OVEN BAKED BBQ CHICKEN - WITH QUICK HOMEMADE BARBECUE SAUCE
Recipe video above. This is how I make BBQ Chicken in the oven when I'm craving sticky chicken but don't want to fire up the BBQ! Made with a quick homemade BBQ sauce, the chicken is braised in the sauce which is loaded with extra flavour from the juices of the chicken. Fabulous sticky glaze, juicy inside!

Steps:
- Preheat oven to 200°C/390°F.
- Sauce: Mix all Sauce ingredients in a ceramic/glass baking dish (Note 3), then mix in water.
- Add chicken and turn to coat. Place chicken skin side down.
- Bake for 20 minutes. Remove from oven, turn chicken, spoon over Sauce.
- Bake for a further 30 minutes, then remove and spoon over Sauce.
- Skim off fat (optional): Tilt pan and spoon or drain off excess fat.
- Broil/grill - Change to broiler/grill on high. Spoon sauce over chicken generously, then place under grill / broiler for 2 to 3 minutes to caramelise the chicken and the sauce to thicken more. Do not walk away - this can happen quickly!
- Serve chicken, garnished with parsley or green onions, if using. Pictured in post with Mashed Potato and Green Bean Salad (minus feta).

- In a medium bowl, mix together all of the ingredients except for the chicken and scallions. Set ¼ cup of the marinade aside and cover (you'll use this later for the sauce), then place the rest in a zip-lock freezer bag with the chicken thighs. Be sure the chicken is evenly coated with the marinade, then place the bag in the refrigerator (in a bowl in case of leakage); let marinate for 3-4 hours.
- Preheat grill to high heat.
- Grease the grill. (Lightly dip a wad of paper towels in vegetable oil; then, using tongs, carefully rub the towels over the grates several times until glossy and coated.) Place the chicken on the grill; cover and cook 3-5 minutes on each side, or until nicely browned and done. Transfer the chicken to a serving platter, then top with the reserved marinade and sliced scallions.

OVEN-BARBECUED ASIAN CHICKEN

- Preheat oven to 350°F Coat a 9-by-13-inch (or similar-size) baking dish with cooking spray.
- Thinly slice 1/4 cup scallion greens; set aside.
- Mince the scallion whites. Whisk the scallion whites, hoisin sauce, soy sauce, ginger, garlic, hot sauce, five-spice powder, and honey (OPTIONAL) in a large bowl. Add chicken and toss to coat. Arrange the chicken in an even layer in the prepared baking dish, meatier-side down. Pour any remaining sauce from the bowl over the chicken.
- Bake, turning once halfway so the meatier side is up, until an instant-read thermometer inserted into the thickest part without touching bone registers 165°F, about 1 hour.
- Transfer the chicken to a serving platter and top with any remaining sauce from the baking dish.
- Sprinkle with sesame seeds and the reserved scallion greens.
- TIPS:.
- Chinese five-spice powder is a blend of cinnamon, cloves, fennel seed, star anise and Szechuan peppercorns. Look for it in the spice section of the supermarket, or with other Asian ingredients.
- Sesame seeds can be toasted in a small dry skillet over medium heat, stirring constantly, until golden and fragrant, about 2 minutes.

- Preheat the oven to 400 degrees F.
- Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
- Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.
ASIAN BBQ CHICKEN

- In a medium pot over medium heat warm oil and add in green onions.
- Cook onions until softened and slightly brown, about 6 minutes.
- Add in garlic and ginger, then cook an additional 30 seconds before adding remaining sauce ingredients.
- Bring sauce to a simmer and lower heat to medium low.
- Simmer for 5 minutes. Remove pot from heat and let cool to thicken.
- Preheat oven to 375 degrees Fahrenheit.
- Season chicken breasts with salt, pepper, and garlic powder. Place on a greased baking sheet.
- Bake for 30 minutes.
- After 30 minutes, remove pan from oven and generously brush ginger barbecue sauce over chicken before returning to the oven for 10 more minutes or until chicken is juices run clear and barbecue sauce is sticky.
- Internal temperature of the chicken should be 165º Fahrenheit.
- Slice and serve over rice, veggies or on a salad.
- Top the chicken with sesame seeds and green onions if desired.

OVEN-ROASTED BBQ CHICKEN

- Combine the barbecue sauce, peach preserves, garlic and hot sauce to taste in a medium saucepan and heat over medium heat until nice and hot, 8 to 10 minutes. Set aside.
- Preheat the oven to 400 degrees F.
- Drizzle some olive oil on 2 rimmed baking sheets and place the chicken thighs skin-side down. Roast for 25 minutes. Remove from the oven, brush some sauce all over the thighs, then use a spatula to flip them over, being careful not to tear the skin. Brush the tops with more sauce and return to the oven for 7 minutes more. Remove from the oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from the oven, brush on more sauce, and increase the oven temperature to 425 degrees F.
- Continue roasting the chicken thighs until the sauce is starting to brown around the edges and the thighs are totally cooked through, 5 to 7 minutes more. Remove from the oven and let sit for at least 10 minutes before serving. Delicious!
HOISIN OVEN BARBECUE CHICKEN
Bake the chicken on a broiler pan only, this makes for a better texture and tasting chicken with more flavor and the fat drips to the bottom. Prep time includes 8 hours marinating time.

- To prepare the barbecue sauce: combine the first 6 ingredients in a medium bowl.
- Place 3/4 cup sauce in a large bowl; cover, and chill the remaining barbecue sauce.
- Add the chicken legs and thighs to the sauce in the large bowl; toss to coat.
- Cover, and marinate in the refrigerator for 8 hours, or overnight.
- Set oven to 375 degrees.
- Remove the chicken from the fridge.

STICKY BARBECUE CHICKEN

- Heat oven to 180C/160C fan/gas 4. Put the chicken in a roasting tin, season well and cook for 40 mins or until cooked through. Either carry on with the recipe or cool and chill. This step can be done up to two days ahead.
- Put the sauce ingredients in a pan and bring to a simmer, then keep cooking until it thickens a little and looks shiny. Use straight away or cool and chill. The sauce will keep for a week in the fridge.
- Heat a barbecue until the coals are glowing white hot.
