THREE-CHEESE AND BASIL GRILLED CHEESE SANDWICH
A grown-up version of grilled cheese sandwiches.

- Heat a cast iron or nonstick skillet over medium heat.
- Spread 1/2 teaspoon mayonnaise on each slice of bread. Place bread slices mayo-side down in the hot skillet. Place jalapeno Jack cheese on 1 slice of bread, and top with tomato slices. Place mozzarella cheese on the other slice, top with basil, then top with Cheddar cheese. Cook until bread turns golden brown, 3 to 5 minutes. Carefully invert the piece with the tomato onto the piece with the basil.

- Preheat oven to 425°F. Spread bread slices evenly with mayo. Place 4 of the bread slices, mayo-sides down, on greased baking sheet; spread tops with mustard.
- Cover each with 6 ham slices, 2 tomato slices and 1 cheese slice. Top with remaining 4 bread slices, mayo-sides up.
- Bake 12 to 13 min. or until golden brown on both sides, turning over after 6 min.

Steps:
- In a medium sized bowl mix all ingredients.
- Divide mixture among 3 or 4 slices of bread, top cheese mixture with remaining slices of bread.
- Spray with cooking spray or lightly grease skillet, preheat on medium heat.
- Cook sandwiches in the skillet (you may want to cover it with a lid or a pizza pan works well), flip when browned and cook the other side until golden brown.
- Remove from pan when browned and heated through.
- Enjoy immediately!
- Note: Unlike grilled cheese sandwiches, do not spread the bread with margarine or butter, the lightly greased pan will prevent it from sticking and toast the bread nicely.
- Makes 3 to 4 sandwiches.

My husband and I were sick of frying grilled cheeses on the stove because you have so many pieces of bread to use, and you have to stand there for a long time if you feed up to six people like we do. So we came up with this idea.

- Preheat oven to 450 degrees F (230 degrees C).
- Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese.
- Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown.

I have been making these for at least 30 years. When the kids were little and we would camp, I would make these up in advance and then just put them in the oven when we got to our destination.

Steps:
- Melt butter and add mustard (cheap, yellow), onion and poppy seeds. Cook slowly until onion is tender.
- Spread both sides of your choice of sandwich roll with the above mixture.
- Add slices of ham and cheese. Pile it on!
- Wrap sandwiches in foil and bake in 375 degree oven for 15-20 minutes.

- Preheat the oven to 325°. On a large rimmed baking sheet, toss the halved tomatoes with 2 tablespoons of the olive oil and season with salt and pepper. Bake the tomatoes cut side up for 1 1/2 hours, until soft and starting to brown. Sprinkle with the thyme leaves and bake for about 30 minutes longer, until the tomatoes are very tender and slightly shriveled but still juicy. Let cool.
- Increase the oven temperature to 375°. Brush 16 bread slices with the remaining 2 tablespoons of olive oil; arrange 8 of the slices oiled side down on a large rimmed baking sheet. Top with the provolone and the unbrushed bread slices. Cover with the tomatoes, 4 cups of the Fontina and the remaining 8 bread slices, oiled side up. Press gently on the sandwiches and bake for about 15 minutes, until the bread is toasted and the cheese is melted.
- Preheat the broiler. Toss the remaining Fontina with the Parmigiano-Reggiano and sprinkle on the sandwiches. Broil 3 inches from the heat for about 1 minute, until the cheese is melted. Transfer the sandwiches to plates and serve.
