This pork roast is so easy to make it almost cooks itself. But you can take all the credit when your guests start to moan after tasting this deliciously seasoned Rack of Pork!

1 7-8 bone center cut rack of pork (the weight on this roast will vary. Using a meat thermometer will ensure its cooked properly.)
1/4 cup dijon mustard, stone ground mustard or olive oil
1/4 cup sea salt & black pepper (I used Montreal Steak Seasoning)
2 carrots -rough cut
1 small onion-rough cut and include skins
2 stalks of celery- rough cut
6 cloves garlic peeled
2 teaspoons mustard seeds
2 teaspoons coriander seeds
1 tablespoon dill seeds
1 tablespoon granulated onion
1 tablespoon red pepper flakes
1 tablespoon granulated garlic
1 tablespoon coarse sea salt
1 tablespoon paprika
2 tablespoons black peppercorns

Steps:

  • preheat oven to 450 degrees
  • In a roasting pan add your rough cut vegetables and garlic
  • rinse the rack of pork well and pat dry
  • place rack fat side up, on top of cut veggies
  • apply a liberal amount of mustard (or olive oil) rubbing it into the top of the roast
  • sprinkle entire rack with sea salt, pepper, garlic, and onion or just use my personal favorite Montreal Steak Seasoning instead of the other seasonings.**Add one cup of water to the bottom of the pan before roasting.
  • place pan in preheated 450 degrees F oven for 15 minutes.
  • after 15 minutes reduce the oven temperature to 325 degrees F and continue to roast for 1½ - 2 hours or until internal temperature has reached 160 degrees for well done or 145 degrees for medium.
  • Remove the Rack from the oven placing on a cutting board and allow to rest for 10- 20 minutes before slicing the meat. This will allow all the juices to remain in the rack, rather than have them run all over the plate, making the meat dry.
  • While the rack is resting, place 2 cups of water in the roasting pan and place on the stovetop on medium heat (or back in the oven) and with a spoon loosen all the baked-in meat scraps from the pan, making your pan gravy.
  • Strain out all of the vegetable pieces and any residue
  • Cut the rack along the bones, making even portions of the pork, serve with your pan gravy and your favorite sides!

3 pounds bone-in pork rib roast (frenched rack, about 5 ribs)
1 pinch salt
1 pinch black pepper
1 to 2 cloves garlic (minced)
2 tablespoons olive oil

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Pat rack of pork dry with paper towels. Season all sides thoroughly with salt and pepper. Rub with minced garlic and oil.
  • Place rack in a shallow baking pan fat side up. Roast 18 minutes per pound or to an internal temperature of 145 F. You want the meat to still be pink.
  • Remove from oven and let rest 10 minutes, loosely covered, before slicing between the ribs.
  • Serve with pan drippings and roasted or mashed potatoes and a green vegetable.

1 four-rib pork roast (approximately 3 pounds)
3 tablespoons white vinegar
2 tablespoons sugar
1 1/2 tablespoons baking soda
2 tablespoons grapeseed oil
2 tablespoons olive oil
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
Sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F. If you are short on time, you can cook the pork at temperatures up to 350 degrees F; however, slower and lower cooking results in more tender and juicy meat.
  • To prepare the pork for cooking, set the pork on a baking sheet and score the skin into a criss-cross pattern. Be sure to only score the fat and not deep enough to cut into the meat. Scoring exposes more fat to the heat, which results in more fat being rendered during cooking.
  • Bring the vinegar, sugar and 5 cups water to a boil in a saucepan; then add the baking soda and bring back up to a boil. Carefully pour the boiling liquid over the skin of the roast. Pat the skin dry and discard the liquid. Next, rub the grapeseed and olive oils all over the pork; then rub the pork with the rosemary and thyme. Sprinkle with salt and pepper.
  • Place the pork in a roasting pan and transfer to the oven. Cook, uncovered, until the internal temperature reaches 145 degrees F, about 1 1/2 hours.
  • When done, remove the pork from the pan and transfer it to a rack set over a baking sheet. Cover with vented foil and let rest for at least 15 minutes (the internal temp will increase by at least 5 or 10 degrees).

30 ml butter
maple syrup
1 garlic clove, minced
1 ml basil or 1 ml rosemary

Steps:

  • The rack of pork should be cut from the loin portion of the ribs, with the ends of the bones exposed.
  • Melt the butter, combine with approximately 1/4 cup of maple syrup and add the garlic and basil (or rosemary).
  • Brush the top of the roast with this mixture.

3kg rack of pork , chined (see tip), French trimmed (ask your butcher to give you the trim), skin scored, not tied
1 tbsp sea salt , ground to a powder
1 tbsp olive oil
1 onion , finely chopped
2 thyme sprigs , leaves picked
slice of sourdough , crust removed, torn into little pieces
½ tsp fennel seeds
½ tsp coriander seeds
½ tsp chilli flakes
the trim from the pork , minced (or use 400g pork mince)
nutmeg , for grating
zest ½ lemon
1 tbsp chopped flat-leaf parsley
70g wild garlic , chopped (see tip)
1 egg

Steps:

  • In the morning before you cook the pork, use a very sharp knife (or ask the butcher) to cut a deep flap under the skin and fat of the meat, all the way along the rack - be sure to leave at least 5cm connected. Rub the powdered sea salt all over the flesh (not the skin), then leave uncovered in the fridge for at least 2 hrs. Take out of the fridge 30 mins before you want to cook it, to come to room temperature. Heat oven to 240C/220C fan/gas 9.
  • Meanwhile, make the stuffing. Heat the olive oil in a frying pan. Add the onion, a pinch of sea salt and black pepper, and the thyme leaves. Cook over a low heat, stirring, until the onion has softened, about 10 mins. Add the sourdough 2 mins before the end. Remove from the heat and transfer the mix to a bowl.
  • In a dry frying pan, toast the fennel and coriander seeds and chilli flakes over a high heat for 1-2 mins. Allow to cool, then use a pestle and mortar to grind with a pinch of sea salt.
  • Add the ground spices to the onion mixture and mix with the pork trim. Season again, grate in some nutmeg to taste, and add the lemon zest, parsley and wild garlic. Mix everything together with your hands to thoroughly combine, then add the egg and mix again.
  • Press the stuffing into the flap in the pork and tie up with string all the way along to hold the stuffing in. Use foil to cover any exposed stuffing, as it will burn in the hot oven. Place the joint on a baking tray.
  • Cook the pork for 20 mins per 450g - so 2 hrs 20 mins for a joint this size. Start it off on 240C/220C fan/gas 9 for 20 mins, then reduce the heat to 200C/180C fan/gas 6 and cook for 2 hrs. Turn it halfway through to ensure it's cooking evenly and test it 10 mins before the end with a temperature probe. When the core reads 70C, it's cooked. Wrap the pork in foil and leave to rest while you prepare your side dishes.

3 large garlic cloves
2 shallots, quartered
3 tablespoons olive oil
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh rosemary
2 tablespoons coarse kosher salt
1 tablespoon ground black pepper
2 8-bone racks of pork (each 5 1/2 to 6 1/2 pounds), chine bone cut off
Morel Mushroom Pan Sauce

Steps:

  • Chop garlic and quartered shallots in mini processor. Scrape down bowl. Add next 5 ingredients; blend until paste forms.
  • Arrange roasts, bone side down, on work surface. Make 6 to 8 shallow slits in fat on each. Rub some of herb paste into slits. Rub remaining herb paste all over roasts. Stand roasts in large roasting pan, bone sides facing each other and rib bones pointing upward. Interlock ends of rib bones, pushing roasts together. (Can be made 1 day ahead. Cover and chill. Uncover; let stand 2 hours at room temperature before continuing.)
  • Position rack in bottom third of oven and preheat to 350°F. Roast until thermometer inserted into pork from center of top registers 140°F, about 1 hour 20 minutes. Remove pan from oven; let pork rest 20 to 30 minutes (internal temperature will rise 5 to 10 degrees; meat will be faintly pink).
  • Transfer roasts, still interlocked, to platter; reserve roasting pan with juices for sauce. Cut between ribs into chops. Serve with mushroom pan sauce.

TENDER OVEN ROASTED PORK AND VEGGIES

I love a tender roast...and my crockpot has always been a trusted standby. This time, however, I was determined to figure out how to get the tenderness and yet still keep the form of the meat I was cooking. I tried this wet rub over an oven-cooked Pork Roast and it turned out so good I may not be using the crockpot again for a good long while! A little more or less of any of the ingredients probably wouldn't change much of the end result, so have fun and make it your own. The best part? I didn't marinate or pre-brown a thing and we never missed the extra effort! Be sure and read the directions through before starting and try not to omit the lemon juice if possible (I used that easy-squeeze stuff) because lemon juice naturally breaks down the fibers in meat to tenderize. Don't worry...your roast wont taste lemon-y in the end....it'll just be tender!

3 lbs lean pork roast (any kind)
1/3 cup dried parsley flakes or 1/2 cup fresh parsley, finely chopped
6 garlic cloves
1 small onion, cut into 1 inch cubes
3 -4 tablespoons olive oil
1 tablespoon course ground kosher salt
3 tablespoons lemon juice
1 lb baby carrots, cut into 1 inch slices if they are thicker (leave them whole if they are thin ones) or 4 carrots, cut into 1 inch slices
3 medium potatoes, cut into 1 inch cubes
1 large onion, cut into one inch cubes
3 tablespoons olive oil
1 tablespoon kosher salt

Steps:

  • Preheat oven to 500 degrees (yes, 500).
  • Rinse, and pat dry the pork roast. Set aside on a clean plate.
  • In a food processor or blender, combine onion, garlic and parsley. After all is minced and mixed well, slowly add (while pulsing) olive oil until a nice thick paste has formed. This should be enough paste to completely cover a 3 lb. roast. If you use a bigger roast, then increase the amounts of the ingredients for the paste accordingly. If your paste isn't, well, pasty enough, add more olive oil until it is. Maybe your onion or garlics were bigger than mine.
  • Rub a 1/4 inch thick layer of the paste on to what you have decided to be the bottom of your roast. When completely covered, carefully put bottom side down onto a wire rack that is set onto a broiler pan. If you don't mind your roast sitting in a little fat and possibly getting brown on bottom, you could omit the use of the wire rack.
  • Now, apply the rest of the paste to the top and sides of the roast. When completely covered, sprinkle Kosher salt all over top and then sprinkly as evenly as possible the juice of the lemon on top of all.
  • Now, with rack in the second lowest position, put roast uncovered in the 500 degree oven for 17 minutes. Then, LOWER TEMP of oven to 325 degrees and cook for approximately one more hour OR until temperature taken from probe reads 155 degrees. When done, take roast out and allow to rest for 10-15 minutes loosely covered with foil. Resist the urge to cut into it at least for the first 5 minutes to allow the juices to redistribute. You wont be sorry, because this is one juicy hunk o' meat!
  • While the roast is cooking at 500 degrees, coat the baby carrots, potatoes and onion with the Kosher salt and olive oil and cook them in the oven with the roast AFTER lowering the temp to 325. When you remove the roast from the oven, crank the heat on the veggies back up to 415 degrees and by the time the juices in the roast have redistributed, your veggies should be crisp-tender and ready to be enjoyed with the roast. Perfecto! I love multi-tasking.
  • By the way, all ovens are calibrated differently. My cooking times are based, of course, upon my oven.so be sure and check the temp of your roast with an internal thermometer inserted into a fleshy part of the meat (avoid taking temp near bone where temperatures will register higher). If covered properly with foil while standing, the pork roast will raise in temperature to the proper and recommended safe temp for pork. I did have some burned looking juice on the bottom of the pan, but the roast was excellent.

Garlic-studded, herb-rubbed pork shoulder is such a great cut of meat. I cooked it in a pan without liquid, without covering it, and without cooking it at a really low temperature. I didn't want it to be falling apart and wet; I wanted it to be solid, chewy and crusty.

3 ½ pounds bone-in pork shoulder roast
6 cloves garlic, halved
1 tablespoon olive oil
kosher salt and freshly ground black pepper to taste
1 tablespoon Italian seasoning
1 teaspoon dried rosemary
1 pinch cayenne pepper, or to taste
1 tablespoon olive oil
¼ cup thinly sliced baby romaine lettuce
¼ cup halved cherry tomatoes
3 tablespoons red wine vinegar
2 cups cooked white beans

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 6 holes per side into pork roast with a sharp knife and insert garlic clove halves into the holes. Rub roast with 1 tablespoon olive oil. Season all sides of roast with kosher salt and a generous amount of black pepper, Italian seasoning, rosemary, and cayenne pepper. Place into a roasting pan.
  • Roast in the preheated oven for 3 hours. Turn off the oven with roast inside and leave it to rest for 1 hour. Refrigerate meat overnight.
  • Cut cold pork into 1/2-inch-thick slices. If any garlic appears on the cut surface of the meat, pick it out so it doesn't burn. Season slices with salt.
  • Heat 1 tablespoon olive oil in a heavy skillet over medium-low heat and sear pork slices in the hot oil until browned and crusty, about 10 minutes per side.
  • Toss lettuce with tomatoes in a bowl and drizzle with red wine vinegar; toss again to coat.
  • Heat beans in a saucepan over low heat. Layer about 1/3 cup white beans into a large, shallow soup plate; top beans with a slice of pork shoulder and about 1/4 cup lettuce mixture.

½ cup fresh bread crumbs
2 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 teaspoon salt
¼ teaspoon black pepper

1 (7 bone) rack of lamb, trimmed and frenched
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position.
  • In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
  • Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring.
  • Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes, depending on the degree of doneness you want. With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste. Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.
