Categories     dessert

Time 1h

Yield 16 squares

Number Of Ingredients 13

Nonstick cooking spray
One 15.5-ounce can chickpeas, drained and rinsed
1/2 cup almond butter
1/3 cup honey
2 teaspoons vanilla extract
2 tablespoons dried chamomile (about 5 chamomile tea bags)
1 1/2 to 2 tablespoons orange zest (from 1 orange)
1 tablespoon canola oil
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup semisweet chocolate chips
1/3 cup chopped pecans (optional)

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square pan with nonstick cooking spray.
  • Place the chickpeas, almond butter, honey, vanilla, chamomile, orange zest, canola oil, salt, baking powder and baking soda in a food processor or blender and process until the batter is smooth and creamy. Fold in the chocolate chips and optional pecans (the batter should be thick). Pour the batter into the prepared pan and spread into the corners with a spatula.
  • Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean and the edges are a tiny bit brown. Let the blondies cool in the pan for at least 20 minutes before slicing.
  • Note: You can enjoy these delicious treats immediately--they're like a warm and gooey cross between brownies and cookie dough! Or, let them firm in the pan (on the counter or in the fridge) a few hours or overnight, for a more traditional chewy blondie texture.

GOOEY BLONDIES

Gooey Blondies image

Provided by Food Network

Categories     dessert

Time 1h20m

Yield 20 blondies

Number Of Ingredients 10

3 cups, plus 3 tablespoons flour, sifted after measuring
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
8 ounces unsalted butter
2 cups, plus 10 tablespoons, packed, dark brown sugar
3 eggs, lightly beaten
1 1/2 teaspoons vanilla extract
3 cups peanut butter chips
1 cup toasted pecans

Steps:

  • Preheat the oven to 350 degrees. Lightly grease and flour a 9 by 13-inch baking pan and set aside. Sift flour with salt, baking soda, baking powder and set aside.
  • Melt butter in a large sauce pan over low heat. Add the brown sugar, remove it from the heat and stir until completely blended; let cool to room temperature. Add eggs one at a time stirring well after each addition. Stir in the vanilla.
  • Transfer the mixture to a large mixing bowl. With a rubber spatula, fold the sifted flour into the batter with a few smooth swift strokes and stir just until batter is blended and smooth. Do not over mix or the blondies will be heavy. Stir in the chips and nuts and pour into a prepared pan. With a spatula, spread the batter to make sure it is even in thickness. Bake for 35 to 40 minutes until the top springs back when you press it lightly with your fingertips or when a toothpick, when inserted in the center of the dough comes out clean.
  • Remove the blondies from the oven and let them set until completely cool. Cut into rectangles and wrap individually in plastic or foil to keep them very fresh.

This recipe works well with practically any variety of honey -- orange blossom, acacia, even strong-flavored buckwheat. If desired, you can stir in 1/2 cup chopped toasted nuts (almonds, walnuts, or pecans) with the chocolate.

ORANGE BLONDIES

Orange Blondies image

When I got this recipe from a lady at church it was called orange brownies but since there is no chocolate I thought blondies was more appropriate. It comes from a Lady and Son's cookbook. It also came with a glaze but instead she uses a cream cheese frosting. It is rich but very good, this comes from someone that only tried them because there was no chocolate at the buffet table.

"BROWN ON BLONDE" BLONDIES

This chewy, walnut, pecan, and almond butter-filled blondie recipe comes from EveryDayCook by Alton Brown.

Provided by Alton Brown

Categories     Cookbook Critic     Dessert     Brownie     Nut     Walnut     Pecan     Almond

Number Of Ingredients 11

170 grams unsalted butter
100 grams walnuts
55 grams pecans
272 grams all-purpose flour
6 grams baking powder
3 grams kosher salt
55 grams almond butter
346 grams dark brown sugar
2 large eggs
1 large egg yolk
1 tablespoon vanilla extract

Steps:

  • Crank the oven to 350ºF. Coat the insides of an 8-inch square baking pan with non-stick cooking spray and line with a sling of parchment paper.
  • Melt the butter in an 8-inch sauté pan over medium heat. When it's done bubbling, add the walnuts and pecans and cook until the nuts are toasted and the butter smells nutty, 5 to 7 minutes.
  • Meanwhile whisk together the flour, baking powder, and salt in a small bowl.
  • Place a fine-mesh strainer over a large heatproof bowl and strain the butter away from the nuts. Set both aside to cool for 30 minutes. Then, chop the nuts coarsely and set aside.
  • While you're waiting, beat the almond butter into the cooled butter, followed by the brown sugar, eggs, egg yolk, and vanilla. Beat until completely smooth, about 1 minute, then stir in the flour mixture. Finish by folding in the nuts and transferring to the prepared pan. The batter will be thick, so I suggest a rubber or silicone spatula.
  • Bake for 30 to 35 minutes, until the edges are deeply brown and the top is dry and cracked. Remove from the pan and cool on a rack for about 30 minutes. Slice into squares and devour with plenty of frosty almond milk.
