WHOLE BLUE CRABS NEW ORLEANS-STYLE
Steps:
- Bring a large pot of lightly salted water to a boil. Add bouquet garni, crab boil, lemons, halved garlic, corn, and sausage. Add blue crabs and cover. Cook for 10 minutes or until crab is cooked through.
- In a small saute pan over medium heat, melt butter with the 3 peeled garlic cloves. Simmer the butter for 3 to 4 minutes. Remove from the heat and discard the garlic cloves.
- Remove the crabs, corn, and sausage from the crab boil and serve on newspaper, with butter sauce over top.

SPICY CRAB BOIL FOR BLUE CRABS

- To make the spice mix, grind the mustard, celery, cumin, dill seeds, and bay leaves in an electric spice grinder or a clean coffee grinder. Place the freshly ground spices in a large bowl and mix in the paprika, chile powder, red chile flakes, and thyme. Add the fresh herb sprigs to the bowl.
- Put some water and a steamer insert in the bottom of a very large pot. Add the crabs, sprinkling the spice mix and the herb sprigs between the crabs as you layer them in the pot. Put the lid on, bring the water to a boil, and steam until the crabs are cooked, about 20 minutes. The crabs should be a bright red. Remove the crabs from the pot, serve hot, and pass around crab crackers or hammers.
BLUE CRABS WITH SPICY BUTTER

- Combine the beer and vinegar with 1 cup of water in a very large pot. Add a steamer insert and bring the liquid to a boil over high heat. Add the crabs and 1/4 cup of the Old Bay and cook, covered, until the crabs are bright red, 20 to 30 minutes, depending on the size. Transfer the crabs to a large platter and sprinkle with the remaining 1/4 cup Old Bay.
- Serve the hot crabs with the Spicy Butter and lemon wedges on the side.
- Make the butter while the crabs cook: combine the butter, Old Bay, cayenne and garlic in a small saucepan over medium heat. Melt the butter, skimming off any foam that rises to the surface. Pour the melted butter into a small ramekin, leaving the milk solids in the saucepan.
MARINATED BLUE CRAB CLAWS
Save the claws the next time you have a crab boil at your house or purchase them already peeled from a local market. Make this one pot recipe ahead of time and pull it out of the fridge just in time for the party.

- Combine all the ingredients except the crab claws in a large nonreactive bowl, and whisk to mix well. Add the crab claws and toss to coat. Cover, and refrigerate for at least 6 hours or as long as overnight.
- Serve chilled or at cool room temperature in individual serving bowls or allow guests to serve themselves from a large bowl.

This is our Xmas Eve dinner every year. Also, my all time favorite pasta dish! This tradition started because Catholics did not eat meat on Christmas Eve and they sought out seafood based pasta dishes to serve instead. All ingredients are approximations since we never really measure anything. Alter to suit your family's tastes! THIS RECIPE SHOULD BE MADE ONE DAY AHEAD TO ALLOW THE CRAB FLAVORING TO PERMEATE THE MARINARA!

- Using a large stockpot, cover the bottom of the pot with the EVOO.
- Once heated, saute the garlic, crushed red pepper, parsley and basil.
- Add in crushed tomatoes and tomato paste and simmer for 30 minutes.
- Add in the crab and simmer with the lid partially covered for several hours.
- Remove from heat and cool. Put back in refrigerator and allow to sit overnight.
- 1 hour before serving, take out and simmer again on the stove.
- Remove crabs to allow to cool. Serve sauce over spaghetti.
- Once the pasta course is complete, serve the whole crabs and pick out the meat. UNBELIEVABLE!
