I love this recipe because it is really easy to fix the night before when you are having company the next morning or maybe taking it to work or something. This recipe came from the Telephone Pioneers Cookbook "Calling all Cooks."

6 slices bread, dried or toasted and cubed
1 lb sausage
1 1/2 cups shredded sharp cheddar cheese
6 eggs
2 cups milk
1 teaspoon dry mustard
salt and pepper

Steps:

  • Sprinkle bread cubes into greased 7X12 inch baking dish.
  • Cook sausage and sprinkle along with cheese over the bread cubes.
  • Beat eggs in mixer bowl.
  • Add milk, dry mustard, salt and pepper; mix well.
  • Pour over layers.
  • Chill, covered overnight.
  • Bake uncovered at 350 degrees for 40 to 45 minutes or until set and golden brown.
  • Yield: 8 servings.

This Cheesy Hashbrown Breakfast Casserole is everything you need on Christmas morning! (Or anytime you have guests for breakfast!) Frozen hashbrowns are baked til crispy, then topped with eggs, cheese, and black forest ham. It's an overnight recipe, so you have more time for stockings in the morning! Make ahead breakfasts are always a win at the holidays.

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

12 slices bread (such as challah, brioche or any egg bread, preferably day old bread)
1 tablespoon olive oil
1 large onion (chopped)
1 pound Italian sausage (casings removed)
1 teaspoon dry mustard
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 medium red bell pepper (finely chopped)
3 green onions (chopped)
2 cups cheddar cheese (shredded)
8 large eggs
2 cups milk

Steps:

  • Preheat oven: To 300 F degrees.
  • Prepare bread: Cut the bread into cubes and place them onto a baking sheet. Place the bread into the oven and bake for 10 minutes, just enough to dry the bread out but not toast it. Remove from the oven and set aside.
  • Prepare sausage: In a large skillet, heat the olive oil over medium heat. Add the onion and sausage and cook until onion has softened and sausage is cooked through. Use a wooden spoon to break up the sausage as it cooks. Finally, season with salt and pepper and dry mustard.
  • Build casserole: Add half the bread cubes to a 9 x 13 inch casserole dish and top with half of the cooked onions and sausage. Next, add half the chopped bell pepper, chopped green onions, and 1 cup of shredded cheese. Repeat layers with remaining bread, onion, sausage, bell peppers, green onions, and cheese.
  • Prepare the eggs: In a bowl whisk together the eggs and milk and pour over the casserole evenly. Finally, cover the casserole dish with aluminum foil and put in the fridge overnight.
  • Bake and serve: The next morning, preheat the oven to 350 °F and remove the foil from the casserole dish. Place into the oven and bake for 50 to 55 minutes. You'll know the casserole is done if you insert a knife in the centre and if it comes clean, it's done. Serve hot!

2 pounds bacon, cut into 1/2-inch pieces
1 pound breakfast sausage, casings removed, broken up
Nonstick cooking spray
One 2-pound bag frozen shredded or diced hash brown potatoes (not patties)
Two 10-ounce cans tomatoes and chiles, such as Ro-Tel
2 cups (8 ounces) shredded pepper Jack cheese
1 medium red onion, finely chopped
2 cups (8 ounces) shredded whole-milk mozzarella
12 large eggs, lightly beaten
1 cup milk
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
Chopped cilantro, hot sauce and lime wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F. Spread the bacon and sausage onto a rimmed baking sheet and bake, tossing halfway through with a flat metal spatula, until their fat renders and both are golden brown, 35 to 40 minutes. Using a slotted spoon, transfer the meat to paper towels to drain and discard their fat.
  • Coat the insert of a 6-quart slow cooker with cooking spray. Layer half the hash brown potatoes with half the bacon and sausage. Place the canned tomatoes and chiles in a sieve and press as much liquid out of them as possible; discard the liquid. Transfer the tomatoes and chiles to a bowl and toss with the pepper Jack cheese, red onion and 1 cup of the mozzarella. Layer half the mixture over the meats, then repeat the layering with the remaining potatoes, bacon and sausage and cheese and vegetable mixture.
  • Whisk the eggs, milk, chili powder, cumin, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl, then pour over the casserole mixture. Sprinkle the top with the remaining 1 cup mozzarella, then cover and cook on low until the eggs are set and have become a custard, about 7 hours. Turn off the heat, uncover and let rest for about 10 minutes. Sprinkle with cilantro and serve with hot sauce and lime wedges.

12 slices crispy bacon (crumbled (or 1 cup diced ham))
3 green onions (sliced)
½ red bell pepper (finely diced)
4 cups grated cheese (cheddar works well)
6 eggs
3 cups milk
½ teaspoon each dry mustard (salt & black pepper)

Steps:

  • Cube bread and leave out overnight or place in the oven at 300°F for about 10 minutes to dry slightly. (Do not brown or toast it).
  • Combine eggs, milk, & seasonings.
  • Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of the bacon, green onions, red peppers and cheese. Repeat layers one more time.

1 T. butter
1 white onion (diced)
1 green pepper (chopped)
1 red pepper (chopped)
30 oz . package frozen hash browns (thawed)
1 tsp . salt

12 large eggs
1 1/2 c . milk
1 T. chipotle hot sauce
2 c . shredded cheddar cheese

Steps:

  • Preheat oven to 400 Line a large rimmed sheet pan with parchment paper.
  • Lay bacon on lined pan so that it's close but isn't touching.
  • Bake for about 10 minutes or until tender-crisp. You don't want it to be crisp because it's going to bake longer when the casserole cooks.
  • Let bacon cool on baking sheet.
  • Remove to a paper towel-lined plate to absorb any extra grease.
  • To make the casserole, heat butter in a large skillet.
  • Add diced onion and peppers.
  • Cook until onion is translucent and peppers have softened.
  • Grease a deep 9x13-inch baking dish.
  • Layer hashbrowns and cooked veggies.
  • Season with salt and pepper.
  • Crumble cooked bacon over the top of the veggies.
  • Top with 1 cup cheese.
  • In a large bowl, whisk together eggs, milk, and hot sauce.
  • Pour over hash brown mixture.
  • Top with remaining cup of cheddar cheese.
  • Cover pan with aluminum foil, and place in the fridge overnight.
  • In the morning, get casserole out of the fridge about 30 minutes before you want to bake it.
  • Preheat oven to 400 F.
  • Bake casserole, covered, for about 45 minutes.
  • Uncover, and continue cooking for about 15 minutes longer, or until casserole is set and has baked through.
  • I like to serve this with additional chipotle hot sauce or salsa.
