Food on a stick is a winner for both kids and adults! Chicken and pineapple are a perfect match for the grill. Top with lemony yogurt sauce for an easy summer meal.

- Heat a gas or charcoal grill to medium-high heat
- Serve the kabobs Remove from the grill immediately (so they don't dry out). Serve grilled kabobs with yogurt sauce and either rice or couscous. Leftover kabobs will keep great for a few days in the fridge, and you can reheat them on a medium-low grill or in a 350 ̊F oven until warmed through, about 5 minutes.

OVEN BAKED PINEAPPLE CHICKEN KABOBS
Sweet pineapple and tender chicken with colorful peppers and onionss make this easy recipe a family favorite. Kabobs are always a treat!

Steps:
- Whisk together ingredients for the marinade. Reserve 1 cup for later use.
- Add cut chicken pieces remaining marinade to a gallon-sized zip-top bag. Refrigerate for up to two hours. (or prep this part the night before)
- Preheat oven to 450° Fahrenheit.
- Covering a baking sheet with aluminum foil and add a oven-safe baking rack. Sprits rack with non-stick cooking spray.
- Cute onion, peppers, and pineapple into bite-sized pieces, around 1½ inches.
- Add chicken pieces, pineapple, peppers, and onions to skewers alternating as you go.
- Lay Kabobs on the prepared baking rack and spritz with a little olive oil or canola oil spray.
- Bake for 25 minutes turning halfway through.
- While kabobs are baking add remaining marinade to a small saucepan and cook over medium heat. Bring to a simmer and stir often to prevent burning. Reduce the marinade for around 8 minutes as it simmers. Remove from heat.
- After Kabobs have baked for 25 minutes remove from oven. Turn oven to broil setting. Baste kabobs with reduced marinade and return to oven for 5 minutes. Watch carefully as you only want to caramelize the marinade a bit not scorch the kabobs.
- After 5 minutes or when you see the color of browning you like, remove kabobs from the oven, and let rest for 5 minutes.
- Serve over rice or with a big green salad!

I found this on the back of a can of Dole brand Pineapple chunks. Thought it sounded good, tried it over the Memorial Day weekend. It turned out great.

Steps:
- Reserves 1/4 cup marinade.
- Combine reserved juice, 1/2 cup marinade and mustard.
- Pour into sealable plastic bag and add chicken and vegetables.
- Marinade in refrigerator 30 minutes.
- Remove chicken and veggies from bag and discard marinade.
- Thread all ingredients onto skewers.
- Grill or broil 10 minutes, turning and brushing with reserved marinade or until chicken is no longer pink.
- Discard remaining marinade.

- Make marinade: combine all ingredients in a small saucepan, bring it to a boil, reduce the heat to low and simmer for 1-2 minutes, until slightly thickened. Remove from heat and let cool slightly. (Also, reserve about 3 tablespoons for basting the kabobs and/or dipping into while serving.)
- Place the chicken pieces in a large ziploc bag and add the teriyaki marinade (all but the reserved part) and toss to coat the chicken pieces.
- Marinade chicken for at least 30 minutes (2 hours is better if you’ve got it). Meanwhile, soak your skewers in a dish with water so they don’t burn on the grill. I use an 8x8 pan and fill it with a half-inch or so of water.
