BACON-WRAPPED ASPARAGUS
While asparagus season is here, keep this recipe near. It's a pretty and impressive side perfect for brunch or dinner-maybe alongside a steak! And it's a godsend when entertaining, since it's made with only five ingredients, a single pan and the simplest of techniques. The trick is wrapping bundles of asparagus, instead of individual stalks. As the bundles bake, the bacon drippings infuse the stalks with smoky flavor and transform this sometimes-woody vegetable into a silky smooth and meltingly tender masterpiece which, in our experience, no one can resist!

- Preheat the oven to 400F. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle olive oil on the tips and ends of the asparagus (avoiding the prosciutto). Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.
- In a small bowl, whisk together the Philadelphia Cooking Cream with the water. Microwave on medium setting for 45 seconds. If you can't find the Philadelphia Cooking Creme, feel free to omit (the Crispy Prosciutto Wrapped Asparagus is great as-is!) or substitute with 1/4 cup Philadelphia Cream Cheese mixed with 2 tablespoons mayonnaise + 2 tablespoons water and your favorite chopped fresh herbs.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Wash and trim asparagus; removing the tough lower portion of the stem. (You will need to split out the asparagus into four equal bundles). Wrap one slice of bacon around 5-6 spears of asparagus and place on baking sheet.
- 3. In small bowl combine red wine vinegar, Dijon mustard, honey, garlic, chives and pepper. Whisk in olive oil. Pour half of the mustard vinaigrette into a separate bowl and set aside. Take remaining vinaigrette and using basting brush baste asparagus bundles. Place cookie sheet in oven and bake for 15-20 minutes. Turn broiler on to brown the bacon the last 1-2 minutes of cooking. Stay close by as I have always found broilers unpredictable.
- 4. Serve remaining honey mustard vinaigrette with asparagus bacon bundles.

Steps:
- On a baking sheet covered in foil, put 6 slices of bacon. Put sheet in cold oven, then turn on preheat to 400. Allow bacon to slowly cook for about 10-12 minutes. It should still be rather rare but partially cooked. Take it out and put it aside. Important: KEEP THE FOIL, do not throw it away - see below.
- Meanwhile, put the other ingredients including asparagus into a gallon size ziplock bag and shake to coat thoroughly.
- Wrap 4-5 stalks of asparagus about halfway down with the bacon. Place seamside down on the same foil and sheet you cooked the bacon on (right on the bacon grease spots). Cook for 10-20 minutes at 400 degrees, depending on how tender you want your asparagus (I like super tender at 20 minutes).

Steps:
- Preheat the oven to 425°F. Spritz a roasting pan with cooking spray. Set up all of your ingredients before you begin to wrap the bundles.
- Brush the asparagus spears lightly with olive oil or spritz with cooking spray. Season with garlic salt [lightly] and black pepper. [Go light with the salt. The Parmesan-Romano cheese will add extra saltiness to the bundles]
- Bundle the asparagus in three's. Use one slice of bacon per bundle.
- Start wrapping the bacon around the stems tightly beginning at the bottom. If you choose to use baby asparagus, a half slice of bacon should be enough.
- Roll in the grated Parmesan-Romano cheese and lay seam side down on the baking pan. Make sure the bundles aren't touching.
- Repeat until all of the asparagus and bacon slices have been used.
- Place into the oven and bake for 23-25 minutes depending on the thickness of the asparagus. Turn halfway through cooking.
- Increase the oven temperature to broil and cook for an additional 3-5 minutes to fully crisp the bacon.
- Sprinkle with additional Parmesan-Romano cheese to garnish.
- Serve warm with the dipping sauce if desired.

BACON-WRAPPED ASPARAGUS
Roasted asparagus is a simple and delicious side that goes with almost any main dish. While a pile of roasted asparagus would be a welcome addition to any weeknight dinner or casual meal, sometimes you need something a little more dressed up, so our test kitchen created a company-worthy version that's just as easy and quick to prepare.Bacon not only adds smoky, savory, salty flavor, you can use it to wrap a few asparagus spears together into a cute little bundle. Use your favorite brand of thick-cut bacon (our test kitchen loves Wright brand bacon) and cut each strip in half crosswise to make them the right length for wrapping. We found that three spears of asparagus seem to be just the right amount to make a small bundle, but this can vary depending on the size of your spears. If they are on the very thin side, wrap four to five spears. If they are very thick, you may only want to wrap two. Use your best judgment and make sure the bacon is securely wrapped all the way around the asparagus. Roast the asparagus until it is tender and the bacon is cooked through, then remove from the oven and serve immediately.

- Position racks in centre and upper third of oven, then preheat to 375°F. Line a rimmed baking sheet with parchment. ##Place chicken breasts on a cutting board. Cover with plastic wrap. Using a meat mallet or the bottom of a medium saucepan, gently pound chicken breasts to 1/2-in thickness. Season chicken with 1/4 tsp each salt and pepper. Place 5 asparagus spears crosswise in the centre of each breast. Roll chicken around the asparagus, starting with the pointed end. Set aside, seam side down. ##Lay 2 slices of bacon on cutting board side by side lengthwise. Roll bacon around one piece of chicken, then place, seam side down, onto prepared sheet. Repeat with remaining bacon and chicken. ##Bake in centre of oven for 30 minutes. Switch oven to broil and transfer sheet to upper rack. Broil until bacon is golden and an instant-read thermometer inserted into thickest part of chicken reads 165°F, about 4 to 5 minutes. ##Meanwhile, heat a medium saucepan over medium. Melt butter, then stir in flour. Cook, stirring constantly, for 1 minute. Gradually whisk in milk and mustard. Cook until mixture is thickened, about 2 minutes. Stir in cheese, remaining 1/4 tsp each salt and pepper and parsley. Cook until cheese is melted. Serve sauce spooned over chicken.
