BACON-WRAPPED ASPARAGUS

Bacon-Wrapped Asparagus image

While asparagus season is here, keep this recipe near. It's a pretty and impressive side perfect for brunch or dinner-maybe alongside a steak! And it's a godsend when entertaining, since it's made with only five ingredients, a single pan and the simplest of techniques. The trick is wrapping bundles of asparagus, instead of individual stalks. As the bundles bake, the bacon drippings infuse the stalks with smoky flavor and transform this sometimes-woody vegetable into a silky smooth and meltingly tender masterpiece which, in our experience, no one can resist!

Time 55m

Yield 8

Number Of Ingredients 5

2 tablespoons butter, melted
1/4 teaspoon crushed red pepper flakes
1 lb fresh asparagus spears, trimmed
8 slices bacon
1 lemon, cut in wedges

  • Heat oven to 425°F. Line 18x13-inch rimmed pan with foil. Place large rack in pan; spray rack and foil with cooking spray.
  • In large shallow bowl or pie plate, mix melted butter and pepper flakes. Add asparagus; toss thoroughly to coat. Divide asparagus evenly into 8 bundles. Wrap each bundle in one slice of bacon. Do not overlap the bacon. If desired, secure each bundle with 2 toothpicks; place toothpick-side down on rack. Drizzle with any remaining butter mixture.
  • Bake 30 to 36 minutes, turning once, until asparagus is tender and bacon is cooked through. Serve with lemon wedges.

WRAPPED ASPARAGUS

Wrapped Asparagus image

This food is simple, yet elegant, using high quality ingredients that you dont mind spending a little extra money for.

Provided by dumspirospero

Time 20m

Yield Serves 4

Number Of Ingredients 5

1 pound asparagus, tough ends trimmed and discarded
8 ounces prosciutto, very thinly sliced
1 tablespoon olive oil
1/2 cup Philadelphia Cooking Creme (any flavor, I used Italian Cheese and Herb)
1 tablespoon water

Steps:

  • Preheat the oven to 400F. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle olive oil on the tips and ends of the asparagus (avoiding the prosciutto). Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.
  • In a small bowl, whisk together the Philadelphia Cooking Cream with the water. Microwave on medium setting for 45 seconds. If you can't find the Philadelphia Cooking Creme, feel free to omit (the Crispy Prosciutto Wrapped Asparagus is great as-is!) or substitute with 1/4 cup Philadelphia Cream Cheese mixed with 2 tablespoons mayonnaise + 2 tablespoons water and your favorite chopped fresh herbs.
  • Plate the asparagus and drizzle the Philadelphia Cooking Cream over the asparagus. Serve immediately.

1 tsp dried or fresh chive
1/8 tsp fresh ground pepper

  • 3. In small bowl combine red wine vinegar, Dijon mustard, honey, garlic, chives and pepper. Whisk in olive oil. Pour half of the mustard vinaigrette into a separate bowl and set aside. Take remaining vinaigrette and using basting brush baste asparagus bundles. Place cookie sheet in oven and bake for 15-20 minutes. Turn broiler on to brown the bacon the last 1-2 minutes of cooking. Stay close by as I have always found broilers unpredictable.
  • 4. Serve remaining honey mustard vinaigrette with asparagus bacon bundles.

BACON WRAPPED GARLIC PARMESAN ASPARAGUS

Bacon Wrapped Garlic Parmesan Asparagus image

Make and share this Bacon Wrapped Garlic Parmesan Asparagus recipe from Food.com.

Provided by piranhabriana

Categories     Vegetable

Time 40m

Yield 6 serving(s)

Number Of Ingredients 7

6 slices thick bacon
2 tablespoons olive oil
2 tablespoons parmesan cheese
1/2 tablespoon lemon juice
1 bunch asparagus (approximately 24-30 stalks)
3 minced garlic cloves
freshly ground salt and pepper, to taste

Steps:

  • On a baking sheet covered in foil, put 6 slices of bacon. Put sheet in cold oven, then turn on preheat to 400. Allow bacon to slowly cook for about 10-12 minutes. It should still be rather rare but partially cooked. Take it out and put it aside. Important: KEEP THE FOIL, do not throw it away - see below.
  • Meanwhile, put the other ingredients including asparagus into a gallon size ziplock bag and shake to coat thoroughly.
  • Wrap 4-5 stalks of asparagus about halfway down with the bacon. Place seamside down on the same foil and sheet you cooked the bacon on (right on the bacon grease spots). Cook for 10-20 minutes at 400 degrees, depending on how tender you want your asparagus (I like super tender at 20 minutes).

BACON WRAPPED ASPARAGUS BUNDLES

Bacon Wrapped Asparagus Bundles image

Provided by Melissa Sperka

Categories     Side Dish

Time 40m

Number Of Ingredients 9

2 lb asparagus (cleaned, woody ends removed)
1 lb bacon
1 cup finely grated Parmesan-Romano cheese
olive oil or olive oil cooking spray
garlic salt and freshly ground black pepper (to taste)
Optional dipping sauce:
1/2 cup mayonnaise
2-3 Tbsp Italian dressing
1/4 tsp red pepper flakes

Steps:

  • Preheat the oven to 425°F. Spritz a roasting pan with cooking spray. Set up all of your ingredients before you begin to wrap the bundles.
  • Brush the asparagus spears lightly with olive oil or spritz with cooking spray. Season with garlic salt [lightly] and black pepper. [Go light with the salt. The Parmesan-Romano cheese will add extra saltiness to the bundles]
  • Bundle the asparagus in three's. Use one slice of bacon per bundle.
  • Start wrapping the bacon around the stems tightly beginning at the bottom. If you choose to use baby asparagus, a half slice of bacon should be enough.
  • Roll in the grated Parmesan-Romano cheese and lay seam side down on the baking pan. Make sure the bundles aren't touching.
  • Repeat until all of the asparagus and bacon slices have been used.
  • Place into the oven and bake for 23-25 minutes depending on the thickness of the asparagus. Turn halfway through cooking.
  • Increase the oven temperature to broil and cook for an additional 3-5 minutes to fully crisp the bacon.
  • Sprinkle with additional Parmesan-Romano cheese to garnish.
  • Serve warm with the dipping sauce if desired.

BACON-WRAPPED ASPARAGUS

Bacon-Wrapped Asparagus image

Roasted asparagus is a simple and delicious side that goes with almost any main dish. While a pile of roasted asparagus would be a welcome addition to any weeknight dinner or casual meal, sometimes you need something a little more dressed up, so our test kitchen created a company-worthy version that's just as easy and quick to prepare.Bacon not only adds smoky, savory, salty flavor, you can use it to wrap a few asparagus spears together into a cute little bundle. Use your favorite brand of thick-cut bacon (our test kitchen loves Wright brand bacon) and cut each strip in half crosswise to make them the right length for wrapping. We found that three spears of asparagus seem to be just the right amount to make a small bundle, but this can vary depending on the size of your spears. If they are on the very thin side, wrap four to five spears. If they are very thick, you may only want to wrap two. Use your best judgment and make sure the bacon is securely wrapped all the way around the asparagus. Roast the asparagus until it is tender and the bacon is cooked through, then remove from the oven and serve immediately.

Provided by Southern Living Editors

Time 35m

Yield Serves 8 (serving size: 1 bundle)

Number Of Ingredients 6

4 bacon slices (about 4 oz.), cut in half crosswise
24 thick asparagus spears (about 1 1/4 lb.), trimmed
2 tablespoons olive oil
1 teaspoon chopped fresh rosemary
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 425°F. Place bacon on a microwavable plate lined with a paper towel and top with another paper towel. Microwave on HIGH until just beginning to crisp around edges, about 2 1/2 minutes. Remove from microwave, and cool 5 minutes.
  • Toss asparagus with oil, rosemary, salt, and pepper. Divide asparagus into stacks of 3, and tightly wrap each bundle with a piece of bacon. Place bundles on a wire rack set inside an aluminum foil-lined rimmed baking sheet. Bake in preheated oven until asparagus is tender and bacon is crispy, about 24 minutes. Serve immediately.

  • Preheat the oven to 400 degrees F (204 degrees C). Place an oven-safe wire rack (either greased or non-stick) onto a cookie sheet. (These racks work great!)
  • Trim the woody ends of the asparagus. Drizzle with olive oil. Sprinkle with garlic salt and black pepper to taste. (You don't need a lot of oil, just enough for the salt and pepper to stick.)
  • Cut the bacon slices lengthwise to make narrower strips. Wrap each bacon strip tightly around an asparagus stalk, only slightly overlapping the bacon on each stalk (it will shrink during cooking, creating a "striped"pattern). Place seam side down onto the wire rack.
  • Bake for 10 minutes. Use tongs to turn over. Bake for 10-15 minutes more, until the bacon is almost crispy. Set the oven to broil, then place under the broiler for 1-2 minutes to crisp up more.
