1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon crushed red pepper flakes
½ teaspoon salt
4 large potatoes, peeled and cubed

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.

6 small red potatoes
1/4 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
  • Serve immediately.

These potatoes are a staple in our home. Whether accompanying roast lamb or chicken, or just on their own, we have them a couple of times a week. They are delicious and the ones that get overly-brown in the pan and stick a bit are MINE! Clean up is a little tricky with this recipe, unless you line your pans with foil, but I find that just filling the pan up with hot, sudsy water and forgetting for an hour (something I apparently have no problem doing ;-)) helps a lot.

8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
1/2 cup olive oil
1 cup water
1 tablespoon dried oregano (to taste)
1 large lemon, juiced
sea salt
fresh coarse ground black pepper

Steps:

  • Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
  • Put all the ingredients into a baking pan large enough to hold them.
  • Season generously with sea salt and black pepper.
  • Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
  • The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
  • Bake for 40 minutes.
  • When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
  • Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
  • This will take about another 40 minutes.
  • Do not be afraid of overcooking the potatoes- they will be delicious.
  • Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.

Steps:

  • Preheat oven to 450 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place potatoes in a large saucepan and cover with cold salted water by 1 inch. 8 medium russet potatoes, halved and quartered
1/2 cup Italian dressing, if desired (not fat-free, bottled OR homemade, (or more)
3 -4 tablespoons olive oil
1 tablespoon minced fresh garlic (optional)
1/2 cup grated parmesan cheese (or to taste)
salt and black pepper

Steps:

  • Set oven to 400 degrees (preferably convection bake).
  • Line a cookie sheet or baking pan with foil that has been well sprayed with cooking spray.
  • Dry the potatoes pieces well with a paper towel to remove any excess moisture.
  • In a large bowl, combine the Italian salad dressing, olive oil and the minced garlic, mix well.
  • Toss the potatoes in the mixture to coat well.
  • Transfer the potatoes onto a greased cookie sheet.
  • Season with salt and pepper and the grated Parmesan cheese.
  • Bake in oven for 30-35 minutes.
  • Turning occasionally to brown evenly and to prevent sticking.

  • Remove from oven.

1 c chicken broth
2 Tbsp lemon juice
1/4 c butter, melted
1 tsp oregano
1 Tbsp garlic, minced
3/4 c parmesan grated
parsley
salt and pepper

Steps:

  • 1. Preheat oven to 375
  • 2. Butter baking dish (large enough to hold all the potatoes)
  • 3. Peel potatoes and cut into large bite sized pieces.
  • 4. Place potatoes into buttered baking dish.
  • 5. In a bowl, combine the broth, lemon juice, melted butter, oregano, salt, pepper, and garlic.
  • 6. Pour mixture over the potatoes in the dish. Stir to coat.
  • 7. Cover tightly (foil will do) and bake about 40 minutes.
  • 8. Remove cover, turn potatoes, sprinkle with parmesan cheese.
  • 9. Bake, uncovered, for about 30 minutes (to desired tenderness). You may wish to sprinkle with more parmesan at this point.
