NO-YEAST WHOLE WHEAT ZA'ATAR BREAD
This simple whole wheat bread requires no yeast or rising time, so you can have a freshly baked loaf in practically no time at all! The combination of whole wheat and bread flour imparts subtle nuttiness and extra gluten, resulting in a baked loaf that's both chewy and airy. The generous addition of buttermilk also tenderizes the bread without any detectable tang. Finish the dough off with a decent sprinkle of za'atar and white sesame seeds for a perfectly crisp and flavorful crust.

- Preheat an oven to 375 degrees F. Line a 9-inch round cake pan with a large sheet of parchment, pressing it into the edges of the pan and leaving an overhang on 2 sides (the extra parchment will help you unmold the loaf later).
- Whisk the whole wheat flour, bread flour, sugar, za'atar, lemon zest, salt, baking soda and baking powder together in a large bowl. Whisk the buttermilk, melted butter and egg together in a separate bowl or liquid measuring cup until combined. Make a well in the center of the dry ingredients and pour the buttermilk mixture into the center. Use a wooden spoon or rubber spatula to stir the mixture until it starts to come together in a shaggy mass.
- Lightly dust a work surface with flour. Turn the dough mixture out onto the floured surface and knead a few times to bring it together. Shape it into a domed disk that's about 7-inches in diameter. Place the dough into the prepared pan and cut a cross about 1/2 inch deep into the center of the dough using a sharp knife. Brush the top and sides with more buttermilk, then sprinkle with a few good pinches of za'atar and the sesame seeds.
- Bake until the top is puffed and lightly browned and a toothpick inserted in the center comes out clean, about 1 hour. Remove from the oven and use the parchment overhang to lift the bread from the pan. Place on a wire rack to cool completely.
YEAST FREE WHOLEMEAL BREAD
This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

- Pre-heat oven to 200 deg.celsius (392 deg. fahrenheit).
- Combine all dry ingredients then mix butter through well with a fork.
- Add milk (and sweetener if it is a liquid) mix until well combined.
- Put mixture into a greased loaf tin and bake for 50 minutes.
- Remove bread from tin and cool on a rack.

Steps:
- Mix dry ingredients.
- Do not sift the flour!
- Mix liquids and add to dry.
- Stir until there is no more dry flour.
- Depending on the humidity of the air where you live you may need a little bit more or less liquid.
- The dough should be moist but not sticky.
- It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
- Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
- This is a country style bread that should be sliced thick.
- It is important not to overwork the dough.
- Shape into a ball or an oval, with oiled hands.
- Place on clean baking sheet.
- Bake for 40 minutes at 400°F.
- Variations: Rub the dough ball with virgin olive oil and sprinkle sea salt and oregano for a foccacia flavor.
- For tea time add a tsp pure cane sugar.
- The liquid can be replaced for orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
- For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
- Sprinkling of seeds in the dough or on top of the bread is also possible.

SEEDED WHOLEMEAL LOAF

- Combine both flours in a large bowl with the yeast and 1 tsp fine salt. Mix the treacle with 250ml warm water until well combined. Stir into the flour to make a slightly sticky dough. If you need to add more water, splash it in 1 tbsp at a time.
- Knead the dough on a lightly floured surface for 10 mins (or in a tabletop mixer for 5-7 mins). Your dough should be smooth and elastic when it's ready. Place the dough in a lightly oiled bowl, flip the dough over to coat it in oil, then cover with a sheet of oiled cling film. Leave in a warm place until doubled in size - this will take about 1 hr (see note, below). Lightly oil a 900g loaf tin.
- Once doubled in size, knead the dough again for 3-5 mins to knock out the air bubbles - add most of the seeds and work these into the dough as you knead. Shape the dough into an oval roughly the same length as your tin. Place in the tin and leave to prove, covered with oiled cling film, for 30-45 mins until it has nearly doubled in size again. Heat oven to 200C/180C fan/gas 6.
- Gently press a finger into the loaf to check if it has had enough proving time (see tip). When it's ready, glaze the top of the loaf with the egg yolk and sprinkle over the remaining seeds. Bake in the oven for 40-45 mins until golden brown - if you tip the loaf out of the tin and tap the bottom, it should sound hollow. Leave to cool on a wire rack for at least 30 mins before slicing.
