4 tilapia fillets (6 ounces each)
1 tablespoon reduced-fat mayonnaise
1 tablespoon lime juice
1/4 teaspoon grated lime zest
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 cup panko bread crumbs
Cooking spray
2 tablespoons minced fresh cilantro or parsley

Steps:

  • Preheat oven to 425°. Place fillets on a baking sheet coated with cooking spray. In a small bowl, mix the mayonnaise, lime juice and zest, salt, onion powder and pepper. Spread mayonnaise mixture over fish. Sprinkle with bread crumbs; spritz with cooking spray., Bake until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with cilantro.

¼ cup all-purpose flour
¼ teaspoon salt
pepper
2 egg whites
1 pound tilapia fillets
¼ cup dried bread crumbs
¼ cup cornmeal
½ teaspoon dried basil, crushed

Steps:

  • Preheat oven to 450 degrees F (230 degrees Celsius).
  • Sift or stir flour, salt, and pepper together in a shallow dish, and set aside. In a bowl, beat egg whites until white and frothy. In another bowl, combine bread crumbs with cornmeal and basil.
  • To bread the fillets, dip first into flour, shaking off any excess, then into egg whites, then into bread crumb mixture.
  • Spray a shallow baking dish with non-stick cooking spray. Lay fillets flat in the dish, tucking under any thinner ends or edges for more even cooking. Bake in the preheated oven for 10 to 15 minutes, or until fish flakes easily with a folk.

2 tablespoons light mayonnaise
2 teaspoons honey Dijon mustard or Dijon mustard
1 cup panko bread crumbs
1/2 cup fine dry bread crumbs
1 teaspoon paprika
1 tablespoon dried parsley flakes
Dash pepper
1/2 teaspoon onion powder
1/2 teaspoon salt

Steps:

  • Preparation: Heat oven to 400°. Lightly grease a large shallow baking dish or spray with nonstick cooking spray. Combine the mayonnaise and mustard; rub the mixture over the tilapia fillets. In a food processor, combine the panko and fine bread crumbs, paprika, parsley, pepper, onion powder, and salt. Pulse 4 to 6 times to combine. Pour bread crumb mixture into a wide, shallow bowl. Dip the coated fillets in the mixture, turning to coat both sides. Arrange the coated fillets in the prepared baking dish. Bake the fish fillets for 15 to 18 minutes, or until fish is cooked through. The time depends on thickness of the fillets. Fish will flake easily

This was a recipe I created because I wanted an oven-fried fish recipe that didn't include cornmeal or bread crumbs. Other types of fish may be substituted. Prep time includes chilling time. Please don't skip the chilling step.

3/4 cup buttermilk baking mix, divided
1 extra-large egg
1 tablespoon milk
1/4 cup sesame seeds
4 tilapia fillets, about 1 pound total
4 teaspoons sesame seeds
2 tablespoons olive oil or 2 tablespoons melted butter
salt

Steps:

  • Spread 1/4 cup baking mix in a shallow dish.
  • Beat milk and egg together in another shallow dish.
  • Combine remaining baking mix and 1/4 cup sesame seeds in a third dish.
  • Pat fish dry with paper towels.
  • Take a fish fillet and dredge it in the plain baking mix, turning to cover both sides.
  • Next, dip fillet in the egg mixture, turning to cover both sides.
  • Dredge fillet in sesame seed mixture, turning to cover both sides and patting in well.
  • Place fillet on a lightly-greased baking sheet and top with an additional 1 teaspoon sesame seeds. Repeat with remaining fillets.
  • Cover with plastic wrap or foil and refrigerate for one hour. DO NOT SKIP THIS STEP.
  • Preheat oven to 425° Fahrenheit.
  • Remove covering from fish and drizzle with olive oil or melted butter.
  • Bake, uncovered, for 20-25 minutes, or until browned and crisp.
  • Lightly sprinkle with salt while hot.

1/4 cup olive oil (good quality extra virgin)
1/2 cup cornmeal
1 tablespoon Old Bay Seasoning
2 tilapia fillets
2 tablespoons Miracle Whip
1 tablespoon sweet relish
1 teaspoon lemon juice

Steps:

  • Warm up olive oil in a 10" or 12" skillet.
  • Mix the corn meal and Old Bay seasoning thoroughly, then spread out on a platter.
  • Coat tilapia fillets lightly, but thoroughly with corn meal and Old Bay mixture.
  • Lay coated fillets in hot olive oil (medium-medium high heat) and cook until golden on the bottom, then turn fillets over and repeat.
  • Do not overcook the fish--it's easy to do.
  • While fillets are cooking, combine Miracle Whip, sweet relish, and lemon juice and stir until well blended, then serve with the fish.
  • It's quick, easy, and doesn't require a lot of cleanup.
  • Steamed carrots or broccoli and some form of potatoes go well with this.
