ITALIAN SAUSAGE MEATBALLS

Italian Sausage Meatballs image

I developed this recipe as I was reviewing many other meatball recipes. The spices in the sweet Italian sausage give it the extra kick. These meatballs can be frozen for use later. Or used immediately in your favorite sauce. These are also a great appetizer with dipping sauce.

Provided by Steve_La Mirada

Categories     Pork

Time 27m

Yield 60 balls

Number Of Ingredients 8

2 lbs sweet Italian sausage (casing removed)
1 tablespoon italian seasoning
1 teaspoon dried parsley
1 tablespoon minced garlic
1 1/2 cups Italian seasoned breadcrumbs
2 eggs
1/3 cup marsala wine
olive oil (for frying)

Steps:

  • Put all ingredients in a large mixing bowl.
  • Mix together throughly.
  • Using the palm of your hands. Roll into a ball shape. About one inch diameter.
  • Place oil in a frying pan over medium heat.
  • Place meatballs in hot oils.
  • Move them around continuously to ensure that they do not burn, and are throughly cooked.
  • Cook for 5 to 7 minutes (golden brown).
  • Remove from oil and sit on paper towel to absorb any oil.
  • Add to your favorite sauce.

  • Get out a large rimmed cookie sheet, roasting pan, whatever you want that'll fit 25 1.5" meatballs. No need to grease it (I had no issues with the meatballs sticking to my stainless steel roasting tray as a lot of liquid is released while cooking).
  • Cook the sweet potatoes. You can use whatever your preferred method is. I peeled and cut mine into about 3/4" slices (if your sweet potato is huge, you might want to cut it in half lengthwise first), steamed them in my Instant Pot for 5 minutes, did a quick release and let them cool for a few minutes. You can also just peel and cut them into chunks and boil until tender.
  • While they're cooking, add the garlic powder, onion powder, salt and pepper to a large mixing bowl (if you want to use your stand mixer to make these, that's the quickest / least messy way). Mix them and then add in (but no need to stir in) the coconut oil. Adding still warm sweet potatoes will melt the coconut oil, making it easier to combine.

  • Blend all ingredients in a high speed blender, then transfer to a saucepan and bring to a boil, reduce heat and allow to simmer for as long as you want for desired thickness and flavor, mine simmered for about 30 minutes. Reserve about 1/2 of the sauce for brushing on meatballs and save the other half to serve with as a dip.
  • While sauce simmers, prepare meatballs. Preheat your oven to 350 degrees and line a large baking sheet with aluminum foil. You can top the aluminum with a wire rack if desired, this keeps the rendered fat away from the meatballs.

  • While the meatballs are baking, make the sauce. In a large saucepan, combine ghee, and cassava flour over medium heat. It should take about 3 minutes for the sauce to thicken. Add salt and pepper to taste.
