1 lb (500 g) lean ground turkey
1/2 cup (125 mL) chopped onion
1 pkg frozen chopped spinach
1 can Old El Pasoᵀᴹ Chopped Green Chilies, undrained
1/2 tsp (2 mL) ground cumin
1/4 tsp (1 mL) garlic powder
1/4 tsp (1 mL) pepper
1/2 cup (125 mL) fat-free sour cream
3/4 cup (175 mL) shredded reduced fat Monterey Jack or Cheddar cheese
1 jar Old El Pasoᵀᴹ Taco Sauce
1 pkg (8 large) Old El Pasoᵀᴹ Smart Fiestaᵀᴹ made with Whole Grain Tortillas
1/2 cup (125 mL) Old El Pasoᵀᴹ Thick N' Chunky Salsa

Steps:

  • Heat oven to 350ºF. Spray 13x9-inch (3-quart) glass baking dish with nonstick cooking spray. In large nonstick skillet, cook turkey and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until turkey is no longer pink.
  • Stir in spinach; cook, stirring frequently, until thawed. Stir in green chilies, cumin, garlic-pepper blend, sour cream and 1/4 cup of the cheese.
  • Spread about 1 teaspoon taco sauce on each tortilla. Top each with about 1/2 cup turkey mixture. Roll up tortillas; place seam sides down in baking dish. In small bowl, mix remaining taco sauce and the salsa; spoon over enchiladas. Sprinkle with remaining 1/2 cup cheese.
  • Spray sheet of foil with nonstick cooking spray; cover baking dish with foil, sprayed side down. Bake 40 to 45 minutes or until thoroughly heated.

  • Before You Cook Turn oven on to 400 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a casserole dish with cooking spray Prepare a baking sheet with foil Ingredient(s) used more than once: enchilada sauce Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Coarsely chop spinach.Core tomato and cut into 1/2" dice.Peel and halve shallot. 2 cups picante sauce, divided
1 (10 ounce) package frozen spinach, chopped and squeezed dry
2 teaspoons ground cumin, divided
1/2 teaspoon salt, to taste (I use seasoned salt)
1/2 teaspoon fresh ground black pepper
1 (8 ounce) package cream cheese (reduced-fat is okay)
flour tortilla, warmed
1 (14 1/2 ounce) can tomatoes, undrained and diced
1 cup shredded cheddar cheese (more if desired, reduced-fat cheese is okay)
2 cups shredded lettuce
1/2 cup black olives
1/2 cup diced avocado
1 cup sour cream (reduced fat is okay is okay)

Steps:

  • Set oven to 350°F.
  • Grease a 13x9-inch baking dish.
  • In a large skillet, cook the ground turkey with onions and garlic (if using) until no longer pink, breaking into small pieces with a spoon.
  • Add in 1 cup of Pincante sauce, spinach, 1-1/2 tsp cumin, salt, and the diced tomatoes. (tomatoes can be slightly drained for a less thinner mixture).
  • Cook, and stir for 5 minutes, or until most of the liquid has evaporated.
  • Add in the cream cheese, stirring just until melted and combined.
  • Spoon about 1/3 cup of filling down the center of each warmed tortilla; roll up, and place seam-side down in a the prepared baking dish.
  • In a bowl combine the remaining 1 cup of Picante sauce and the remaining 1/2 tsp cumin, then spoon over the enchiladas.
  • Bake in a 350 degree F oven for 20 minutes or until hot.
  • Remove from the oven, and sprinkle with grated cheddar cheese, return to the oven, and bake for 5 minutes more, or until the cheese is melted.
  • Top with toppings that are listed, or top with your favorite toppings.

1 5-ounce package baby spinach (about 8 cups)
1/2 onion, chopped
2 cloves garlic, crushed
1 pound ground turkey
3/4 cup panko
1 large egg, beaten
1/2 cup grated Parmesan cheese
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1 cup orzo
1 1/2 cups frozen artichoke quarters, coarsely chopped
2 cups low-sodium chicken broth

Steps:

  • Position a rack in the upper third of the oven; preheat to 425˚ F. Line a rimmed baking sheet with parchment paper. Combine half of the spinach, the onion and garlic in a food processor; pulse to make a coarse paste. Transfer all but 1/4 cup of the paste to a large bowl.
  • Add the turkey, panko, egg and 1/4 cup Parmesan to the bowl. Season with 1/2 teaspoon salt and a few grinds of pepper and mix to combine. Form into 12 meatballs and place on the baking sheet.
  • Bake the meatballs until golden and cooked through, about 15 minutes. Switch the oven to broil and broil the meatballs until browned on top, 1 to 2 minutes.
  • Meanwhile, melt the butter in a large skillet over medium heat. Add the orzo and artichokes and cook, stirring, until lightly toasted, 1 to 2 minutes. Add the reserved 1/4 cup spinach paste, 1/2 teaspoon salt and a few grinds of pepper; stir to coat the orzo. Pour in the chicken broth, bring to a simmer, cover and cook, stirring occasionally, until most of the broth is absorbed and the orzo is saucy but still al dente, about 10 minutes. Add 1/2 cup water and the remaining spinach; bring to a simmer, uncovered. Cook, stirring occasionally, until the spinach wilts but is still bright green, 1 to 2 minutes. Stir in the remaining 1/4 cup Parmesan.
  • Divide the orzo among shallow bowls. Top with the meatballs.
