EASY OVEN ROASTED POTATOES

Easy Oven Roasted Potatoes image

Simply seasoned, easy oven roasted potatoes make the ideal side dish for a meat and potatoes dinner. A high baking temperature makes the potatoes sizzle and brown nicely.

Provided by Julie Clark

Categories     Side Dish

Time 40m

Number Of Ingredients 6

6 small red potatoes
1/4 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
  • Serve immediately.

ULTIMATE ROAST POTATOES

Ultimate roast potatoes image

This foolproof recipe will ensure even first timers get crispy skins and fluffy insides. Make sure your roast potatoes are perfect for Sunday lunch or even Christmas dinner

Provided by Angela Nilsen

Categories     Dinner, Side dish

Time 1h10m

Number Of Ingredients 4

1kg Maris Piper potatoes
100g duck or goose fat (for a luxurious taste), or 100ml/3½fl oz olive oil
2 tsp flour
Maldon salt, to serve

Steps:

  • Put a roasting tin in the oven (one big enough to take the potatoes in a single layer) and heat oven to 200C/fan 180C/gas 6.
  • Peel 1kg potatoes and cut each into 4 even-sized pieces if they are medium size, 2-3 if smaller (5cm pieces).
  • Drop the potatoes into a large pan and pour in enough water to barely cover them.
  • Add salt, then wait for the water to boil. As soon as the water reaches a full rolling boil, lower the heat, put your timer on and simmer the potatoes uncovered, reasonably vigorously, for 2 mins.
  • Meanwhile, put 100g duck or goose fat or 100ml olive oil into the hot roasting tin and heat it in the oven for a few mins, so it's really hot.
  • Drain the potatoes in a colander then shake the colander back and forth a few times to fluff up the outsides.
  • Sprinkle with 2 tsp flour and give another shake or two so they are evenly and thinly coated.
  • Carefully put the potatoes into the hot fat - they will sizzle as they go in - then turn and roll them around so they are coated all over.
  • Spread them in a single layer making sure they have plenty of room.
  • Roast the potatoes for 15 mins, then take them out of the oven and turn them over.
  • Roast for another 15 mins and turn them over again. Put them back in the oven for another 10-20 mins, or however long it takes to get them really golden and crisp. The colouring will be uneven, which is what you want.
  • Scatter with Maldon salt and serve straight away.

GREEK POTATOES (OVEN-ROASTED AND DELICIOUS!)

Greek Potatoes (Oven-Roasted and Delicious!) image

These potatoes are a staple in our home. Whether accompanying roast lamb or chicken, or just on their own, we have them a couple of times a week. They are delicious and the ones that get overly-brown in the pan and stick a bit are MINE! Clean up is a little tricky with this recipe, unless you line your pans with foil, but I find that just filling the pan up with hot, sudsy water and forgetting for an hour (something I apparently have no problem doing ;-)) helps a lot.

Provided by evelynathens

Categories     Potato

Time 1h29m

Yield 8 serving(s)

Number Of Ingredients 8

8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
1/2 cup olive oil
1 cup water
1 tablespoon dried oregano (to taste)
1 large lemon, juiced
sea salt
fresh coarse ground black pepper

Steps:

  • Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!
  • Put all the ingredients into a baking pan large enough to hold them.
  • Season generously with sea salt and black pepper.
  • Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
  • The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
  • Bake for 40 minutes.
  • When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
  • Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
  • This will take about another 40 minutes.
  • Do not be afraid of overcooking the potatoes- they will be delicious.
  • Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.

THE BAKED POTATO

The Baked Potato image

Provided by Alton Brown

Categories     side-dish

Time 1h10m

Yield 1 potato per person

Number Of Ingredients 4

1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
Canola oil to coat
Kosher salt
Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

Steps:

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
  • Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

OVEN-FRIED POTATOES

Provided by Food Network Kitchen

Categories     side-dish

Time 40m

Yield 4 servings

Number Of Ingredients 4

3 medium russet potatoes, about 1 1/2 pounds, scrubbed and dried
3 tablespoons extra-virgin olive oil or a neutral tasting oil
2 teaspoons kosher salt
Pinch cayenne, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
  • Transfer potatoes to a serving dish and serve immediately.

OVEN POTATOES

Oven Potatoes image

These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

2 lbs baby potatoes
Salt and black pepper
2 to 3 tbsp butter (melted)
2 to 3 tbsp olive oil
1 tbsp fresh thyme
1 tbsp parsley
1 ½ tsp garlic powder
1 tsp smoked paprika
1 tsp dried onion powder
2 tbsp fresh chopped dill
2 tbsp fresh parsley
1 tbsp fresh thyme
½ cup grated parmesan cheese

Steps:

  • Preheat the oven to 450F. Line a large baking sheet with parchment paper or a silicone mat.

  • Place the sliced potatoes into a large mixing bowl and pour the melted butter and olive oil over the top. Season the potatoes generously with salt and freshly ground black pepper. Add the parsley, thyme and garlic powder. Use a spatula to toss the potatoes until they're well coated.
  • Some other seasonings to try: smoked paprika (my favorite), basil, rosemary, oregano, onion powder, chipotle chili.
  • Spread the potatoes onto the prepared baking sheet and arrange the potatoes with the open/cut side facing up. Cover the pan tightly with a large sheet of foil.
  • Bake the potatoes in the preheated oven for 18 to 20 minutes, until the potatoes are fork tender. Remove the foil and turn on the broiler. Broil the potatoes for 6 to 10 minutes, or until they're golden brown. Toss the potatoes with a spatula and then broil again for a few minutes.
  • Dress the potatoes with fresh parsley, thyme and parmesan cheese before serving.
  • Based on the main entrée, you can also add fresh dill, basil or rosemary to the potatoes.
  • This recipe serves 5 to 6 people; simply increase the ingredient amounts for more servings.

  • Baked potato. I thought it was impossible to improve on a simple baked potato. I was wrong. Steam the spud for 20 minutes to infuse with moisture, then bake for 40 minutes in a hot oven to get the perfect combo of fluffy inside and extra crisp outside.
  • Classic potato salad. Picnics and barbecues would not be the same without a bowl of creamy potato salad on the side. This classic recipe pairs boiled new potatoes with shallots, capers and cornichons for a tangy kick.
  • Fondant potatoes. These potatoes may sound fancy but there's no need to whip out your chef whites quite yet! Recreate this traditional French dish with crisp, crunchy edges and a soft, silky middle for an elegant dinner party side or Sunday lunch accompaniment.
  • Mashed potato. I’m not going to lie, I have found it hard to do full justice to this most magnificent of side dishes. However, everything improved once I got my head around this hack: after you’ve boiled the potatoes, drain them, return to the pan and cover with a cloth for 10 minutes.
  • Rösti. Easier than you think. Grate a potato, squeeze out all the moisture, add rosemary, salt and pepper, then oven bake. Once you’ve flipped it, top with grated Gruyère or a fried egg.
  • Crisp sandwich. As if crisps aren’t wonderful enough, it turns out they’re even better between bread. We've seen this trend emerging across the UK restaurant and café scene so it seems only right to replicate it in the comfort of a home kitchen.
  • Boiled, squashed and then roasted. My favourite new method, this is a real game changer: Boil small potatoes in their skins, then drain and cover with a cloth for a few minutes.
  • Dauphinoise potatoes. We’ve arrived at nirvana – layered potato slices with lots of cream, garlic and melted Gruyère – to be served on feast days on my desert island.
  • Oven chips. Some foods are at their peak only when cooked brilliantly using the most expensive ingredients. The potato is not in this category. You can achieve perfectly crispy, golden chips using a home oven, which also takes away the effort of frying.

  • Toss the potatoes with olive oil, salt, and pepper, and spread evenly on the baking sheet. Roast 20 to 30 minutes, or until tender and golden brown around the edges. The timing will depend on the size and freshness of your potatoes.
  • In a small bowl, whisk together the olive oil, lemon zest, lemon juice, mustard, garlic, rosemary, red pepper flakes, salt, and pepper.
  • Drizzle the dressing onto the cooked potatoes and gently toss. You may not need all of the dressing. Season to taste with more salt and pepper. Sprinkle with parsley and serve.

HOW TO MAKE OVEN ROASTED POTATOES SO THEY'RE ACTUALLY ...

From myrecipes.com
Estimated Reading Time 4 mins
  • Preheat your oven to either 475 or to 375 degrees fahrenheit (I will explain later!). Place a metal pan in your oven while it preheats. If you have room, a good roasting pan is perfect.
  • Now start with the potatoes you like best. My two choices would be Russets (my go-to for most things because they taste more “potato-y” to me) or Yukon golds.
  • Drain your potatoes well and put them in a bowl. Add 2 tablespoons olive oil (or, if you have access and are feeling decadent, duck fat, goose fat or beef fat… any of these are an indulgence that’s totally worth it), 2 teaspoons of salt, and ½ teaspoon of black pepper.
  • Now, let me explain the two possible oven temps. Both ways work just fine. I like the higher temp for the shorter time. But the lower temp for the longer time works great too.
  • I recommend carefully shaking or gently stirring the potatoes every 10-15 minutes, for even browning. And, if you want to add minced, fresh herbs like sage, thyme, or rosemary, I recommend tossing them into the pan for the last 10 minutes, so you don’t risk burning them.
  • There should be some oil remaining in the pan when you remove it from the oven. Pour it off and discard. Check the potatoes for salt, pepper, and a further showering with fresh herbs (if using).
