200 g carrots, peeled and cut into rounds
200 g courgettes, sliced
2 sweet red peppers, sliced into strips
2 small red onions, peeled and cut into quarters
4 tablespoons olive oil
2 cod fish fillets
salt & freshly ground black pepper
parsley (to garnish)

Steps:

  • Preheat the oven to 200 C.
  • Place the garlic and vegetables in a large shallow roasting pan, drizzle with the olive oil and season with salt and pepper.
  • Place the cod fillet on top of the vegetables and bake for 20-25 minutes, or until the cod is golden and the vegetables are crisp.
  • Serve the cod with the roasted vegetables, sprinkled with torn parsley.
  • You may also enjoy a bit of mayonnaise on the side.

1 handful fresh flat-leaf parsley
2 large cloves garlic
1 lemon, zested

4 (6 to 8-ounce) cod fillets
Extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Place bread crumbs in a shallow dish. Pile parsley, garlic, lemon zest, and a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with plain bread crumbs.
  • Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture. Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up. Roast fillets in oven until firm to the touch, about 12 to 15 minutes.

  • In a large skillet, saute the onion in oil until tender. Add the red pepper, mushrooms, garlic, allspice, salt and pepper; cook and stir over medium heat for 5 minutes. Remove from the heat. Stir in the olives, 1 tablespoon lemon juice and 2 teaspoons parsley. Spoon onto the center of a large piece of heavy-duty foil (about 18 in. x 12 in.). , Place cod over vegetables; sprinkle with remaining lemon juice and parsley. 1 small Broccoli
4 carrots
1 bunch scallions
150 grams button Mushroom
1 handful flat-leaf parsley
1 lemon
50 milliliters dry white wine

Steps:

  • Rinse the fish and pat dry with paper towels. Season with salt and pepper on both sides. Rinse the broccoli and divide into florets. Peel the carrot and cut into sticks. Rinse, trim and cut the scallions in half lengthwise. Rinse the mushrooms and cut into quarters.
  • Rinse the parsley, shake dry and chop the leaves. Rinse the lemon in hot water, wipe dry and peel with a vegetable peeler. Cut the lemon peel into thin strips and then juice half of the lemon.
  • Preheat the oven to 200°C (approximately 400°F) on the convection setting. Spread 4 large pieces of aluminum foil on the work surface and arrange the vegetables on them. Season with salt and pepper. Place the fish on the vegetables, sprinkle with the lemon peel, drizzle with white wine and lemon juice and sprinkle with parsley.

2 cod fillets
Red pepper
Yellow pepper
3 medium courgettes
2 large red onions
Pack of cherry tomatoes
Red pesto
Pumpkin seeds
Smoked paprika

Steps:

  • Preheat the oven to 180 degrees C.
  • Chop the peppers, courgettes and red onions into chunks approx.. 3cm x 3cm and place on a large baking tray. Cover evenly with a bit of oil (I use coconut) and season with salt, pepper and a good sprinkling of smoked paprika. Bake the veg for 25-30minutes
  • Remove the veg from the oven and add in the whole pack of cherry tomatoes. Take the cod fillets and rest them on top of the veg. Put heaped 1tbsp of red pesto on top of each fillet and spread to cover the top of the fish, then sprinkle pumpkin seeds onto the pesto (you can also use breadcrumbs / parmesan / chilli / whatever takes your fancy).

1 aubergine, cut into wedges
2 red peppers, seeds removed, cut into chunks
600g/1lb 5oz butternut squash, peeled and cut into 2cm/¾in-thick slices, then wedges
1 tsp dried thyme
2 tbsp olive oil
4 x 100g/3½oz cod (or haddock) fillets
8 tsp tomato purée
1-2 slices stale bread
50g/1¾oz mature Cheddar, finely grated
2 tbsp balsamic vinegar
75g/2½oz spinach, roughly chopped
sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6. Put the onions, aubergine, peppers and squash on a large baking tray. Add the thyme and oil and mix until coated, then season. Roast for 35 minutes, or until golden and cooked.
  • Meanwhile, put the fish on a baking tray and season. Spread 2 teaspoons tomato purée on each fillet.
  • Pulse the bread in a food processor to make fine breadcrumbs. In a small bowl, mix 4 tablespoons breadcrumbs with the cheese. Sprinkle the mixture over each fillet and press down lightly. Cover the tray with kitchen foil and seal around the edges, then set aside. (Freeze any leftover breadcrumbs in a sealed bag to use another time)
  • After the vegetables have been roasting for 20 minutes, move them around the tray to make sure they're cooking evenly. Put the fish in the oven and roast with the vegetables for 15 minutes.
  • Remove the foil from the fish and roast for another 5-10 minutes, or until golden and cooked through.
  • Mix the balsamic vinegar and spinach into the hot vegetables, then serve with the fish.
