OVEN-BAKED CHEESE CRACKERS
I enjoy making this recipe as a kid and enjoy teaching it to my kids as well. I will serve it straight from the pan or disposable plates. This recipe was handed down to me from a family friend, who passed it on to me and I'm passing it on to everyone.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Arrange crackers in 1 layer on a baking sheet, keeping space between each cracker.
- Fold each piece of American cheese in half and fold each half in half, creating 24 squares. Place 1 cheese square on top of each cracker.
- Bake in the preheated oven until cheese is melted, 3 to 5 minutes. Allow crackers to cool before serving.

BAKED CHEESECAKE

Steps:
- Combine graham cracker crumbs, sugar, and butter; press mixture into the bottom of a 10" springform pan; set aside.
- Blend cream cheese and sugar together (in a food processor or with a medium-speed electric mixer) until smooth; add eggs one at a time, blending well after each addition; add sour cream, lemon juice, and vanilla; blend well; pour filling over the crust and spread evenly.
- Lay a sheet of aluminum foil that has been bent up slightly to form a "foil tent" over the top of pan and not touching cheesecake (this is to prevent overbrowning) then bake at 350° for 1 hour and 15 minutes (remove foil tent after 50-55 minutes) or until top is set.
- Combine sour cream and sugar; remove cheesecake from oven and immediately spread sour cream mixture over its top; return cheesecake to oven for 5 minutes to set topping; remove from oven.
- Cool cheesecake on wire rack; cover and refrigerate to chill thoroughly.
- Just before serving remove sides of springform pan and transfer cheesecake to serving platter; garnish cheesecake with berries (we like chilled cherry pie filling on top) and serve.
- OPTIONAL: Just before pressing the graham crust into the bottom of the springform pan, spray the pan's inner sides with a little no-stick cooking spray, sprinkle a spoonful of combined graham cracker crumbs and sugar into the pan, then tilt and spread that mixture around so that it sticks to the coated sides and later adds to the visual appeal of your finished cheesecake.

- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.
HOMEMADE CHEESE CRACKERS RECIPE BY TASTY

- Preheat oven to 350˚F (180˚C).
- Using a hand mixer or standing mixer, combine cheese, butter, and salt in a large bowl.
- Once combined, mix in the flour and add the ice water one tablespoon at a time.
- The dough should hold together but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
- Separate dough into two halves and pack together into discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
- Roll out dough to ⅛ of an inch (½ cm), pinching the cracks on the ends.
- Cut into 1 inch x 1 inch (2 ½ x 2 ½ cm) squares and pierce a hole in the middle of each square for ventilation during baking.
- Place the separated crackers on a parchment paper-lined baking sheet.
- Bake for 13 minutes, or until golden brown.

- Preheat oven to 400ºF.
- In a large mixing bowl stir together the flour, cumin, salt, and red pepper.
- Cut in the butter until the size of coarse crumbs.
- Stir in the shredded cheese.
- Sprinkle the water over the mixture, stirring until all the dough is moistened.
- Turn the dough onto a large piece of waxed paper or plastic wrap and gather the dough into a ball; then flatten into a disk. If necessary, wrap and refrigerate for 30 min or until easy to handle.

- Combine shredded cheese, flour, sugar, paprika, and ¼ teaspoon kosher salt in the basin of a food processor fitted with the blade attachment and pulse until ingredients are combined and cheese is well chopped up (about 15-20 seconds).
- Scatter cold butter pieces over the surface of the ingredients and pulse again until butter is cut into the mixture and the mixture appears pebbly/crumbly.
- Add water and pulse until ingredients begin to cling together.
- Divide dough into two or three parts and form each into a ball. Flatten each into a square shape and wrap individually in plastic wrap. Place in refrigerator and chill for at least one hour and up to 3 days.
- Once dough has nearly finished chilling, preheat oven to 375F (190C).
- Working with one square at a time, roll dough to be between ⅛ and ¼" (0.3-0.6cm) thin.
- Use a pastry wheel or pizza cutter to cut dough into 1" squares.
- Transfer to an ungreased baking sheet and use a toothpick or the blunt end of a wooden skewer to pierce the center of each square.
- Sprinkle lightly with additional kosher salt (I use about 1-2 teaspoon total for all of the crackers) and transfer to 375F (190C) oven and bake for 18-20 minutes.
- Allow crackers to cool completely on baking sheet before enjoying.

BAKED CHEESE CRACKERS

- Preheat the oven at 350F/175C
- In a food processor add flour, salt, butter and the grated cheese. I used sharp Cheddar cheese but you can also use Gouda or Edamer cheese
- Let the food processor work and slowly add the water, 1 tablespoon at the time
- In less than 5 minutes you will obtain a nice compact dough
- Wrap in plastic paper and refrigerate for 1 hour
- Place the dough in between two foils of parchment paper. You might want to cut the dough in 3/4 pieces if you do not have a big working station. Roll the dough with a rolling pin in order to obtain a thin 1/8 inch layer
- Using a small cookie cutter (I used the small ones for fondant) cut out the shapes that you like.
- Place the small crackers on a parchment paper or silky mat on a baking sheet, one next to the other, leaving some space in between.
- Using a toothpick poke some holes in each cracker. This is a very important phase not to get the crackers doughy but fluffy and light instead.
- Bake the crackers for 20 minutes until lightly golden and crispy
- Check at 15 minutes, every oven is different!!
- Let cool on baking sheet, they will keep crisping up while cooling down
