Instead of the same old boring salad with grilled chicken. I made a chopped salad with delicious oven fried chicken tenders. The mayonnaise marinade in this recipe keeps the chicken moist and flavorful. Hope you enjoy!

1 1/2 lbs chicken tenders
1/2 cup white vinegar
8 cups water
1 cup good quality mayonnaise (you can use low fat)
4 garlic cloves, smashed in a mortar and pestle (or finely chopped)
3 tablespoons goya light adobo seasoning
fresh ground black pepper
4 cups Italian style breadcrumbs
2 limes, juice of
1 tablespoon Worcestershire sauce
cooking spray
2 tablespoons olive oil
1 head romaine lettuce, chopped (remove core, slice in strips lengthwise, then slice across)
4 plum tomatoes, diced
2 cucumbers, diced
1 (6 ounce) can black olives (pitted)
1/2 cup crumbled blue cheese
1 cup canola oil
4 garlic cloves, smashed in mortar and pestle (or finely chopped)
2 teaspoons sugar
1/4 cup white wine vinegar
salt & fresh ground pepper (lots of pepper)
1 teaspoon oregano
1 teaspoon dry mustard
2 tablespoons water

Steps:

  • Make Vinaigrette:.
  • Combine all ingredients in bowl. Wisk well to combine. Refrigerate for at least 1/2 hour to allow flavors to combine.
  • Wash Romaine lettuce, tomatoes and cucumbers. Spin a couple of times in salad spinner. Transfer to a Salad bowl. Top with pitted olives and blue cheese. Toss to combine. Add Vinaigrette and toss right before serving.
  • Soak Chicken in Water and white vinegar for 10 minutes. Rinse well and pat dry. Transfer chicken to ziploc bag or large bowl.
  • In a bowl, mix mayo, garlic, 2 tbs. light adobo, black pepper to taste, lime juice and worcestershire sauce. Mix to combine.
  • Add mayo mix to chicken, coat well. Let marinade for at least 1/2 hour to 1 hour on the counter. If longer, refrigerate then bring to room temperature before cooking.
  • In ziploc bag or large bowl combine bread crumbs, 1 tbs. light adobo, and black pepper to taste. Mix well.
  • Coat the chicken in the bread crumb mixture.
  • Preheat oven to 425.
  • Grease a baking sheet with cooking spray, place chicken on baking sheet. Drizzle chicken with olive oil.
  • Bake for 15 to 17 minutes. Flipping once halfway through cooking time.
  • I like to Serve the Chicken Tenders on top of the Chopped Salad.
  • Enjoy!

3 cups cheese crackers, such as Cheez-Its, ground into crumbs
1 cup finely grated Parmesan
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
1 pound chicken tenders (7 to 8 tenders)
1/2 cup Dijon mustard
1/4 cup mayonnaise
2 tablespoons honey
Dash cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Line a cookie sheet with foil, then place a wire rack on top.
  • For the chicken tenders: Mix the cracker crumbs and Parmesan together in a large bowl. In a shallow dish, mix the mayonnaise, mustard, cider vinegar and some salt and pepper.
  • Sprinkle the chicken tenders with a little salt and pepper and then place them, one by one, in the mayonnaise mixture. Scrape off excess mayonnaise and then roll the tenders in the crumb mixture to coat. As you go, place the coated tenders on the wire rack.
  • Bake until cooked through and golden brown, 25 minutes. Let cool on the rack for 5 minutes.
  • For the Dijon sauce: Meanwhile, in a small bowl, combine the mustard, mayonnaise, honey, cayenne and some salt and pepper. Mix until smooth and lump free.
  • Transfer the chicken tenders to a serving platter. Serve with the Dijon sauce.

1 1/2 c italian bread crumbs
1/2 c parmesan cheese
1 tsp salt
2 tsp freshly ground black pepper
2 tsp garlic powder
2 stick butter
3 clove garlic-chopped very fine

Steps:

  • 1. Melt Butter in a bowl add chopped garlic..set aside. Mix bread crumbs,parmesan cheese, salt, pepper,& garlic powder. Dip each tender in the butter/garlic mixture, then into the bread crumb mixture... and lay on a sprayed cookie sheet. After all tenders are coated.. pour remaining butter/garlic mixture over the top. Bake at 350* for approx 40 minutes..or however crispy you want them.. bake accordingly.

Nope, I make my fried chicken a different way all together but it takes a while to fry 2 whole chickens for this family so it is saved for Sunday supper. This is my almost fried chicken in the middle of the week cause we simply love chicken meal.

18 chicken tenders
3/4 tsp salt
1 1/2 Tbsp season all
1 tsp pepper
1 1/2 c flour
3 tsp paprika
1 stick butter

Steps:

  • 1. Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
  • 2. Mix remaining ingredients except butter in a large bag.
  • 3. Preheat oven to 400 degrees. Cut butter into a few pieces and place in a large pan. Melt butter in pre-heated oven. Spread melted butter around the bottom of the pan, make sure that there are no dry spots.
  • 4. Shake excess milk off of chicken and completely coat each piece with the seasoning mix by shaking the chicken in the bag, until coated. Place each piece of chicken in the pan.
  • 5. Cook for 20 min. Turn each piece of chicken and continue cooking for 20 more minutes, or until cooked through.

1½ lbs Boneless Chicken Breasts (trimmed and cut into about 3 strips each)
1 Cup Milk
1 Tsp Garlic Powder
1 Tsp Onion Powder
Kosher salt and pepper, to taste
2 Tbsp Avocado or Olive oil
½ Cup Panko Breadcrumbs
1 Tbsp Smoked Paprika
½ Tbsp Dried Parsley or Oregano

Steps:

  • In a mixing bowl whisk milk, garlic powder, onion powder, salt, and pepper. Add in the chicken breast strips and allow it to soak for at least 1 hour, or overnight if time allows.
  • Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil.
  • Drizzle avocado oil onto the bottom of the pan and spread it all over until there are no dry spots.
  • Add panko garlic powder, smoked paprika, parsley/oregano, salt and pepper in a large Ziploc bag.
  • Drain the chicken, and add it to the Ziploc bag, shaking well to evenly coat. Place coated chicken strips onto the prepared baking sheet, leaving some space in between.
  • Transfer to the oven and bake for 15-18 minutes, flipping it halfway.

1 egg, beaten
1 ¼ cups panko bread crumbs

  • Preheat oven to 450.

1 tablespoon lemon pepper
1 tablespoon chili powder
1 tablespoon dried oregano
1 tablespoon chopped garlic

Canola oil, for frying tortillas
6 to 8 corn tortillas, cut into 1-inch strips
2 heads romaine hearts, washed and chopped
2 red onions, sliced 1/8-inch thick
4 plum tomatoes, quartered lengthwise
1 cup Tomatillo Vinaigrette, recipe follows
2 large avocados, peeled, pitted, and sliced
2 poblano chiles, roasted, peeled, seeded, and julienned
1 cup crumbled queso fresco or feta cheese
Fresh chopped cilantro leaves, for garnish
1 pound tomatillos, husked
4 jalapenos, roasted
1 bunch fresh cilantro, leaves chopped
4 cloves garlic
1 tablespoon rice vinegar
1 lime, juiced
Salt
1 cup olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss chicken with all of the seasonings. Cover with plastic wrap, and allow chicken to marinate for at least 30 minutes.
  • Preheat a grill or a large grill pan over medium-high heat. Grill chicken on each side for 1 to 2 minutes per side. If your pan is not oven-safe, then transfer chicken to a baking dish and let finish cooking in the oven for 7 to 9 minutes, or until fully cooked through. Let the chicken cool, slice it into julienne strips, and reserve.
  • Heat a pan of canola oil until the temperature of the oil reaches 375 degrees F. Fry the tortilla strips until crisp, about 2 minutes. With a spider or slotted spoon, remove the strips from the pan and let drain on a paper towel.
  • In a large mixing bowl, toss the lettuce, onions, and tomatoes with 1 cup of the Tomatillo Vinaigrette. Toss until all ingredients are well mixed. Divide the lettuce mixture evenly among 4 dinner plates or individual salad bowls. Arrange 4 tomato quarters around the edge of each salad.
  • In a circular pattern, arrange the chicken atop each salad, alternated with the avocado and poblano slices in between. Sprinkle about 1/4 cup cheese over each salad. Drizzle the remaining vinaigrette over the chicken and vegetables. Garnish with the tortilla strips and cilantro.
  • Add the tomatillos to a pot of simmering water, and blanch for 5 minutes. Drain the tomatillos into a colander, and allow them to cool slightly.
  • In blender, combine all of the ingredients except the oil. Puree the mixture for 15 seconds, and then continue blending for 30 seconds, slowly drizzling in the olive oil through the top until the dressing emulsifies.

1/4 cup KRAFT Grated Parmesan Cheese

1 pkt. SHAKE 'N BAKE Chicken Coating Mix
1/4 cup GREY POUPON Dijon Mustard
1 Tbsp. honey

  • Heat oven to 425°F.
  • Cut potatoes into 1/2-inch-thick strips; place in large bowl. Add dressing and cheese; toss to coat. Spread onto large baking sheet sprayed with cooking spray.
  • Bake 12 min. Meanwhile, coat chicken with coating mix as directed on package.

This recipe came from my "Where's Mom Now That I Need Her?" cookbook. The recipe calls for one whole fryer chicken, but I usually just use four skinless chicken breasts. This way, I have breading left over for the next time I want to make this dish.

1 cup biscuit mix
1 teaspoon salt
1 1/2 teaspoons paprika
1 dash pepper
8 boneless skinless chicken breasts or 1 broiler-fryer chicken
1/2 cup butter or 1/2 cup margarine

Steps:

  • Preheat oven to 400 degrees.
  • While oven is preheating, place 1/2 cup butter or margarine in 9x13 baking dish. Place in oven just until melted.
  • Combine biscuit mix, salt, paprika, and pepper in small mixing bowl.
  • Place the amount of breading you'll be using in a paper bag. (Whole recipe will coat one whole fryer chicken or about 8 chicken breasts). Place the remainder in a plastic baggie for use at a later time.
  • Cut chicken into pieces about 1 inch thick.
  • Place chicken pieces in paper bag of breading one at a time and shake to coat.
  • Place coated pieces in baking dish with melted butter or margarine.
  • Bake at 400 degrees for 50 minutes. Reduce heat to 375 and bake for an additional 10 minutes. If using a convection oven (which is what I use) you'll only need to bake the chicken at 400 for about 40 minutes.
  • Serve with your favorite dipping sauce (I prefer honey mustard).

2 pounds chicken tenderloins
2 1/2 teaspoons Kosher salt, separated
1 1/4 teaspoon black pepper, separated
1 1/4 cup all-purpose flour
2 large eggs (slightly beaten)
1/2 cup milk
3 dashes hot sauce
2 1/4 cups plain Panko breadcrumbs
Olive oil cooking spray ((you could also use canola oil or avocado oil cooking spray))

Steps:

  • Preheat the oven 375° and have ready a rimmed sheet pan lined with parchment paper or nonstick aluminum foil. Also, have ready 3 shallow bowls for dredging station.
  • Evenly sprinkle the tenderloins with a 1/2 teaspoon of salt and a 1/4 teaspoon of pepper. Set aside while you prepare the breading trays.
  • Add 1 cup of flour to the first tray. Add eggs, milk, and hot sauce to the second tray and whisk to combine. In the last tray, stir together panko bread crumbs, 2 teaspoons of Kosher salt, and 1 teaspoon of pepper.
  • Dredge each tenderloin in the flour, shaking off any excess. Next, dip it in the egg mixture (allowing the excess to drip off), and lastly coat thoroughly in the Panko breadcrumbs, pressing to adhere if necessary.
  • Place tenderloins on a baking sheet so they are not touching (prepare a second sheet pan, if necessary). Generously spray each tenderloin with olive oil spray, then flip and spray the other side as well.
  • Bake for 13 minutes. Then, flip the chicken over and bake for 13 minutes more. Allow to cool slightly, serve, and enjoy.

1 1/2 pounds boneless skinless chicken breasts (I used 2 large breasts)
3 tablespoons olive oil
kosher salt, to taste
freshly ground black pepper, to taste
3 tablespoons light brown sugar, packed
1 to 1.5 tablespoons chili powder
1 teaspoon paprika or smoked paprika
1 teaspoon cumin
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper, optional and to taste
10 ounces fresh lettuce (I used a bagged greens mixture with cabbage and shredded carrots)
1 to 1 1/2 cups diced tomatoes (I used halved cherry tomatoes; use Roma, regular, or your favorite tomatoes)
1 medium cucumber, peeled and diced into bite-sized pieces
1 medium bell pepper, seeded and diced or sliced into bite-sized pieces (I used yellow; any color is fine)
1 medium ripe avocado, diced or sliced into bite-sized pieces
croutons, optional and to taste
1/4 cup olive oil
1/4 cup honey
1/4 cup apple cider vinegar
2 teaspoons mustard (I prefer dijon but honey mustard will work)
3/4 teaspoon kosher salt, or to taste

Steps:

  • Preheat oven to 425F (use convection if you have it) and line a baking sheet with foil (optional but highly recommended, see Notes below)) for easier cleanup.
  • Place the chicken on the baking sheet, and pound to an even thickness. I use an empty wine bottle, but a meat pounder or tenderizing tool, a rolling pin, or a heavy frying pan all work. The chicken doesn't need to be pounded 'thin', but it needs to be of pounded to a uniform thickness so it all cooks through at the same time.
  • Evenly drizzle the chicken with olive oil and generously season with salt and pepper; set aside.
  • To a small bowl, add the remaining ingredients, stir to combine, and evenly spoon the dry rub over the chicken on both sides. I add a bit more to the side that's facing up than the side that's on the bottom in contact with the baking sheet.
  • Bake for about 15 minutes, or until chicken is cooked through (165F) and done.
  • Allow chicken to rest for 5 to 10 minutes before slicing into it (cover with foil if desired to keep it warmer). Resting the chicken really helps lock in the juices and moisture so don't skip this step.
  • While chicken bakes, to a large platter or bowl, add the lettuce, and chop the vegetables and add them to the bowl, and optionally add the croutons.
  • When chicken is done resting, slice it and add it to the bowl. Make sure to get any run off juices from the sheet pan into the salad bowl because there is a ton of flavor in the juices.
  • To a small jar or container with a lid (a canning jar works great), add all ingredients, put the lid on and shake vigorously until combined; taste vinaigrette and tweak as necessary to taste. If it is at all flat, it likely needs more salt. Alternatively, use your favorite store bought vinaigrette or dressing.
  • Drizzle the vinaigrette over the salad as desired (you may not need all of it), toss to combine, and serve immediately.

Oven-Fried Chicken Milanese with Tomato-Onion Salad image

5 to 6 bone-in, skinless* chicken drumsticks (about 1 1/2 pounds total)
4 to 5 bone-in, skinless* chicken thighs (about 1 1/2 pounds total)
1 cup all-purpose flour
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
2 cups panko breadcrumbs
2/3 cup finely chopped fresh parsley leaves
1/4 cup olive oil
2 teaspoons lemon zest
5 large eggs, beaten thoroughly
2/3 cup finely grated Parmesan
1/2 medium red onion, halved lengthwise and sliced paper thin
1 pound grape, cherry, or sweet 100 tomatoes, halved (about 2 1/2 cups)
2 tablespoons freshly squeezed lemon juice

Steps:

  • Heat the oven to 425F and arrange rack in the upper third. Set a rack on a foil lined baking sheet; set aside.
  • Combine flour, 1 teaspoon of the salt, and 3/4 teaspoon of the pepper in a shallow bowl, mix until well combined; set aside. Combine Panko, 1/3 cup of the parsley, 3 tablespoons of the olive oil, 1 1/2 teaspoons of the salt, and all the lemon zest in a separate shallow bowl, and toss until evenly combined; and set aside. Whisk together eggs and cheese in a shallow bowl until evenly combined; set aside.
  • To coat chicken, dredge a piece in the flour mixture and shake off excess. Then dip into egg mixture, let excess drip off, and finally roll in the breadcrumbs, pressing to adhere as necessary. Place chicken piece on baking sheet and repeat with remaining chicken.
  • Bake until coating is golden and crispy, juices of chicken run clear when poked, and internal temperature is 160degreesF, about 40 to 45 minutes. Meanwhile, combine remaining 1/2 teaspoon of the salt, 1/4 teaspoon of the pepper, remaining 1/3 cup of the parsley, 1 tablespoon of the olive oil, all the red onion, all the tomatoes, and the lemon juice in a non-reactive bowl and toss to combine. Serve chicken topped with a bit of the tomato mixture.

⅓ cup chopped pecans
2 teaspoons paprika
½ teaspoon salt
½ teaspoon poultry seasoning
½ teaspoon dried sage
1 (2 to 3 pound) whole chicken, cut into pieces
½ cup evaporated milk
⅓ teaspoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 13x9 inch baking dish.
  • In a shallow dish, combine the biscuit mix, pecans, paprika, salt, poultry seasoning and sage.
  • Dip the chicken pieces in the evaporated milk then coat generously with the pecan mixture. Place pieces in the prepared baking dish and drizzle with the melted butter or margarine.
  • Bake at 350 degrees F (175 degrees C) for 1 hour or until juices run clear.
