These delicious corn dough patties can be eaten for breakfast, lunch, or dinner. They can be served plain, with cheese, or stuffed like a gordita. Some of the fillings are pork cracklings in salsa, eggs, picadillo, refried beans, and cheese.

1 cup of corn flour
½ tsp salt
4 tablespoons butter or lard
1/3 cup crumbled queso fresco*
3 Tablespoons of chopped fresh cilantro (or mint)
¾ cup warm water

Steps:

  • Place the corn flour, salt, butter, and cheese in a bowl, and stir to mix well. Once these ingredients are completely mixed, add the chopped cilantro.
  • Slowly add the warm water and knead to form a soft dough, it will feel a little sticky. The total kneading time will be about 4-5 minutes. Divide the dough into 8 small balls.
  • Heat the griddle over a medium heat, and, using a paper napkin, dab the surface with a little oil. These little patties sometimes tend to stick to the griddle.
  • To form the patties/bocoles, place each ball of dough between two pieces of plastic, place on your tortilla maker, and gently press down to form a circle of 2-½ inches in diameter and about 1/3-in thick.

  • Place each formed patty on the hot griddle and cook for 2-½ minutes, then turn and cook for 3-½ to 4 minutes and then turn again to cook for 2 more minutes. Remove from the griddle and cover with a kitchen napkin to keep them warm while you cook the rest of the dough.

2 cups gingersnap crumbs
6 tablespoons melted butter, plus extra butter for pan
1/4 cup sugar
Pinch salt
2 (8-ounce) packages cream cheese, at room temperature
1 (12-ounce) log goat cheese
12 ounces creme fraiche or sour cream
4 eggs
1 cup sugar
2 teaspoons vanilla extract
Vanilla Pineapple Compote, recipe follows
Special equipment: 9-inch springform pan
1 cup brown sugar
1 1/2 cups water
1 cup rum
2 vanilla beans, split, seeds scraped and reserved
1/2 lemon, juiced
1 ripe pineapple, top, skin and core removed, cut into bite-size wedges

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust:
  • Stir all of the ingredients together in a large bowl. Butter a 9-inch springform pan. Press the crumb mixture onto the bottom and about halfway up the sides of the pan.
  • To make the filling:
  • Beat the cream and goat cheeses in the bowl of an electric stand mixer with the paddle attachment until light and fluffy. Add the creme fraiche and beat to combine. Add the eggs, 1 at a time, beating after each egg is added, until thoroughly combined. Beat in the sugar and vanilla until just combined.
  • Pour the filling into the prepared crust. Put on a baking sheet in the preheated oven and bake for 55 to 60 minutes. Rotate the baking sheet halfway through the cooking process. If the cheesecake starts to color, tent the springform pan with aluminum foil.
  • Remove the cheesecake from the oven and let it cool completely before serving, as it continues to set as it cools. It is best to refrigerate overnight before serving. Cut the cake into wedges and serve with Vanilla Pineapple Compote.

  • Combine the brown sugar, water, rum, and vanilla beans in a saucepan over medium heat. Squeeze the lemon juice into the pan and stir to combine. Bring to a simmer, add the pineapple and stir until well mixed. Simmer until the liquid has reduced to a syrupy consistency and the pineapple is soft.
  • Let cool and serve as an accoutrement to yummy desserts like goat cheese cheesecake!

_Tlacoyos con Queso de Cabra_ Traditionally these rustic cakes are made with a mashed bean filling. The goat cheese called for here adds a contemporary twist.

Number Of Ingredients 9

1 1/2 cups crumbled chilled soft fresh goat cheese (about 7 ounces)
6 tablespoons chopped cilantro
2 cups freshly ground corn masa dough for tortillas (about 17 ounces), or make masa dough with 1 3/4 cups masa harina (corn tortilla mix; about 8 1/2 ounces) mixed with 1 cup plus 2 tablespoons warm water
2 tablespoons lard or solid vegetable shortening
3/4 teaspoon salt
Warm water
Vegetable oil (for frying)
Roasted-Tomatillo and Lime Salsa
Sliced fresh radishes

Steps:

  • Mix goat cheese and cilantro in medium bowl for filling. Cover; chill.
  • Combine fresh masa or masa harina mixture, lard, and salt in large bowl. Knead until well blended, adding warm water by teaspoonfuls as needed until dough is soft but not sticky. Divide into 12 equal portions; shape each into ball. Arrange on sheet of foil; cover.
  • Cut two 8-inch rounds from heavy-duty resealable plastic bag. Place 1 plastic round on bottom half of tortilla press. Place 1 dough ball in center; top with second plastic round. Close tortilla press, gently flattening dough to 4-inch round about 1/4 inch thick. Peel off top plastic. Arrange 2 tablespoons goat cheese filling in strip in center of dough round. Using bottom plastic as aid, fold up sides of dough over filling. Using moistened fingertips, mold dough into oval, sealing filling inside. Arrange, seam side down, on sheet of aluminum foil. Repeat with remaining masa balls and filling.
  • Heat 2 heavy large ungreased griddles or skillets over medium heat. Arrange 6 cakes in each. Cook until cakes are pale golden, 8 minutes per side. Transfer masa cakes to baking sheet. (Masa cakes can be made 2 hours ahead. Let stand at room temperature.)
  • Pour vegetable oil into each griddle to depth of 1/8 inch. Heat over medium-high heat 2 minutes. Add 6 masa cakes to each griddle. Fry until masa cakes are heated through and golden brown, about 4 minutes per side.
  • Arrange masa cakes on platter. Spoon some tomatillo salsa over. Garnish with radishes. Serve with remaining salsa.

2 cups vanilla wafer crumbs, such as Nilla
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 grates of fresh nutmeg
Pinch kosher salt
Two 8-ounce packages cream cheese, at room temperature
One 12-ounce log goat cheese
1 1/2 cups sour cream sour cream
4 large eggs
1 1/2 cups sugar
2 teaspoons vanilla extract

Steps:

  • For the crust: Butter a 9-inch springform pan. In a large mixing bowl, combine the butter, wafer crumbs, sugar, cinnamon, ginger, nutmeg and salt. Stir together until well combined and homogenous. Use your fingers to press the crumb mixture onto the bottom of the pan and about halfway up the sides. Reserve.
  • For the filling: Preheat the oven to 350 degrees. In an electric mixer with a paddle attachment, beat the cream cheese and goat cheese together until light and fluffy. Add the sour cream and continue beating until combined. Add the sugar and vanilla and begin to beat. Add the eggs one at a time, beating in each until thoroughly mixed before adding the next one.
  • To assemble: Pour the filling into the prepared crust. Place on a baking sheet and bake for 30 minutes. Rotate the baking sheet and bake until the filling is set, another 25 to 30 minutes. If the filling starts to color, tent the pan with aluminum foil. Remove the cake from the oven and let cool completely before the serving (it continues to set as it cools).
  • The cake will continue to set as it cools, but it's best served after it has been refrigerated overnight and has really firmed up.

Steps:

  • Bring the water, milk, and salt to a boil. Slowly whisk in the polenta. Turn heat to low, and continue whisking for 5 minutes or until polenta is smooth and creamy. Spread the polenta in a 9x9 baking dish, and set aside to cool.
  • While the polenta is setting up, add the butter and olive oil to a heavy-bottomed skillet set to medium-low heat. Add the sliced onions and a sprinkle of kosher salt, and cook, stirring occasionally until soft, golden, and caramelized - about 20 to 25 minutes.
  • Pour 1 tablespoon olive oil into another skillet, set over medium heat. Using a 3 inch round cookie-cutter, cut out circles of the firm polenta, and place in the heated skillet. Cook until slightly browned and crusty on one side - about 2 minutes - then flip and cook the other side another two minutes.
