BREAKFAST BURRITOS (FREEZER FRIENDLY)



Breakfast Burritos (Freezer Friendly) image

A great way to fuel the entire family first thing in the morning!

1 pound breakfast sausage (spicy or mild)
3 cups hash brown potatoes (frozen, diced )
2 tablespoons bell peppers (chopped, optional)
10 large eggs
¼ cup milk
salt & black pepper (to taste)
1 cup fresh salsa (Pico de Gallo is best)
2 cups sharp cheddar cheese (shredded)
8 12" flour tortillas

Steps:

  • Heat a 12" skillet over medium-high heat and add breakfast sausage, crumbling while cooking. Once browned, spoon onto a paper towel-lined plate leaving about 2 tablespoons of fat in the pan.
  • Add frozen hash browns (and bell peppers if using) to the pan and cook for about 10 minutes or until fully cooked and lightly browned.
  • In a small bowl combine eggs, milk and salt & black to taste. Whisk until fully combined.
  • Remove hash browns from the pan and set aside. Add 1 teaspoon of oil to the pan if needed and reduce heat to medium low.
  • Add eggs and cook until just about set, they will continue cooking as they cool.
  • Arrange 8 pieces of foil with a flour tortilla in the center of each. Divide hash brown mixture, eggs, cheese and salsa over tortillas.
  • Enjoy immediately or wrap the burritos in the foil and store it in a plastic zip-top bag in the freezer.

1 red bell pepper, chopped

1 cup chopped kale, stems removed

⅓ cup crumbled feta
¼ cup chopped pepperoncini peppers

Steps:

  • Heat 1/2 the oil in a nonstick pan over medium high heat. Add bell pepper and onion; cook, stirring frequently, until pepper starts to brown, about 5 minutes. Add remaining oil. Stir kale, harissa, and garlic into the hot oil until well combined. Reduce heat to medium; splash in 1 to 2 tablespoons of water if needed.
  • Gradually stir eggs into the kale mixture. Cook, stirring frequently, until nearly set, about 2 minutes. Mix in bacon, feta, and pepperoncini. Heat through. Transfer to a bowl or plate.

  • In a large skillet, cook sausage over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain., In a greased 4- or 5-qt. slow cooker, layer potatoes, sausage and cheese. 1-1/2 cups frozen cubed hash brown potatoes
1/4 cup diced onion
1/4 cup diced green or red pepper
4 large eggs, lightly beaten
12 flour tortillas (8 inches), warmed

1 lb bulk pork sausage
2 green onions, chopped
8 eggs
1 tablespoon butter
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
1 cup shredded Cheddar cheese (4 oz)
Old El Paso™ Thick 'n Chunky salsa
Sour cream

Steps:

  • In 10-inch skillet, cook pork sausage over medium-high heat until no longer pink; drain. Stir in green onions. Remove from skillet; set aside.
  • In large bowl, beat eggs until well blended. Wipe skillet clean with paper towels. In same skillet, melt butter. Add eggs; cook, stirring frequently, until scrambled and set. Add sausage and onions; mix gently.
  • Heat tortillas as directed on package. Spoon sausage evenly onto each tortilla. Sprinkle each with 2 tablespoons cheese. Fold in sides of each tortilla; roll up to make burritos. Place in freezer container with waxed paper between layers. Freeze 8 hours or overnight.
  • Night before use, place burritos in refrigerator to thaw. Next morning, heat oven to 350°F. Wrap each burrito in foil; place on cookie sheet. Bake 10 to 15 minutes or until hot. Serve with salsa and sour cream.

We freeze them on a sheet pan so they are solid before storing in a sealed container. It works best to pull them out of the freezer the night before to thaw in the fridge overnight. My kids love the raw tortillas that can be purchased at Costco. They are also best if you have time to crisp up the warmed burrito in a pan.

14 ounces tofu (preferably sprouted organic)
1 1/2 cups potatoes, cooked and diced
1 cup kale, finely chopped (optional)
1/4 cup kalamata olives or 1/4 cup black olives, chopped
2 tablespoons lemon juice
1/2 teaspoon dried marjoram or 1/2 teaspoon oregano
2 tablespoons fresh basil, minced (or 2 t dry basil)
1/4 teaspoon ground turmeric
1/4 teaspoon salt
1 tablespoon oil
2/3 cup red pepper, diced (roasted or fresh)
2 garlic cloves, minced (or 1 t garlic powder)
1/4 teaspoon fresh ground black pepper (or to taste)
8 -10 tortillas
1 dash hot pepper sauce (optional) or 1 dash crushed red pepper flakes (optional)

Steps:

  • The night before, crumble the tofu into a mixing bowl.
  • Add all the ingredients except the oil and tortillas.
  • Mix well with your hands.
  • Cover and leave in the fridge overnight. (You can also cook it up immediately).
  • In the morning, heat the oil in a pan. Cook the tofu for 5-7 minutes until very warm and slightly browned.
  • Fill the tortillas, wrap and eat.
  • Optionally, serve on toast or a bagel.

A delightful breakfast, these burritos filled with soft scrambled eggs, scallion-flecked refried beans and buttery avocado slices are also great any time of the day. Cilantro adds freshness, and a few drops of your favorite hot sauce will deliver a nice zing. The nontraditional open-ended rolling technique used here will tightly encase the filling in the smaller-sized tortillas while ensuring the optimal tortilla-to-stuffing ratio. To seal completely, wrap each tortilla in a strip of foil and twist both ends. For convenience, the little wraps can be made ahead of time, stored in the refrigerator or freezer and reheated in an oven.

8 medium (soft taco-sized) flour tortillas
5 ounces Monterey Jack cheese, coarsely grated (1 1/4 cups)
2 tablespoons neutral oil, such as grapeseed or canola
2 scallions, thinly sliced
1/2 teaspoon ground cumin
1 cup refried black beans (from a 16-ounce can)
6 large eggs, beaten
Kosher salt
Hot sauce, for drizzling (optional)
1 small ripe avocado, pitted, peeled and sliced
1/4 cup fresh cilantro leaves

Steps:

  • Heat broiler to high and line two sheet pans with foil.
  • Place the tortillas on the sheet pans. Sprinkle half of the cheese over the tortillas. Broil, one pan at a time, until the cheese is just beginning to melt, about 20 seconds.
  • In a medium nonstick skillet, heat 1 tablespoon oil over medium. Add the scallions and cumin and cook, stirring, until fragrant, about 1 minute. Add the refried beans, stir to combine and cook until the beans are warmed through, about 2 minutes. Divide the beans among the tortillas, spooning in even lines down the centers.
  • Wipe out the skillet and set over to medium-low heat. Pour in the remaining 1 tablespoon oil, add the whisked eggs and season lightly with salt. Cook, stirring occasionally, until the eggs are just set, about 3 minutes. Divide the eggs evenly among the tortillas, in lines over the beans. Drizzle on hot sauce, if using.
  • Sprinkle the remaining cheese over the eggs and top with avocado and cilantro. To roll, fold one side over the filling to enclose it, then tightly roll away from you, leaving the ends open. Serve immediately, or wrap in foil and refrigerate for up to 24 hours. Reheat in a 400-degree oven or toaster oven until warm, about 8 minutes.
