GARLIC BUTTER-ROASTED SALMON WITH POTATOES & ASPARAGUS
This spring-produce-packed one-pan meal makes a healthy and satisfying weeknight dinner. Melted garlic butter coats the salmon and vegetables, adding depth of flavor and richness to the dish.

Steps:
- Preheat oven to 400 degrees F. Toss potatoes, 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a medium bowl. Spread in an even layer on a large rimmed baking sheet. Roast until starting to soften and brown, about 15 minutes.
- Meanwhile, toss asparagus with the remaining 1 tablespoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper in the medium bowl. Combine butter, lemon juice, garlic, 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper in a small bowl.
- Sprinkle salmon with the remaining 1/8 teaspoon salt. Move the potatoes to one side of the pan. Place the salmon in the center of the pan; drizzle with the butter mixture. Spread the asparagus on the empty side of the pan. Roast until the salmon is just cooked through and the vegetables are tender, 10 to 12 minutes. Garnish with parsley.

BAKED PARMESAN FISH
Healthier and tastier way to serve fish. I have used flounder, catfish, grouper, perch and tilapia with great results.If your fish is not getting crispy try broiling it for a minute or so to get it crispy. Oh and parmesan from a can is ok but treat yourself and use freshly grated. You will be oh so happy you did.

- Beat egg and milk in a shallow bowl and set aside. In a zipper bag combine breading ingredients.
- One at a time dip fillets in egg, shake off excess and turn or shake in breading in bag.
- Bake uncovered on an oiled baking sheet at 350 degrees for about 25 minutes or until fish flakes easily with a fork.
- Can be served with lemon wedges if desired.

Steps:
- Mix all ingredients together, EXCEPT fish and melted butter.
- Rinse fish fillets and pat dry; Rub with butter and dip each side into bread crumb mixture.
- Bake in 325 degree oven for 15 to 20 minutes (uncovered) until fish flakes when pressed with a fork.
PARMESAN CRUSTED BAKED FISH
Steps:
- Gather the ingredients.
- Preheat the oven to 375 F. Blend together the milk and salt in a shallow bowl.
- Combine the breadcrumbs, paprika, and Parmesan cheese in another bowl.
- Dip the fish fillets into the milk mixture, then press them down into the crumb mixture until they're well coated on all sides. Reserve the coated fish. If using thawed frozen fillets, pat dry very well with paper towels before dipping in the milk mixture and coating with the cheese crumbs
- Grease an 11.5 x 7.5 x 2-inch baking dish with the 1/2 tablespoon softened butter, being sure to reach all sides and the bottom of the dish.
- Arrange the fish in the prepared baking dish. Ideally, the fillets shouldn't overlap in the dish. Drizzle the melted butter over the fillets.
- Bake for 25 to 30 minutes, depending on the thickness of the fillets. Check for doneness; the fish should flake easily with a fork when ready. Serve the fish right away with your favorite sides. Enjoy!

- Combine flour and pepper in a shallow bowl.
- In a second bowl, combine egg and water.
- In a third bowl, combine corn flakes, cheese and cayenne.

EASY CHEESE BAKED FISH
I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.
