POACHED OYSTERS IN FENNEL-SAFFRON SOUP
Serve this with plenty of crusty bread.

Steps:
- Melt butter in heavy medium skillet over medium heat. Add fennel and sauté until golden, about 10 minutes. Add 1 cup water; cover and cook until fennel is very tender, about 20 minutes. Puree fennel mixture in processor. Set aside.
- Heat oil in heavy large saucepan over medium heat. Add garlic and saffron; sauté 1 minute. Add clam juice, cream, and Pernod and bring to simmer. Add fennel puree and bring to simmer. (Can be made 1 day ahead. Refrigerate uncovered until cold. Cover and keep refrigerated. Simmer before continuing.) Add oysters with their liquor to cream mixture and stir to heat through. Ladle soup into bowls.
ELEGANT OYSTER SOUP
Delicious. Takes a little extra time, but it's worth the effort. Serve hot with green salad and crusty French bread

Steps:
- In a large pot, saute chopped carrot, onion, celery and fresh mushrooms in 2 tablespoons of butter for 5 minutes or until the onions are transparent.
- In another large pot, melt 1/2 cup butter and stir in the flour. Cook for 5 minutes.
- Whisk in the chicken broth to the flour mixture. Add the sauteed vegetables, artichokes hearts, bay leaf, salt, cayenne pepper, thyme, oregano and sage. Simmer for 30 minutes over medium heat.
- Whisk in cream and add oysters; bring to a simmer, but do not boil.

- Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
- Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
- Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
- Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
- Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.

SAFFRON SOUP

- Melt butter in a heavy-bottom soup kettle. Add onions, garlic and saffron and cook over medium-low heat, stirring frequently, until onions are softened. Do not let onions brown.
- Bring chicken stock to a boil. Add bread crumbs to onions and stir to mix thoroughly. Add chicken stock and stir again. Bring soup to a boil and immediately lower heat and simmer, covered, for 20 minutes.
- Puree soup in a blender, food processor or fine-mesh food mill. Strain soup, discarding solids. Return to rinsed-out soup kettle. Add cream and lemon juice. Mix well and taste, adding salt and pepper if desired. May be served immediately, or chilled and served as a summer soup.

- Place oysters in a strainer set over a large bowl to catch liquid.
- Combine potatoes and broth in a 5-quart casserole. Cover tightly with microwave plastic wrap. Cook at 100 percent power in a 650- to 700-watt oven for 15 minutes or until potatoes are tender.
- Prick plastic to release steam. Remove from oven and uncover. Add oyster liquid, cream and saffron. Cover tightly with microwave plastic wrap and cook for 7 minutes.
- Pick plastic to release steam. Remove from oven and uncover. Cut each oyster in half with a kitchen scissors. Add to soup with scallions and salt. Cook, uncovered, for 1 minute.
- Remove from oven and let stand for several minutes. Serve hot

- Soak the saffron in 2 tbsp hot water for 10 minutes. Melt the butter in a large saucepan. Add the garlic (and its skin), onion, celery and bay leaf to the pan, stir to coat in the butter, then cook very gently, covered, for about 15-20 minutes. The garlic and onions should be very soft and tender but not at all browned, so keep the heat low.
- Uncover and add the sherry, raise the heat and bring to the boil then add the stock, saffron and its liquid, 1 tsp salt and a good grinding of fresh black pepper. Bring to the boil, stir in the rice and simmer gently for 15 minutes or until the rice is just cooked. Fish the bay leaf out and discard.
- Liquidise the soup then sieve back into the pan (this gets rid of any bits of skin). Pour in the cream and reheat until hot. Adjust the seasoning adding a little lemon juice to taste if liked and thin with a splash of milk if too thick. Serve sprinkled with croûtons.

This is a rich and flavorful, easy to prepare soup. The longer you cook the bouillon, the thicker the broth will become; you can choose the exact thickness you want before you proceed with the oysters.

- Open the oysters over a bowl to collect all the juice. Put the juice in a one-pint measuring jug. Add to this the 1/2 cup dry white wine, then fill to the top with water to make a total of one pint.
- Pour this into a wide pot, bring to the boil. Add the bouillon. Simmer around 30 minutes over low heat.
- While it's cooking, heat the butter in a medium pot, add the frozen matchstick vegetables (typically carrot, green pepper, onion or leek). Cook this about 5 minutes. Salt and pepper the vegetables.
- After the soup broth has cooked 30 minutes, add the matchstick vegetables. Add the cream and the saffron. Blend this all, at a low simmer, and taste for seasoning.
- Add the 12 oysters.
- Cook only 30 seconds to 1 minute.
- Serve.

- Rinse the mussels in cold water, remove beards, then wash again. Discard any that won't close when tapped on a work surface.

- With a slotted spoon, remove the oysters from their liquor. Strain the liquor through a sieve lined with cheesecloth. In a medium saucepan, melt 4 tablespoons of the butter over moderate heat. Add the fennel and cook, stirring occasionally, until the fennel is tender, about 5 minutes.
- Reduce the heat to low, add the oysters, the reserved oyster liquor and the Worcestershire sauce and bring just to a simmer, stirring constantly. - In a large saucepan, combine 1/2 cup of the wine with the water and bring to a boil over high heat. Using tongs, add the oysters to the saucepan in a single layer, cover and steam until they start to open, about 3 minutes. Using tongs, transfer the oysters to a plate as they open. Reserve the cooking liquid; you should have about 1/2 cup. Remove the oysters from their shells, put them in a bowl and cover with a damp paper towel. Reserve 12 concave shells.
- Melt 1 tablespoon of the butter in a medium saucepan. Add the leeks, crumble in the saffron and stir. Cook over low heat until the leeks soften, about 8 minutes. Slowly add the reserved oyster liquid, stopping before you reach the grit at the bottom, and cook over moderate heat until the liquid is almost evaporated, about 3 minutes. Add the heavy cream and the remaining 2 tablespoons of white wine and simmer until the sauce is thickened, about 3 minutes. Season with salt and pepper.
- Preheat the broiler. Arrange the 12 oyster shells on a rimmed baking sheet or in a shallow baking dish. Using a fork, divide the saut#233;ed leeks among the shells. Set an oyster on the leeks in each shell and stir any accumulated oyster juices into the sauce.
- Melt the remaining 1 tablespoon of butter. Whisk the egg yolk and the melted butter into the cream sauce and spoon the sauce over the oysters. Broil as close to the heat as possible for about 45 seconds, just until the sauce is bubbling and the oysters are lightly glazed. Serve at once.
