OVEN FRIED CHICKEN TENDERS WITH CHOPPED SALAD AND VINAIGRETTE
Instead of the same old boring salad with grilled chicken. I made a chopped salad with delicious oven fried chicken tenders. The mayonnaise marinade in this recipe keeps the chicken moist and flavorful. Hope you enjoy!

- Make Vinaigrette:.
- Combine all ingredients in bowl. Wisk well to combine. Refrigerate for at least 1/2 hour to allow flavors to combine.
- Wash Romaine lettuce, tomatoes and cucumbers. Spin a couple of times in salad spinner. Transfer to a Salad bowl. Top with pitted olives and blue cheese. Toss to combine. Add Vinaigrette and toss right before serving.
- Soak Chicken in Water and white vinegar for 10 minutes. Rinse well and pat dry. Transfer chicken to ziploc bag or large bowl.
- In a bowl, mix mayo, garlic, 2 tbs. light adobo, black pepper to taste, lime juice and worcestershire sauce. Mix to combine.
- Add mayo mix to chicken, coat well. Let marinade for at least 1/2 hour to 1 hour on the counter. If longer, refrigerate then bring to room temperature before cooking.
- In ziploc bag or large bowl combine bread crumbs, 1 tbs. light adobo, and black pepper to taste. Mix well.
- Coat the chicken in the bread crumb mixture.
- Preheat oven to 425.
- Grease a baking sheet with cooking spray, place chicken on baking sheet. Drizzle chicken with olive oil.
- Bake for 15 to 17 minutes. Flipping once halfway through cooking time.
- I like to Serve the Chicken Tenders on top of the Chopped Salad.

BAKED CHICKEN TENDERS
Steps:
- Preheat the oven to 425 degrees F. Line a cookie sheet with foil, then place a wire rack on top.
- For the chicken tenders: Mix the cracker crumbs and Parmesan together in a large bowl. In a shallow dish, mix the mayonnaise, mustard, cider vinegar and some salt and pepper.
- Sprinkle the chicken tenders with a little salt and pepper and then place them, one by one, in the mayonnaise mixture. Scrape off excess mayonnaise and then roll the tenders in the crumb mixture to coat. As you go, place the coated tenders on the wire rack.
- Bake until cooked through and golden brown, 25 minutes. Let cool on the rack for 5 minutes.
- For the Dijon sauce: Meanwhile, in a small bowl, combine the mustard, mayonnaise, honey, cayenne and some salt and pepper. Mix until smooth and lump free.
- Transfer the chicken tenders to a serving platter. Serve with the Dijon sauce.

- 1. Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
- 2. Mix remaining ingredients except butter in a large bag.
- 3. Preheat oven to 400 degrees. Cut butter into a few pieces and place in a large pan. Melt butter in pre-heated oven. Spread melted butter around the bottom of the pan, make sure that there are no dry spots.
- 4. Shake excess milk off of chicken and completely coat each piece with the seasoning mix by shaking the chicken in the bag, until coated. Place each piece of chicken in the pan.

- In a mixing bowl whisk milk, garlic powder, onion powder, salt, and pepper. Add in the chicken breast strips and allow it to soak for at least 1 hour, or overnight if time allows.
- Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil.
- Drizzle avocado oil onto the bottom of the pan and spread it all over until there are no dry spots.

- Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.

- Preheat oven to 450.
- Combine chicken and buttermilk in a shallow bowl. Place crackers, Creole seasoning, and salt in a heavy-duty zip-top bag. Crush crackers with a rolling pin or heel of hand.
- Drain chicken, discarding buttermilk. Add chicken to bag, close, and shake to coat well.
- Coat a baking sheet with cooking spray. Pour oil in center of baking sheet; heat oil at 450 for 3 minutes. Remove oven from pan, reduce heat to 400. Spread hot oil with a spatula over an area just large enough to accommodate chicken. Quickly place chicken in oil on pan.
- Bake at 400 for 10 minutes, turn, and bake and additional 3 minutes or until done.
PECOS CHICKEN SALAD
Steps:
- Preheat the oven to 375 degrees F.
- In a large bowl, toss chicken with all of the seasonings. Cover with plastic wrap, and allow chicken to marinate for at least 30 minutes.
- Preheat a grill or a large grill pan over medium-high heat. Grill chicken on each side for 1 to 2 minutes per side. If your pan is not oven-safe, then transfer chicken to a baking dish and let finish cooking in the oven for 7 to 9 minutes, or until fully cooked through. Let the chicken cool, slice it into julienne strips, and reserve.
- Heat a pan of canola oil until the temperature of the oil reaches 375 degrees F. Fry the tortilla strips until crisp, about 2 minutes. With a spider or slotted spoon, remove the strips from the pan and let drain on a paper towel.
- In a large mixing bowl, toss the lettuce, onions, and tomatoes with 1 cup of the Tomatillo Vinaigrette. Toss until all ingredients are well mixed. Divide the lettuce mixture evenly among 4 dinner plates or individual salad bowls. Arrange 4 tomato quarters around the edge of each salad.
- In a circular pattern, arrange the chicken atop each salad, alternated with the avocado and poblano slices in between. Sprinkle about 1/4 cup cheese over each salad. Drizzle the remaining vinaigrette over the chicken and vegetables. Garnish with the tortilla strips and cilantro.
- Add the tomatillos to a pot of simmering water, and blanch for 5 minutes. Drain the tomatillos into a colander, and allow them to cool slightly.
- In blender, combine all of the ingredients except the oil. Puree the mixture for 15 seconds, and then continue blending for 30 seconds, slowly drizzling in the olive oil through the top until the dressing emulsifies.

- Preheat oven to 400 degrees.
- While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
- Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
- Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
- Cut chicken into pieces about 1 inch thick.
- Place chicken pieces in paper bag of breading one at a time and shake to coat.
- Place coated pieces in baking dish with melted butter or margarine.

- Preheat the oven 375° and have ready a rimmed sheet pan lined with parchment paper or nonstick aluminum foil. Also, have ready 3 shallow bowls for dredging station.
- Evenly sprinkle the tenderloins with a 1/2 teaspoon of salt and a 1/4 teaspoon of pepper. Set aside while you prepare the breading trays.
- Add 1 cup of flour to the first tray. Add eggs, milk, and hot sauce to the second tray and whisk to combine. In the last tray, stir together panko bread crumbs, 2 teaspoons of Kosher salt, and 1 teaspoon of pepper.
- Dredge each tenderloin in the flour, shaking off any excess. Next, dip it in the egg mixture (allowing the excess to drip off), and lastly coat thoroughly in the Panko breadcrumbs, pressing to adhere if necessary.

- Preheat oven to 425F (use convection if you have it) and line a baking sheet with foil (optional but highly recommended, see Notes below)) for easier cleanup.
- Place the chicken on the baking sheet, and pound to an even thickness. I use an empty wine bottle, but a meat pounder or tenderizing tool, a rolling pin, or a heavy frying pan all work. The chicken doesn't need to be pounded 'thin', but it needs to be of pounded to a uniform thickness so it all cooks through at the same time.
- Evenly drizzle the chicken with olive oil and generously season with salt and pepper; set aside.
- To a small bowl, add the remaining ingredients, stir to combine, and evenly spoon the dry rub over the chicken on both sides. I add a bit more to the side that's facing up than the side that's on the bottom in contact with the baking sheet.
- Bake for about 15 minutes, or until chicken is cooked through (165F) and done.
- Allow chicken to rest for 5 to 10 minutes before slicing into it (cover with foil if desired to keep it warmer). Resting the chicken really helps lock in the juices and moisture so don't skip this step.
- While chicken bakes, to a large platter or bowl, add the lettuce, and chop the vegetables and add them to the bowl, and optionally add the croutons.
- When chicken is done resting, slice it and add it to the bowl. Make sure to get any run off juices from the sheet pan into the salad bowl because there is a ton of flavor in the juices.
- To a small jar or container with a lid (a canning jar works great), add all ingredients, put the lid on and shake vigorously until combined; taste vinaigrette and tweak as necessary to taste. If it is at all flat, it likely needs more salt. Alternatively, use your favorite store bought vinaigrette or dressing.
- Drizzle the vinaigrette over the salad as desired (you may not need all of it), toss to combine, and serve immediately.

- Heat the oven to 425F and arrange rack in the upper third. Set a rack on a foil lined baking sheet; set aside.
- Combine flour, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper in a shallow bowl, mix until well combined; set aside. Combine Panko, 1/3 cup of the parsley, 3 tablespoons of the olive oil, 1 1/2 teaspoons of the salt, and all the lemon zest in a separate shallow bowl, and toss until evenly combined; and set aside.
