick to make it from the pics I posted. The finished sauce was thinner than a stirred yogurt, but not "drippy". Hope this helps.

HONEY SYRUP DATE CAKE

Honey Syrup Date Cake image

For Rosh Hashanah (the Jewish New Year) we traditionally prepare honey cakes. I mostly find them either too sweet or too dry. This is a moist cake that improves with age. Prepare it a day or two before serving.

Categories     Desserts     Specialty Dessert Recipes     Liqueur Dessert Recipes     Orange Liqueur

Time 2h15m

Yield 8

Number Of Ingredients 20

1 ½ cups unbleached all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons ground ginger
1 tablespoon grated orange zest
½ cup dates, pitted and chopped
½ cup chopped dried apricots
½ cup raisins
½ cup chopped walnuts
1 tablespoon cornmeal
2 eggs
⅓ cup vegetable oil
⅓ cup orange juice
½ cup molasses
½ cup honey
⅓ cup orange juice
1 tablespoon butter
1 tablespoon orange-flavored liqueur, such as Cointreau ®

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 9x5 inch loaf pan.
  • Combine flour, baking powder, baking soda, salt, cinnamon, ginger, and orange zest in a bowl. Set aside. Combine dates, apricots, raisins, walnuts, and cornmeal in a separate bowl. Set aside. Beat eggs, vegetable oil, 1/3 cup of orange juice, and molasses in a large bowl. Gradually pour the flour mixture into the egg mixture, mixing until just incorporated. Fold in the dried fruit mixture; mixing just enough to evenly combine. Pour the batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  • To prepare the syrup: Mix honey, 1/3 cup of orange juice, and butter in a microwave-safe glass or ceramic bowl for 1 minute. Stir in the orange-flavored liqueur. Poke holes throughout the cake then pour syrup over the cake.

Time 15m

Number Of Ingredients 11

1 3/4 c all-purpose flour
2 tsp sugar
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 c buttermilk
2 large eggs
1/4 c butter, melted
BUTTERED HONEY SYRUP
1/3 c butter
1/2 c honey

Steps:

  • 1. Combine flour and next four ingredients in large bowl. Whisk together buttermilk and eggs; gradually add flour mixture. Gently stir in melted butter. (Batter will be lumpy). Pour about 1/4 cup batter for each pancake onto a hot buttered griddle or large skillet. Cook pancakes 3 to 4 minutes or until tops are covered with bubbles and edges look dry and cooked. Turn and cook 3 to 4 minutes or until golden brown. Place pancakes in a single layer on a baking sheet, and keep warm in a 200 degree oven up to 30 minutes. Serve with Buttered Honey Syrup.
  • 2. Melt 1/3 cup butter in a small saucepan over medium-low heat. Stir in 1/2 cup honey, and cook 1 minute or until warm. **Note: Buttered Honey Syrup cannot be made ahead of time. The heated honey will crystallize when cooled and will not melt if reheated.

HONEY BUTTER SYRUP (GOES GREAT ON PANCAKES!)

Honey Butter Syrup (Goes Great on Pancakes!) image

This is my favorite topping for pancakes. I don't really care for maple syrup, so I found a recipe and made some slight variations. You can add more/less honey according to your taste or substitute molasses or maple syrup if you like that better.
