1 1/4 cups all-purpose flour (spooned and leveled), plus more for rolling dough
1/2 teaspoon salt
1/2 teaspoon sugar
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
2 tablespoons ice water, plus 2 more, if needed

Steps:

  • In a food processor, pulse flour, salt, and sugar several times to combine. Add butter. Pulse until mixture resembles coarse meal, with just a few pea-size pieces remaining.
  • Sprinkle with 2 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed with fingers (if needed, add up to 2 tablespoons more ice water, 1 tablespoon at a time). Do not overprocess.
  • Turn dough out onto a work surface; form dough into a 3/4-inch-thick disk. Wrap tightly in plastic, and refrigerate until firm, at least 1 hour.
  • Before baking, unwrap dough; place on a large piece of floured waxed paper. Roll dough to a 14-inch round. Using paper, lift and wrap dough around rolling pin (discarding paper); carefully unroll over a 9-inch pie plate. Gently fit into bottom and up sides of plate.
  • Trim overhang to 1 inch; fold overhang under itself. Pinch between thumb and forefinger to make a uniform edge around the rim. Crimp edge; refrigerate until chilled, about 1 hour.

5 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons salt
1 teaspoon baking powder
1 pound lard
1 egg
2 tablespoons distilled white vinegar
5 tablespoons cold water

Steps:

  • Measure flour, sugar, salt, and baking powder into large bowl. Mix thoroughly and cut in lard until dough is the size of tiny peas.
  • Break egg into 8 ounce measuring cup. Beat with a fork, then pour in vinegar. Add enough cold water to reach the top (you will have a total of 1 cup liquid). Pour over flour mixture a little at a time, tossing and stirring with a fork until all liquid is absorbed.
  • Shape dough into a ball, then divide into four equal portions. Wrap tightly. Can be stored in refrigerator up to 2 weeks, or freezer up to 6 months. Each portion will make 1 double crust pie.

The instructions are thorough, and the method can apply to your own favorite crust recipe. The method you use to put pie pastry together will, to some degree, determine the type of crust you end up with. Our latest favorite pie crust recipe uses a combination of butter (for flavor) and lard or vegetable shortening (for flakiness); an unbleached flour of about 10.5% protein (such as our Mellow Pastry Blend); buttermilk powder (for tenderness) and baking powder (for extra flakiness); salt; and vinegar (again, for tenderness) and water. Here's the formula for a single-crust pie; just follow the directions above."

1 1/2 cups unbleached all-purpose flour (Mellow Pastry Blend or King Arthur Unbleached All-Purpose Flour)
1 tablespoon dry non-fat buttermilk (1/8 ounce) (optional)
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup butter (1/2 stick, 2 ounces)
1/4 cup lard (or vegetable shortening)
1 teaspoon white vinegar (or cider)
3 -5 tablespoons cold water (1 1/2 to 2 1/2 ounces)

Steps:

  • For a flaky, tender crust (as opposed to one that's harder, mealy, and more cookie-like), the following works well.
  • Whisk together all of the dry ingredients, reserving a few tablespoons of the flour.
  • Cut in half of the fat, working the mixture until it's mealy and crumbly.
  • Place the reserved flour on your work surface, and coat the remaining fat with the flour.
  • Use a rolling pin or the heel of your hand to flatten the fat till it's about 1/2-inch thick.
  • Break this flour-coated fat into 1-inch pieces, and mix it into the dough, just till it's evenly distributed; some of the pieces of flour-coated fat should break into smaller pieces.
  • Sprinkle the liquid(s) over the dough while tossing with a fork.
  • Just as soon as the dough becomes cohesive (i.e., you can squeeze it into a ball easily), stop mixing; there should still be visible pieces of fat in the dough.
  • Flatten the dough into a disk and wrap it in plastic wrap or waxed paper.
  • Refrigerate for 30 minutes or longer; this resting period allows the flour to absorb the water, making the dough easier to roll out.
  • Flour your work surface and roll the dough into a 12 x 9-inch (approximately) rectangle.
  • (If it isn't holding together well, sprinkle it lightly with a couple of teaspoons of water.
  • Fold the dough into thirds (like a letter), then fold it into thirds the opposite way, to form a rough square. Wrap it well and refrigerate again.).
  • When you're "ready to roll," remove the dough from the fridge.
  • If the dough is made with all lard and/or vegetable shortening, you'll be able to work with it directly from the refrigerator.
  • A dough made with all butter will need to warm slightly (10 to 15 minutes) before rolling, as butter becomes brittle when it's refrigerated.
  • Dough made with a combination of butter and shortening should rest for about 5 minutes at room temperature before rolling.
  • Roll the dough to the size needed (about 13 inches for a 9-inch pie).
  • Fill and bake as directed in your recipe.
  • Note: in this particular recipe, cut all of the lard or vegetable shortening into the flour, then coat the butter with flour before adding it to the dough.

2 3/4 cups all-purpose flour, divided, plus more for rolling
1 1/4 teaspoon salt, divided
1/3 cup plus 1 1/2 tablespoons granulated sugar, divided
2 sticks (16 tablespoons) unsalted butter, cut into small pieces and frozen for 15 minutes
1 tablespoon apple cider vinegar, chilled
1 large egg
1 tablespoon whole milk
3 1/2 pounds Honeycrisp, Braeburn, or Golden Delicious apples, or a mix
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons lemon juice
Coarse sugar, for sprinkling
Special equipment:
9-inch pie pan

Steps:

  • In the bowl of a food processor, pulse 2 1/2 cups flour, 1 teaspoon salt, and 1 1/2 tablespoons sugar. Add butter and pulse until coarse, pea-sized crumbs appear, about 10 seconds. With the machine running, add vinegar and 1/4 cup ice water and process until the dough just holds together, about 30 seconds. Squeeze a small amount of dough between your fingers and if it is very crumbly, add more ice water, 1 tablespoon at a time (2 tablespoons maximum). Do not over process.
  • Turn dough out onto a lightly floured surface and push together into a rough ball. Knead a few times to combine, then divide into two equal balls. Flatten each ball into a disc with smooth edges (no cracks), cover with plastic wrap, and refrigerate at least 1 hour (or up to overnight).
  • Preheat the oven to 425°F with one rack on the bottom rung and one rack in the center of oven. Place a rimmed baking sheet on the bottom rack to preheat.
  • On a lightly floured surface, roll out one disc of dough into a 13-inch round. Roll the dough loosely around the rolling pin, and then unfurl it into the 9-inch pie pan. Gently lift and settle the dough into the pan. Trim the excess dough using scissors, leaving a 1/2-inch overhang, and transfer to the refrigerator. On a floured piece of parchment, roll out the second disc of dough to the same size as the first and refrigerate both crusts for 30 minutes.
  • In a small bowl, whisk together the egg and milk and set aside. Peel, core, and slice the apples into 1/4-inch thick wedges. Place apples in a large bowl and mix with 1/4 cup flour, 1/3 cup sugar, cinnamon, nutmeg, 1/4 teaspoon salt, and lemon. Fill the dough-lined pan with the apple mixture, packing apple slices as tightly as possible.
  • Brush the rim with egg and milk mixture, reserving the excess. Top with the second dough round and press over apples to minimize excess space between apples and crust. Press the top and bottom crusts together and trim the top crust to a 1-inch edge around pan. Tuck top edge under bottom edge and crimp or decorate as desired. Cut five vents in the top crust for steam. Refrigerate pie for 30 minutes to set the crimp.
  • Brush top crust with egg wash and sprinkle with coarse sugar.
  • Place pie on the preheated rimmed baking sheet and bake until the crust begins to turn golden, 20 to 25 minutes. Rotate sheet, move to center rack, and reduce oven to 350°F. Continue baking until the crust is golden brown and you can see the thickened juices bubbling, 40 to 50 minutes more. Cool on a rack 3 to 4 hours to allow juices to set before slicing.
  • Do Ahead
  • The pie dough can be made up to 3 days in advance and chilled, or frozen for up to 3 months; thaw before using. The baked pie will keep, loosely covered with aluminum foil, at room temperature for up to 2 days.
