How to make amazing oven baked potato chip chicken just like your Grandma used to make! This is a classic oven baked chicken recipe!

Number Of Ingredients 9

6-8 pieces of chicken
1 1/3 cups of flour
1 tablespoon garlic powder
1 tablespoon seasoning salt
1 teaspoon paprika
1 teaspoon pepper
2-3 large eggs
2 cups crushed potato chips (low salt if you don't want too much salt)
1/3 cup of butter or margarine (melted )

Steps:

  • Whisk together the flour coating ingredients in a medium sized bowl.
  • Grease a baking sheet large enough for 8 pieces of chicken and set aside,
  • Beat the eggs in a small bowl.
  • First, dip your chicken into the flour mixture and cover it completely.
  • Dip it into the egg mixture, then into the broken chips for a second coat.
  • Place on the baking sheet.
  • Repeat with all chicken pieces.
  • Place in the fridge for half an hour to let the coating set.
  • Preheat your oven to 400 degrees F.
  • Melt the margarine/butter and drizzle evenly over the top of the chicken pieces.
  • Bake for 40-50 minutes or until the chicken reaches the appropriate temperature (165 for Breast meat, 180 for dark meat)
  • Remove and serve!

2 pounds skinless, boneless chicken breast meat
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground black pepper
1 cup crushed potato chips

Steps:

  • To Marinate: Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper. Cover dish and refrigerate overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.

My mom used to make this all the time when I was a kid. She'd save the crumbs left at the end of every bag of Lays potato chips until she had enough to make this. This is such a fun way to eat chicken! The quantities here are approximate, to give you an idea.

4 boneless skinless chicken breasts
2 cups crushed potato chips (Lays classic)
1/2 cup grated parmesan cheese (the only time I use it out of the green can)
1 tablespoon garlic powder
3 tablespoons butter or 3 tablespoons margarine

Steps:

  • Preheat the oven to 400°F.
  • Mix the potato chips, cheese, and garlic powder in a large ziploc bag.
  • Melt the butter or margarine in a shallow dish.
  • You can cut the chicken breasts into strips if you want to do this as chicken fingers.
  • Moisten the chicken pieces in the butter or margarine, then seal them in the ziploc bag, and shake to coat.
  • Lay the chicken out on a baking sheet (I always cover the sheet with foil for easy cleanup). If you want to, you can cover the chicken with the leftover coating.
  • Bake 40 minutes for whole breasts, 30 minutes for strips.

2 cups corn flakes
1/4 cup butter or 1/4 cup margarine
1/2 teaspoon salt
1/4 teaspoon pepper
3 lbs broiler-fryer chickens

Steps:

  • Crush cornflakes to make 1 cup crumbs, set aside.
  • In small saucepan melt butter or margarine, remove from heat, stir in salt and pepper.
  • Cut chicken, rinse the pieces, pat dry and brush with butter mixture.
  • Place crushed cornflakes or fine dry bread crumbs on a sheet of waxed paper, roll chicken in crumbs to coat.
  • Arrange chicken, skin side up so pieces don't touch, in a shallow baking pan.
  • Bake in 375°F oven for 50 to 60 minutes. Do not turn.
  • Chicken is done when it is easily pierced with a fork. Season to taste.

1/4 teaspoon pepper
2 eggs, slightly beaten
1 teaspoon salt
1/4 teaspoon paprika
1/4 cup milk
1 broiler-fryer chicken, 2-3 lb, cut in piece

Steps:

  • Combine crushed potato chips, salt, pepper, paprika.
  • Combine eggs and milk.
  • Dip chicken first in egg/milk mixture, then in chip mixture.
  • Melt butter in baking dish.
  • Add chicken (do not stack) and bake at 325 degrees for 45 minutes or until done or tender. I usually leave in 1 hour.
