I have been "cooking" since I was 3 years old. Now I cook for my two teenage sons and bake decorated cakes for family and friends. I came up with this for an online contest. It was a hoot! -Tammy Baker, Bowling Green, Kentucky

Yield 21 cupcakes and 6 mini cupcakes.

Number Of Ingredients 15

1 package chocolate fudge cake mix (regular size)
1 cup water
1/2 cup canola oil
1/4 cup brewed coffee, room temperature
3 large eggs
1 cup miniature semisweet chocolate chips
FROSTING AND DECORATIONS:
1 can (16 ounces) chocolate frosting, divided
1 teaspoon black paste food coloring
12 mini Oreo cookies
Brown and yellow milk chocolate M&M's
3-3/4 cups confectioners' sugar
1/2 cup butter, softened
1/2 cup shortening
1/4 to 1/3 cup water

Steps:

  • Preheat oven to 350°. Line 21 muffin cups and 6 mini-muffin cups with paper liners., In a large bowl, combine cake mix, water, oil, coffee and eggs; beat on low speed 30 seconds. Beat on medium 2 minutes. Stir in chocolate chips. Fill prepared cups two-thirds full. Bake 18-22 minutes for regular-sized cupcakes and 10-12 minutes for mini-cupcakes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely., Place 1-1/3 cups chocolate frosting in a small bowl. Tint black with food coloring. Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert #125 or other large petal or flat pastry tip. Fill bag with black frosting and set aside., Frost mini cupcakes with some of the remaining chocolate frosting. Separate Oreo cookies, leaving cream filling on one side of the cookies. Place filling sides of cookies on frosted cupcakes for eyes, cream side up; attach brown M&M's with chocolate frosting., Trim plain sides of cookies into triangles for ears; place above eyes. Insert #16 or other star pastry tip into another pastry bag. Fill bag with remaining chocolate frosting. Pipe feathers on ears and around eyes. Place yellow M&M's between eyes for beaks., In a large bowl, beat confectioners' sugar, butter, shortening and enough water to reach spreading consistency; frost large cupcakes. Arrange cupcakes side by side on a covered cake board., Pipe black frosting across tops of cupcakes for tree trunk and branches. Place owl cupcakes on branches.

Number Of Ingredients 13

125g slightly salted butter , softened
125g caster sugar
1 egg , lightly beaten
1 tsp vanilla extract
250g plain flour
100g packet of whole blanched almond
100g packet of flaked almond , toasted
126g packet of giant white chocolate button
20g packet standard-sized white chocolate button
50g dark chocolate chip
gold edible glitter (optional)
icing sugar , for dusting
fine string , for hanging the biscuits

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Cream together the butter and sugar, then gradually beat in the egg and vanilla extract. Sift and stir in the flour and mix to a fairly soft dough. Turn onto a lightly floured surface and knead gently. Cover or wrap the dough and chill for at least two hours.
  • Next roll the dough out on a lightly floured surface to around 0.5cm thick. Cut into oval shapes with a cookie cutter or by cutting round a paper template. You can make mini owl biscuits by using a smaller cutter or template.
  • Transfer the biscuits to a baking tray lined with baking parchment. Put different sized biscuits on separate trays. Place the whole almonds into the dough to create the owls' eyebrows and beaks. If creating decorations for the tree, make a hole near the top of the biscuits using the end of a paintbrush. Bake in the oven for 8 - 14 minutes, depending on the size of the biscuits, until the edges turn lightly golden in colour. Once out of the oven, leave the biscuits on the baking tray to cool.
  • To decorate, set aside enough white chocolate buttons to create the owls' eyes - use giant or standard-sized buttons depending on the size of the owls - the biggest you can fit are best to give a truly owl-like expression. Melt the remainder in the microwave or in a bowl over barely simmering water.
  • Using a small tipped paintbrush, carefully paint and stick down the decorations. Stick on the white chocolate buttons, then the dark chocolate chips on top to make the eyes. Neatly paint more melted chocolate over each owl's chest, pressing on the flaked almonds. You can layer the almonds with extra white chocolate.
  • If you find some of the almond eyebrows and beaks have come loose or you are planning to hang the owls on the tree, use some of the melted chocolate to stick them in place. Leave to set.
  • Thread pretty string or fine ribbon into Christmas decorations so you can hang them. Dust with icing sugar and gold edible glitter if using.
