THE BEST CHICKEN CUTLETS

The Best Chicken Cutlets image

When we set out to create the best cutlets, we sought perfectly tender chicken that was flavorful and juicy -- not tasteless and dry -- with a crisp, breaded exterior that stayed put and didn't get soggy. After trying different methods, we found that a mix of panko and Pecorino Romano creates the salty, crunchy crust we crave, while dried spices in both the flour and breadcrumb mixtures ensure that our cutlets are never bland.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 12

4 boneless, skinless chicken breasts (about 2 pounds)
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons onion powder
1 teaspoon crushed red pepper flakes, optional
3 large eggs
2 1/2 cups panko breadcrumbs
1/2 cup grated Pecorino-Romano
1 stick (8 tablespoons) unsalted butter
1/2 cup olive oil
Lemon wedges, for serving, optional

Steps:

  • Place a wire rack inside a rimmed baking sheet. Preheat the oven to 200 degrees F.
  • Cut the chicken breasts in half lengthwise making 8 roughly equal pieces. (They should look like large chicken tenders.) Place one sheet of plastic wrap on a clean cutting board. Put one chicken piece in the center of the plastic wrap and top with another sheet. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4 inch thick. Transfer to the prepared baking sheet. Repeat with the remaining chicken.
  • Set up a standard breading station: mix the flour, 1 tablespoon kosher salt, 1 teaspoon granulated garlic, 1 teaspoon onion powder and 1/2 teaspoon freshly ground black pepper and 1/2 teaspoon crushed red pepper flakes if using, if using, in a shallow dish.
  • Beat the eggs with 1 tablespoon water in a second shallow dish.
  • Mix the panko, Pecorino-Romano, 1 tablespoon kosher salt, the remaining 1 teaspoon granulated garlic, the remaining 1 teaspoon onion powder, 1/2 teaspoon freshly ground black pepper and the remaining 1/2 teaspoon crushed red pepper flakes if using, in a third shallow dish.
  • Dredge one piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat it on both sides. Let the excess egg drip off, then press the chicken firmly into the breadcrumb mixture, turning to coat on both sides and packing the crumbs into any crevices. Transfer the chicken back to the baking sheet and repeat with the remaining chicken pieces.
  • Line a clean baking sheet with a clean wire rack. Heat 2 tablespoons of the unsalted butter and 2 tablespoons of the olive oil in a large skillet over medium-low heat. Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side. Transfer to the clean wire rack, season with salt and hold in the oven at 200 degrees F to keep warm. Wipe the skillet clean and repeat with the remaining butter, olive oil and chicken, making 4 batches in total.
  • Serve with lemon wedges, if desired.

CHICKEN BAKE

Chicken Bake image

Inspired by Costco's famous chicken bake, we came up with a hand-held version that's easy to make at home. The cheesy bacon-filled pockets taste great hot from the oven, but can also be made in advance and reheated wrapped in foil in a 400 degrees F-oven for 8 to 10 minutes.

Provided by Food Network Kitchen

Categories     main-dish

Time 55m

Yield 4 rolls

Number Of Ingredients 11

1 cup shredded mozzarella
1 cup shredded provolone
1/4 cup grated Parmesan
2 cups skinless chopped rotisserie chicken meat
4 slices cooked and crumbled bacon
2 tablespoons chopped fresh chives
1/3 cup good-quality prepared creamy Caesar dressing
Freshly ground black pepper
1 pound pizza dough, at room temperature
Extra-virgin olive oil, for the dough
1 tablespoon unsalted butter, melted and cooled

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment. Combine the mozzarella, provolone and Parmesan in a large bowl and toss to combine. Transfer 1/2 cup of the cheese mixture to a small bowl and reserve.
  • Add the chicken, bacon and chives to the large bowl with the cheese. Drizzle with the Caesar dressing and season with several grinds of black pepper. Toss until everything is combined and well coated.
  • Divide the pizza dough into 4 equal pieces and rub lightly with olive oil. Roll one piece into a 7-by-9-inch rectangle. With one of the long sides closest to you, arrange a quarter of the filling in a log across the center of the rectangle, leaving an inch of space at each side edge. Fold in the sides, then fold the bottom piece of dough over the filling and roll up to enclose it, trimming away any excess dough. Pinch the seams together to seal well. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining dough and filling, leaving about 2 inches between each on the baking sheet.
  • Brush the rolls all over with the melted butter and sprinkle with the reserved cheese mixture. Bake until the rolls are golden and the cheese topping is crusty and browned, 25 to 30 minutes. Let cool 5 minutes before serving.

KICKIN' CHICKEN BAKE

Kickin' Chicken Bake image

This delicious twist on the chicken & broccoli crescent ring was a contest winner submitted on one of Emeril's Cooking with Kids specials. A little boy named Noah came up with this version, which I tried immediately and loved. I added jalapenos and more garlic to mine. I use leftover rotisserie chicken, skinned and boned or freshly poached chicken breast meat in this. Also NOTE: The original version called for only 1 can of crecsent rolls and made 1 wreath. However, I found there was a lot of filling, enough for 2 wreaths. I made 1 wreath and saved the extra filling to bake as a separate casserole (bake for the same amount of time and serve with crusty rolls on the side).

Provided by HeatherFeather

Categories     Chicken

Time 40m

Yield 2 wreaths, 16 serving(s)

Number Of Ingredients 13

2 cups cooked chicken, diced
1/4 cup green onion, chopped
1 cup broccoli floret, chopped (lightly steamed-still very crisp, but slightly fork tender)
1/4 cup yellow bell pepper, chopped
1/4 cup red bell pepper, chopped
2 tablespoons jalapeno peppers, seeded, minced (optional)
1/2-1 teaspoon garlic, minced
1 1/2 cups Mexican blend cheese, shredded
1 cup sour cream
2 teaspoons emeril's southwest seasoning
2 (8 ounce) cans crescent roll dough (these can be skipped if not making into wreaths)
1 egg, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, combine all ingredients, except the crescent rolls and egg wash.
  • IF MAKING INTO A WREATH: Divide crescent rolls into 8 equal triangles.
  • Arrange triangles on lightly greased round baking sheet (or pizza stone)in a circle with the skinny pointed ends facing out (like a sun).
  • Spoon chicken mixture around the ring, mainly on the wider parts of the dough, leaving the points exposed.Fold the pointed ends over the chicken mixture, pressing the points down to seal (so it now looks like a wreath).
  • Brush with egg wash then proceed with the baking instructions.
  • IF MAKING AS CASSEROLE:.
  • Sprread filling into a lightly greased casserole dish, cover with foil.
  • TO BAKE EITHER TYPE: Bake for 25 minutes until golden brown, removing foil from casserole in the last 5 minutes.

OVEN-FRIED CHICKEN

Oven-Fried Chicken image

You need only a handful of ingredients for Ina Garten's Oven-Fried Chicken recipe from Barefoot Contessa on Food Network; buttermilk keeps the meat extra moist.

Provided by Ina Garten

Categories     main-dish

Time 10h55m

Yield 6 servings

Number Of Ingredients 6

2 chickens (3 pounds each), cut in 8 serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening

Steps:

  • Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
  • Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

Number Of Ingredients 8

2 (8 ounce) boneless, skinless chicken breasts
⅔ cup buttermilk
1 tablespoon Buffalo sauce
1 ½ teaspoons garlic powder
1 cup all-purpose flour
1 teaspoon poultry seasoning
½ teaspoon ground black pepper
¼ cup olive oil, or as needed

Steps:

  • Slice each chicken breast horizontally into 2 thin fillets. Place chicken in a resealable zip-top bag with buttermilk, Buffalo sauce, and garlic powder. Seal the bag and shake to blend ingredients and evenly coat the chicken. Refrigerate for at least 2 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, poultry seasoning, and pepper in a shallow dish or pie plate. Blend with a fork or whisk.
  • Remove chicken from the marinade and shake off excess. Dip chicken in the breading mixture until well and evenly coated on both sides. Discard the remaining marinade.
  • Add enough oil to a large skillet so that it thickly coats the bottom; heat over medium-high heat until sizzling but not smoking. Place 2 chicken fillets in the skillet so they fit comfortably; do not overcrowd. Fry until crispy and golden brown, 2 to 3 minutes per side. Drain chicken on paper towels and repeat, adding more oil as necessary, to fry remaining chicken. Transfer chicken to a baking sheet.
  • Finish chicken breasts in the preheated oven until chicken is no longer pink in the center and the juices run clear, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
