OVEN BALSAMIC ROASTED BRUSSELS SPROUTS WITH GOAT CHEESE
These oven balsamic roasted brussels sprouts with Goat Cheese are tossed with balsamic reduction for a quick, easy and healthy side dish!

Steps:
- Preheat your oven to 400 degrees.
- In a large bowl toss the trimmed Brussels sprouts with the olive oil and garlic until well coated. Spread out onto a baking sheet and bake for 15 minutes. Stir the Brussels around and continue baking until brown and crispy, about 10 more minutes.
- Spread the almonds out onto a small baking sheet and place into the oven with the Brussels, just until they lightly brown, about 5-7 minutes. Take out and set aside.
- While the Brussels sprouts roast, combine the Balsamic Vinegar and honey in a small pan and bring to a boil over medium/high heat. Then, reduce the heat to med or med//low so that the vinegar is just lightly simmering. Simmer until reduced by half, and the vinegar coats the back of the spoon, about 10 minutes.* Set aside to thicken and cool while the Brussels finish roasting.
- Once the Brussels sprouts are done, transfer them into a serving bowl and toss with the Balsamic reduction, toasted almonds and goat cheese.

ROASTED BRUSSELS SPROUTS WITH GOAT CHEESE
These balsamic-roasted brussels sprouts are perfectly crispy, and topped with crumbled goat cheese. They're the perfect green veggie side dish.

Steps:
- Preheat oven to 400° F.
- Trim the brussels sprout stems and remove any yellow leaves, cut lengthwise into halves or quarters depending on the size. Try to maintain the same brussels sprouts size for even cooking.
- Place brussels sprouts in a mixing bowl. Toss with olive oil, garlic, salt, pepper, and parmesan until evenly coated.
- Place brussels sprouts in a baking dish and roast for 20-25 minutes or until golden and tender.
- While the brussels are roasting, add 2 cups balsamic vinegar to a saucepan. Cook over medium heat until it's bubbling. Reduce heat to low and continue to simmer until reduced by about half and coats the back of a spoon. Stir it occasionally but keep it at a low simmer.
- Just before serving, sprinkle brussels sprouts with goat cheese and drizzle with balsamic reduction.

"Balsamic Roasted Brussels Sprouts" was always one of the first dishes to sell out on our TaylorMade Menu in the cafe. The Balsamic glazes them in the oven giving them a sweet caramelized taste while the garlic gets soft & buttery. My children actually fight over these at the table..

- Preheat oven 425*.
- Trim end of Brussels sprout and pull off any loose outer leaves. Slice in half, lengthwise.
- Place Brussels Sprouts, garlic, olive oil, vinegar salt & pepper onto a baking sheet or shallow pan.
- Roast in oven for 20-25 min until tender. Stirring occasionally.
