BBQ PORK STEAKS IN THE OVEN

Steps:
- Preheat oven to 400 degrees
- Rub salt and pepper on both sides of each pork steak if desired
- Line a baking pan (large enough to fit the number of steaks you're cooking, so they don't overlap) with aluminum foil.
- Drizzle half a bottle of barbeque sauce on the aluminum foil where you'll place each steak.
- Place your steaks down on the foil and sauce, and then cover steaks with remaining bbq sauce.
- Bake the pork steaks at 400 degrees, uncovered for 50-60 minutes, (on the middle rack) or until the internal temperature of the steaks reaches 145 degrees. NOTE: Oven temperatures can vary, and some have reported that they prefer baking at 350 for 50-60 minutes, or checking the internal temp after 30 minutes to avoid over-baking.

OVEN BAKED BEEF OR PORK STEAK WITH TANGY SAUCE
You can make this using beef or pork steak, if you are using a sweet barbecue sauce then I would suggest omitting the brown sugar you may slice the steaks into cubes instead of leaving in one piece if desired and sliced green bell pepper may also be added in.

- Set oven to 350 degrees F.
- Grease a roasting pan or baking dish.
- Heat oil in a large skillet.
- Season the beef or pork steak with with salt and pepper, then brown on both sides.
- Place into the prepared pan and top with the onion slices.
- In a bowl mix the BBQ sauce, soy sauce and garlic (if using) then pour over meat in the pan.
- Cover tightly with foil then make a couple of slits in the foil with a sharp knife to allow steam to escape.
- Cook until meat is fork-tender, about 1 hour (might take more or less time depending on the thickness).

TANGY BEEF OR PORK MARINADE
I created this recipe by fooling around with some ingredients. The result is a wonderful tangy marinade with a bit of a kick that I use on steaks, pork chops, roast pork and even deer meat. This is especially good for a tough cut of meat. I frequently use this for london broil and marinate overnight. If I use for a pork roast, I add more maple syrup to make it sweeter and then baste the pork roast with it when it is cooking in the oven. ETA: You can also use Agave nectar in place of honey or maple syrup as a low glycemic option.

Steps:
- Mix red wine vinegar, soy sauce, maple syrup, ginger, mustard.
- Stir well.
- Taste for your own taste preferences.
- It should have a sweet tangy taste.
- Add garlic, sesame oil and optional red pepper flakes.
- Mix well.
- Pour into ziploc bag, add meat and press out all air.
- Marinate in fridge for several hours shaking the contents often as the oil will separate.
- I usually marinate overnight, but a couple hours is fine too.
- Marinating overnight makes the meat extremely tender and flavorful.
- The soy sauce measurement is low for our taste preference as we don't like it's salty taste.
- You can adjust however you wish to your liking.
- I don't measure any of the ingredients and I add alot of ginger and red pepper flakes because we like the additional kick.

- Preheat your oven to 400°F (205°C) and line a baking sheet with parchment paper.
- Rinse and pat dry your pork steaks.
- Apply by brushing olive oil over the pork steaks, then season using the steak seasoning. Place pork steak on the baking sheet.
- Bake at 400°F (205°C) for 15-18 minutes. (Optional) Next, broil on high for 2 minutes to get a nice sear.

SPICY BAKED PORK STEAKS
A great way to prepare cheaper cuts of meat! These pork steaks are tender every time, spicy and good! Toss a couple of potatoes in the oven and bake for 15 minutes or so before adding the pork steaks and you have a great meal the family will think you spent more time on than you did!

- Line a 9x13 inch baking pan with aluminum foil or spray with non-stick cooking spray.
- Mix seasoning in a small bowl and rub into pork steaks and let them rest for 10 minutes.

- Preheat oven to 325 degrees F (165 degrees C).
- Heat oil in a large skillet over medium heat. Brown steak strips on all sides. With a slotted spoon, transfer steak strips to a baking dish. Stir garlic into skillet; cook 5 minutes. Add vinegar, sugar, and ketchup. Then stir in mustard, paprika, salt, and pepper; and simmer 3 minutes. Pour sauce over steak strips.

TANGY SWEET AND SOUR PORK SHOULDER STEAK BAKE

- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- Season the steaks with seasoning salt or white salt and pepper.
- Heat oil in a skillet over medium heat then brown the pork steaks on both sides (about 5-6 minutes per side, make certain to brown well on each side!).
- Transfer the steaks to the prepared baking dish (cut them if needed to fit in the dish).
- Top the steaks with green bell pepper slices.
- In a medium saucepan add in about 4 tablespoons oil (or more) and saute the onions, garlic and dryed pepper flakes for about 4 minutes or until soft.
- Add in the ketchup, honey, cider vinegar, Worcestershire sauce, juice from 2 lemons, dry mustard powder and horseradish; mix to combine and simmer for 25-30 minutes, adjusting ingredients to taste and seasoning with black pepper (do not add in salt as the steaks already have salt on them, add in salt if needed when cooking in the oven).
- Pour the sauce over the browned pork steaks in the baking dish.
- Cover tightly with heavy foil.
- Bake for 1 hour.
- Uncover and season sauce with salt if desired and turn the steaks over with long tongs.
- Place back in the over uncovered until tender about 20-30 minutes longer or until the pork is tender.
- Skim off any fat from the top of the sauce.
