THE BEST CHICKEN CUTLETS
When we set out to create the best cutlets, we sought perfectly tender chicken that was flavorful and juicy -- not tasteless and dry -- with a crisp, breaded exterior that stayed put and didn't get soggy. After trying different methods, we found that a mix of panko and Pecorino Romano creates the salty, crunchy crust we crave, while dried spices in both the flour and breadcrumb mixtures ensure that our cutlets are never bland.

- Place a wire rack inside a rimmed baking sheet. Preheat the oven to 200 degrees F.
- Cut the chicken breasts in half lengthwise making 8 roughly equal pieces. (They should look like large chicken tenders.) Place one sheet of plastic wrap on a clean cutting board. Put one chicken piece in the center of the plastic wrap and top with another sheet. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4 inch thick. Transfer to the prepared baking sheet. Repeat with the remaining chicken.
- Set up a standard breading station: mix the flour, 1 tablespoon kosher salt, 1 teaspoon granulated garlic, 1 teaspoon onion powder and 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon crushed red pepper flakes if using, if using, in a shallow dish.
- Beat the eggs with 1 tablespoon water in a second shallow dish.
- Mix the panko, Pecorino-Romano, 1 tablespoon kosher salt, the remaining 1 teaspoon granulated garlic, the remaining 1 teaspoon onion powder, 1/2 teaspoon freshly ground black pepper and the remaining 1/2 teaspoon crushed red pepper flakes if using, in a third shallow dish.
- Dredge one piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat it on both sides. Let the excess egg drip off, then press the chicken firmly into the breadcrumb mixture, turning to coat on both sides and packing the crumbs into any crevices. Transfer the chicken back to the baking sheet and repeat with the remaining chicken pieces.
- Line a clean baking sheet with a clean wire rack. Heat 2 tablespoons of the unsalted butter and 2 tablespoons of the olive oil in a large skillet over medium-low heat. Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side. Transfer to the clean wire rack, season with salt and hold in the oven at 200 degrees F to keep warm. Wipe the skillet clean and repeat with the remaining butter, olive oil and chicken, making 4 batches in total.
- Serve with lemon wedges, if desired.
CHICKEN BAKE
Inspired by Costco's famous chicken bake, we came up with a hand-held version that's easy to make at home. The cheesy bacon-filled pockets taste great hot from the oven, but can also be made in advance and reheated wrapped in foil in a 400 degrees F-oven for 8 to 10 minutes.

- Preheat the oven to 375 degrees F and line a baking sheet with parchment. Combine the mozzarella, provolone and Parmesan in a large bowl and toss to combine. Transfer 1/2 cup of the cheese mixture to a small bowl and reserve.
- Add the chicken, bacon and chives to the large bowl with the cheese. Drizzle with the Caesar dressing and season with several grinds of black pepper. Toss until everything is combined and well coated.
- Divide the pizza dough into 4 equal pieces and rub lightly with olive oil. Roll one piece into a 7-by-9-inch rectangle. With one of the long sides closest to you, arrange a quarter of the filling in a log across the center of the rectangle, leaving an inch of space at each side edge. Fold in the sides, then fold the bottom piece of dough over the filling and roll up to enclose it, trimming away any excess dough. Pinch the seams together to seal well. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining dough and filling, leaving about 2 inches between each on the baking sheet.
- Brush the rolls all over with the melted butter and sprinkle with the reserved cheese mixture. Bake until the rolls are golden and the cheese topping is crusty and browned, 25 to 30 minutes. Let cool 5 minutes before serving.
KICKIN' CHICKEN THIGHS
Bbq chicken thighs at its best !

- 1. Pre-heat your oven to 350 degrees. Place the 10 chicken thighs in a baking dish. Do not add water or oil !! Sprinkle the Creol seasoning evenly among the thighs, and salt and pepper them to your liking. Cover with foil and bake for 35- 40 minute.
- 2. Remove the chicken from the oven. Evenly spread the bbq sauce on the chicken thighs. Cover with foil once again and return to the oven for an additonal 20-25 minutes.
- 3. Once thoroughly cooked, remove from oven and allow to set for 5 minutes before serving.
KICKIN' CHICKEN BAKE
This delicious twist on the chicken & broccoli crescent ring was a contest winner submitted on one of Emeril's Cooking with Kids specials. A little boy named Noah came up with this version, which I tried immediately and loved. I added jalapenos and more garlic to mine. I use leftover rotisserie chicken, skinned and boned or freshly poached chicken breast meat in this. Also NOTE: The original version called for only 1 can of crecsent rolls and made 1 wreath. However, I found there was a lot of filling, enough for 2 wreaths. I made 1 wreath and saved the extra filling to bake as a separate casserole (bake for the same amount of time and serve with crusty rolls on the side).

- In a bowl, combine all ingredients, except the crescent rolls and egg wash.
- IF MAKING INTO A WREATH: Divide crescent rolls into 8 equal triangles.

- Spoon chicken mixture in a ring on top of the puff pastry triangles, leaving the points exposed. Fold the pointed ends over the chicken mixture, pressing the points down to seal. Brush with egg wash.
- Bake for 25 minutes until golden brown.

ASS KICKIN' CHICKEN
This spicy, savory chicken recipe was inspired by a veal cutlet recipe of similar nature. I like the chicken better.

- *Pepato is a mixture of grated parmesan and pepper.
- You can buy Alessi Pepato or prepare your own by grinding 2 tbs red pepper flakes in a coffee or spice grinder and mixing with 1/3 cup grated parmesan cheese.
- Substitute black peppercorns if you do not have red pepper flakes.
- Divide the flour evenly onto two plates.
- To one, add the paprika, to the other add the Pepato (parmesan/pepper mixture.) In a shallow bowl, beat the egg with the hot sauce.
- In a large saute pan, heat the oil over medium heat- do not let it smoke.
- Dip the chicken breasts first in the flour/paprika mix, shake off excess flour, dip in the egg wash, coating both sides thoroughly, then dip in the flour/Pepato mix to cover well.
- When oil is hot, add the chicken breasts.
- Do not overcrowd.
- Cook until the coating is golden brown, about three minutes each side.
- Remove and place on paper towels to drain.
- Serve on a bed of spring greens or romaine lettuce.

- Pour white wine into a large container with a lid and immerse chicken into wine. Squeeze a freshly cut lemon into the chicken and wine (and add about 2-4oz Dole Orange Pineapple juice if you would choose), Place airtight lid over the container and place it in the fridge).
- Mix together the spices with the following proportions: 35% salt, 10% pepper, 5% Cayenne pepper, 20% Garlic Salt, 15% Crushed Red Pepper, 13% Tony's, and 2% Paprika. Blend evenly together.
- PRODUCE: If you buy them pre-chopped, you will be able to skip most of the prep work.
- Sauté all of your peppers and onions in olive oil until crisp and aromatic.
- As soon as you finish sautéing the produce, remove container with chicken from the fridge and the lid. Add a generous amount of butter on top of the chicken and then empty your freshly sautéed produce into the container, secure the lid, and place back into the refrigerator for about 30 minutes.
- After about 30 minutes in the fridge, Preheat oven to 350, remove container from the fridge. Pull out individual chicken breasts, removing all chopped peppers or onions that are stuck to it, season with the mixed spices and place on a hot pan with olive oil.
- Cook until a nice sear has been achieved on both sides and remove from heat.
- Pour the ingredients in the container (Wine, peppers and onions, etc) into the frying pan and place the frying pan on the middle rack of the oven for 15-20 minutes. (If you are only cooking one 2 breast halves, pour the entire container into the pan, otherwise, pour until the chicken is half immersed).
- After 15-20 minutes in the oven, remove pan and allow chicken to rest for about 5 minutes.
- Pour a portion of the white wine mixture from the pan over the chicken when you plate it for a little extra flavor as well as some of the peppers and onions. Chicken SHOULD be cooked perfectly every time, but ALWAYS check before eating.

- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.

- Slice each chicken breast horizontally into 2 thin fillets. Place chicken in a resealable zip-top bag with buttermilk, Buffalo sauce, and garlic powder. Seal the bag and shake to blend ingredients and evenly coat the chicken. Refrigerate for at least 2 hours or overnight.
