Steps:
- Preheat the oven to 375 degrees F.
- Place the rice into an 8-inch square glass baking dish.
- Bring the water, butter, and salt just to a boil in a kettle or covered saucepan. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil. Bake on the middle rack of the oven for 1 hour.
- After 1 hour, remove cover and fluff the rice with a fork. Serve immediately.

- Wash rice in several changes of water; drain and put in a bowl. Cover generously with water and let soak 30 minutes. Drain thoroughly.
- Preheat oven to 325 degrees. Bring 2 3/4 cups water to a boil in a heavy ovenproof pan with a tight-fitting lid. Add rice, stir, and bring back to a boil. - Preheat the oven to fan 160C/conventional 180C/gas 4. You will need a medium casserole with a lid. Rinse the rice well in a large bowl of water, then drain.
- Melt two-thirds of the butter in the casserole and sauté the onion for about 5 minutes. Add the rice, stir well, then add the herbs, whole spices and lemon zest and cook for a minute. BAKED SAFFRON RICE
Steps:
- Preheat the oven to 200ºC/400ºF/gas 6.
- Peel and finely chop the red onions.
- Place a 25cm x 30cm roasting tray on a high heat on the hob, pour in 1 tablespoon of olive oil, add the onions and fry for 4 minutes, or until soft and sweet, stirring regularly.
- Meanwhile, place half the saffron in 600ml of boiling kettle water. In a bowl, cover the remaining saffron with 1 tablespoon of boiling water, steep for 10 seconds, then mix with the yoghurt and put aside.
- Stir the tomato paste, rice and a pinch of sea salt and black pepper into the onion tray, then pour in the saffron water and bring to the boil.
- Once boiling, carefully transfer to the oven for 15 minutes, or until the rice has absorbed all the liquid, fluffed up beautifully and is golden and crisp on top.
- Spoon the saffron yoghurt over the rice, drizzle it all with 1 tablespoon of extra virgin olive oil, fork and mix it all together, and dish up.

- Preheat oven to 180°C/350°F.
- Scatter onion and garlic in a baking dish (about 10 x 15" / 25 x 35 cm), then place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much).

- In a pan set over a medium heat, melt the butter, and add the mushrooms and chopped garlic.
- Cook for 3-4 minutes until the mushrooms release their liquid and become golden.
- Remove them from the pan, and set aside.

- Wash rice in 6 or 7 changes of cold water in a large bowl until water is almost clear. Drain in a large sieve 10 minutes.
- Preheat oven to 325°F.
- Heat oil in a 4- to 5-quart heavy ovenproof pot over moderate heat until hot but not smoking, then cook almonds, stirring frequently, until golden, 3 to 4 minutes. Transfer with a slotted spoon to paper towels to drain, then add onion to pot and cook over moderately high heat, stirring frequently, until pale golden, 6 to 8 minutes. Add garlic, jalapeño, garam masala, ginger, and salt and cook, stirring frequently, 1 minute. Add rice and cook over moderately low heat, stirring frequently, 6 minutes. Add broth and simmer briskly, uncovered, until top of rice appears dry, about 8 minutes.
- Cover pot and bake rice in middle of oven until tender and liquid is absorbed, about 20 minutes. Remove from oven and let stand, covered, 15 minutes. Serve sprinkled with almonds.
BASMATI RICE
Steps:
- Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter. Add the water and salt, cover and cook until the water is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and allow to sit covered for 5 to 10 minutes. Add the scallions and parsley, fluff with a fork, and serve.
BAKED BASMATI RICE
I do not like rice, but I love it this way! This is the only way I will eat it. This recipe is a spin from observing my mom's Iranian friend preparing Basmati on a stove, he added the chicken stock and I thought it added such a great flavour. My sister always prepares rice in the oven with chopped onions and green peppers, so I tried the Basmati that way. I usually serve it with Tikka Masala on top. *Note* This rice is supposed to be "al dente", that s why less water is used.

DELICIOUS OVEN BAKED CHICKEN BIRYANI

- Add all of the ingredients, except the chicken, coriander and mint, in a large pot. Mix it all together
- Add the chicken. Refrigerate overnight
- Bring 2 litres of water to the boil
- Add rice, salt and whole spices
- Cook for 5 minutes. Drain and set aside
- Heat oil in a large pan. Cook onion in 2 batches on medium heat until golden brown
- Drain on a paper towel lined plate
- Peel the potatoes and cut them into small cubes. Place in a microwavable plate or large bowl. Add 1/4 cup water and cook on high for 5 minutes
- Season with salt
- Fry in a little oil until slightly brown and crisp
- Set aside
- Mix the saffron threads in 1/4 cup of warm water and set aside

- Heat the oven to 400 ℉ (205 ℃). Season the chicken thighs with salt and seven spice. In a parchment paper lined cookie sheet, add the seasoned chicken thighs. Once the oven is ready, put the chicken thighs in the top rack of the oven for 45 minutes. While the chicken thighs are baking, prepare the turmeric basmati rice.
- Using a food processor, blend the peeled onions and garlic.
- In a nonstick skillet on high heat, sautee the blended onions and garlic with olive oil. Once the onions and garlic start to change colors (about 3 to 5 minutes), add the ground turmeric, ground coriander, and salt. Mix well until fully blended then add the rice and water (or broth). Pour the turmeric basmati rice into an oven baking dish.
- Cover the baking dish with foil and place it into the same oven as the chicken thighs on the middle rack. Cook the rice for 30 minutes with the foil on.
- Pull the chicken thighs out of the oven at the end of 45 minutes. Pull the rice out of the oven after 30 minutes of cooking with foil. Remove the foil and fluff the rice. Place the roasted chicken thighs on top of the rice. Put back in the middle of the oven for 15 to 20 minutes.
- Remove from the oven and let rest for a couple of minutes.
